GEORGIA GOLD CHICKEN RECIPE

Georgia Gold Chicken Recipe is both gluten free and completely baked and is KFC Inspired. Lightly breaded chicken pieces are dunked in a homemade tangy honey mustard barbeque sauce and then baked to gluten-free perfection!

1.5 pounds chicken breasts, cubed or sliced as tenders
1.5 cups brown or white rice flour
1.5 cups cornstarch
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 large eggs, beaten
1/3 cup coconut oil, melted
3/4 cup GF bbq sauce
4 tablespoon honey
2 tablespoon yellow mustard
1 tablespoon GF dijon mustard
1/2 tablespoon apple cider vinegar

Steps:

  • Preheat your oven to 350*F. Place the coconut oil in the bottom of a 9 x 13 baking dish and evenly distribute the oil over the bottom of the dish. In a medium bowl, add the beaten eggs. Set aside.
  • In a large ziploc bag, combine the cornstarch, onion powder, 1/2 tablespoon garlic powder, salt and pepper and mix well. In another large ziploc bag, pour in the rice flour. Set these two bags aside.
  • Dip the cubed chicken pieces into the egg and allow the excess to drip off. Then place the chicken pieces into the bag with the rice flour, zip the bag up tightly, shake the contents until evenly covered in the flour and then remove and place the pieces inside the bag with the cornstarch mixture and do the same shaking technique as before.
  • Place the coated chicken pieces into the baking dish and bake for 45 minutes, stirring every 15 minutes to allow the chicken to cook and crisp evenly.
  • While the chicken is baking, combine the BBQ sauce, honey, mustards, and vinegar together in a medium bowl.
  • Once the 45 minutes is up, pour the sauce overtop the chicken and stir to make sure that the chicken pieces are entirely covered in the sauce.
  • Cook for another 10-20 minutes (stir after 10 minutes) or until the chicken is fully cooked and the sauce starts to thicken and turn into a glaze. Remove from oven and serve while still warm. The sauce will thicken slightly more while cooling.

This is a delicious main dish that's really quick to fix. It's good with veggies or a salad and French Bread.

1/2 stick (4 tablespoons) butter
4 boneless chicken breasts (or a package of chicken tenders)
1 c mushrooms
2 Tbsp shallots (or green onions with tops)
4 oz mozzarella cheese
salt and pepper to your taste
seasoning salt

Steps:

  • 1. Season chicken with seasoning salt and let set about 15 minutes. Meanwhile, melt butter in frying pan. Saute mushrooms and onions/shallots; add salt and pepper. Cook about 10 minutes. Remove onions/mushrooms from pan and set aside. Add chicken to pan and cook about 10 minutes on each side (it won't take as long for chicken tenders). When chicken is done, cover chicken with onions/mushrooms. Top with cheese and let it melt on top of chicken mixture. If you have some of the liquid left in pan, spoon over chicken or dip some toasted French bread in it.

4 skinless boneless chicken breast halves
1 cup sliced fresh mushrooms
2 tablespoons minced shallots
1/4 teaspoon salt
1/4 teaspoon pepper
4 oz grated mozzarella cheese

Steps:

  • Melt butter over medium heat. Add mushrooms and shallots and sprinkle with salt and pepper. Cook 10 minutes. Remove vegetables with slotted spoon. Add chicken to pan and cook 10 minutes on each side, or until tender. Transfer chicken to platter and sprinkle with grated cheese. Top with mushroom mixture. Let stand 5 minutes before serving or just until the cheese has melted.

1 whole chicken, about 3 1/2 lbs (1.6kg) cut into pieces (or use bone-in chicken pieces as you like)
2 Tablespoons Vegetable Oil (30ml), such as sunflower (I don't recommend olive oil for this recipe)
2 Tablespoons (28g) Butter
8-10 Cloves Garlic, don't worry - this actually works
1 Cup (237ml) Whole Milk
Salt and Pepper to taste

Steps:

  • Preheat the oven to 400 degrees f (205 c).
  • Wash and dry the chicken pieces, then coat them with oil and season lightly with salt and pepper.
  • Add oil to a skillet over medium heat.
  • Brown the chicken on both sides (10 minutes on the first, about 5 on the second)
  • Place the chicken in a baking dish and roast uncovered for 20 - 30 minutes until cooked through (internal temperature of 165 degrees).
  • Remove from the oven and allow the chicken to rest.
  • Mince the garlic and then flatten with the side of your knife to form a paste (or use a mortar and pestle).
  • Add the butter to a small sauce pan (you can substitute 1 tablespoon of pan drippings for some of the butter to add more rich chicken flavor to the sauce)
  • Add the garlic and lightly sauté.
  • Add the milk and bring it to a boil for 2 minutes, stirring constantly.
  • Place the chicken in a small baking dish (Georgian's use a shallow clay baking dish, called a ketsi)
  • Pour the milk and garlic sauce over the chicken, and bake for 5 minutes.
