PARMESAN BAKED CHICKEN BREASTS



Parmesan Baked Chicken Breasts image

One of the best chicken breast recipes in oven is bake chicken breast with Parmesan cheese. These juicy and tender chicken breasts are marinated with olive oil and garlic-lemon seasonings. So delicious!

1 lb. (0.4 kg) skinless and boneless chicken breasts
2 tablespoons olive oil
1.5 tablespoons garlic powder
2 tablespoons lemon juice
ground black pepper
3 dashes cayenne pepper
1/4 teaspoon salt or more to taste
1/2 cup freshly grated Parmesan cheese
lemon wedges, for serving

Steps:

  • Marinate the chicken breasts with olive oil, garlic powder, lemon juice, black pepper, cayenne pepper and salt. The marinade will be paste-y and not liquidy, like the picture below. While the chicken breasts are marinating, preheat oven to 400°F (207°C). Top the marinated chicken breasts with the grated Parmesan cheese evenly. Bake the chicken for about 20-30 minutes, until a meat thermometer hits 165 degrees Fahrenheit when inserted into the thickest part of the breasts. Remove the Parmesan baked chicken from the oven. Serve immediately with fresh lemon wedges, squeeze the juice on the chicken for extra flavors. You may also serve the chicken with your favorite hot sauce.

This recipe is from Better Homes and Gardens, and we really enjoyed this dish. The creamy sauce flavors the fettucine quite nicely. And it's pretty quick to prepare too, so it's managable even on a busy weeknight.

1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
12 ounces boneless skinless chicken breast halves, cut into bite-size pieces
3 tablespoons butter or 3 tablespoons margarine
2 fresh anaheim chilies, seeded and sliced into rings (about 1 1/2 cups)
1 medium onion, sliced and cut into rings (about 1/2 cup)
1/4-12 teaspoon crushed red pepper flakes
3/4 cup light cream or 3/4 cup half-and-half
1/3 cup shredded monterey jack cheese
2 cups hot cooked fettuccine pasta

Steps:

  • In a plastic bag combine flour, salt and pepper. Add chicken pieces and shake bag to coat evenly.
  • In a large skillet heat 2 tablespoons of the butter over medium heat until hot. Add coated chicken pieces and cook about 8 minutes or until chicken is tender and no longer pink, and coating is golden brown, stirring occasionally. Remove chicken from skillet and keep warm.
  • Heat remaining butter in the same skillet until hot. Add chili peppers, onion, and crushed red pepper. Cook and stir about 5 minutes or until tender but not brown, stirring up any browned bits. Add cream to the skillet and bring just to a low boil. Return chicken to skillet, and stir until combined. Simmer, uncovered, for 1 minute more or until sauce is slightly thickened.
  • Spoon the creamy chicken mixture over hot, cooked fettucine, then spinkle with cheese.

This is an excellent pinto bean soup. Serve this with warm corn or flour tortillas. This is a thick chili-like soup that will fill you up with warmth and happiness.

1 ¼ cups dried pinto beans
4 pounds pork spareribs
¼ cup vegetable oil
1 cup chopped onion
2 cloves garlic, minced
2 (14 ounce) cans beef broth
4 cups water
2 teaspoons chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
½ teaspoon salt
¼ teaspoon ground black pepper
¼ cup chopped fresh cilantro

Steps:

  • Sort and wash the beans. In a large saucepan over medium heat, add the beans and enough water to be 2 inches above beans. Bring to a boil for 2 minutes and remove from heat. Cover, allow to soak for 1 hour and drain.
  • In a large Dutch oven over medium high heat, saute the ribs in oil until browned. Remove ribs from Dutch oven and set aside. Add the onion and garlic and saute for 5 minutes, or until tender. Add the beans, ribs, broth, water, chili powder, oregano, cumin, salt, ground black pepper and fresh cilantro. Cover and simmer 1 1/2 hours, or until meat is tender.
  • Remove the ribs, allow to cool and remove meat from the bones. Return meat to broth. Chill the broth until the fat rises to the surface and remove the fat. Bring back to a boil and reduce heat to low. Cover and simmer for 30 minutes.
