This is a recipe for Chicken Fried Steak, one of the staple foods of Texas. Like with fried chicken, folks in each family or restaurant tend to have their own little "secrets" to preparing Chicken Fried Steak, so you can play with the recipe a bit. But if it don't include the cream gravy, it ain't been prepared right and it ain't a "secret" worth keeping.

oil or shortening, for frying
6 -8 beef cutlets, tenderized (round or cube steak)
3 -4 cups seasoned flour (flour with savory seasonings of your choice or Seasoned Flour)
3 eggs
2 cups milk
1/4 cup flour
salt and pepper
4 cups milk
1 -2 tablespoon dripping, included the cooked bits

Steps:

  • Heat about 1/4-1/2 inch of oil or shortening in a frying pan.
  • Beat eggs then combine with milk.
  • Dredge tenderized beef cutlets in flour, then egg-milk wash, then a second time in flour.
  • Place dredged cutlets into heated oil and fry until golden, about 10 minutes.
  • Turn steak over and cook for another 5 minutes or so until both sides are golden.
  • Remove to a plate lined with paper towels and allow to drain.
  • TIME TO MAKE THE GRAVY: Drain all but 1-2 tablespoons of drippings from the frying pan; leave all the cooked bits you can.
  • Combine flour and seasonings with milk, then pour into the pan with drippings and bits.
  • Continually stir/whisk the gravy over medium heat for 10-15 minutes, or until desired consistency.
  • Taste and add more salt or pepper if necessary.
  • Serve generously over each piece of chicken fried steak.
  • Sop up any extra gravy with a biscuit.

1 1/2 lb round steak, 1/2 inch thick
1 c plus 2 t flour
1/3 c cornmeal
1 tsp sweet paprika
1 tsp salt
1/2 tsp freshly ground black pepper
2 eggs, beaten
2 Tbsp water
4 Tbsp vegetable oil
2 Tbsp flour
1 1/4 c beef broth, low-sodium
1/4 c half and half or cream
1 pkg bake-off biscuits, prepared to directions

Steps:

  • 1. Preheat a large, heavy skillet over med-high heat.
  • 2. Put steaks on wax paper-lined work surface and cover with another piece of wax paper. Pound steaks to 1/4 inch thickness. Set steaks aside.
  • 3. Line work surface with more wax paper and pour 1/2 cup flour into each of two piles on opposite ends of this work space. Add cornmeal, paprika, salt and pepper to one pile of flour.
  • 4. Beat eggs and water in a shallow dish or pie plate.
  • 5. Cut steaks into 4 portions and coat first in the plain flour, then in egg, and then in the seasoned flour and cornmeal mixture.
  • 6. Add 2 T of oil to the hot skillet and brown 2 steaks at a time. As they brown, remove from the pan and add more oil as needed. When the last 2 portions are browned, add the first two back to the pan. Cover pan and lower heat to med-low and cook covered for 15 minutes.
  • 7. Remove steaks to a serving platter and pour off all but 2-3 T. of the drippings. Add 2 T of flour to the drippings and cook for 2 minutes. Whisk in broth and season with salt and pepper. Add half and half or cream and whisk into gravy. When the gravy bubbles, remove from heat.
  • 8. Serve steaks and warm biscuits with gravy on top.

1 cup plus 2 tablespoons flour
1/3 cup cornmeal, eyeball it
1 teaspoon sweet paprika
1 teaspoon salt, 1/3 palm full
1/2 teaspoon ground pepper, eyeball it
2 eggs beaten
2 tablespoons water, 2 splashes
4 tablespoons vegetable oil
1 1/4 cups beef broth or stock
1/4 cup half-and-half or cream, 2 turns of the pan
1 package bake-off biscuits, prepared according to package directions
Waxed paper

Steps:

  • Preheat large, heavy skillet over medium high heat.
  • Set steaks on to a waxed paper lined work surface and cover with another piece of waxed paper. Pound steaks to 1/4-inch thick. Pull steaks off work surface and set to the side. Line work surface with more waxed paper. Pour 1/2 cup flour into 2 piles on opposite sides of the work space. Add cornmeal, paprika, salt and pepper to 1 pile of flour. Beat eggs and water in a pie plate or shallow dish.
  • Cut steaks into 4 portions and coat in flour, eggs, then seasoned flour and cornmeal.
  • Add 2 tablespoons oil to hot pan and cook 2 steaks at a time. Brown steaks about 2 minutes per side, or until cooked and remove from the pan. Add 2 tablespoons more oil and repeat with remaining 2 steaks. Remove steaks to serving platter and pour off all but 2 to 3 tablespoons of drippings. Add 2 tablespoons flour to drippings and cook 2 minutes. Whisk in broth and season with salt and pepper. Whisk half and half or cream into gravy. When gravy bubbles, remove from heat.

4 pork steak cutlets
2 1/2 cups flour
1 1/2 tsp salt
1/2 tsp pepper
pinch of cayenne pepper (optional)
3 eggs, beaten
oil for frying
2-3 tbsp oil
2 tbsp flour
1 1/2 cups milk
salt and pepper to taste

Steps:

  • Combine the flour, salt and peppers in a shallow pan. Beat the eggs in another pan or dish.
  • Place each cutlet in the flour, pressing in the flour a little. Add to the egg covering each side, then back into the flour mixture, covering completely, pressing to make sure it is thoroughly coated. Continue until all have been battered.
  • Add oil to a skillet about 1/3 up the side of a skillet. I use an iron skillet. Heat to medium high. Add the cutlets to the hot oil. Fry on the first side until browned, then turn and brown the other side. Remove and drain on paper towels.
  • Pour off all but 2 to 3 tablespoons oil from the pan. Add the flour and cook for a minute or so. While whisking, add the milk to the pan. Cook until thick, adding more milk if needed. Season with salt and pepper to taste.

This was a staple at my house growing up in the late 60's. With my Dad hard at work, Mom always wanted a good hearty meal for him to come home to. This was, and still is, one of his all-time favorites.

1/2 lb round steak
1 cup flour
1 cup milk
1 egg, slightly beaten
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
oil (for cooking)
1 cup milk
1 cup water
1/4 cup flour
salt and pepper

Steps:

  • Heat 1/4 inch oil in heavy skillet on med-high heat.
  • Combine 1 cup milk with egg. Pour into a shallow pie pan.
  • Season 1 cup flour with garlic powder, salt and pepper. Sift together in another pie pan.
  • Tenderize the steak well and trim off excess fat.
  • Dip the meat into egg mixture, then dredge in the flour mixture. Press flour into the meat. Repeat for a crispier coating.
  • When oil is hot, fry meat for 9-12 minutes.
  • This allows additional tenderizing of the meat. When fried meat is golden brown, drain on paper towels.
  • FOR GRAVY:.
  • Pour off all but 4 Tbsp of the cooking oil from skillet.
  • Over medium heat, slowly stir in the flour, stirring constantly.
  • Combine milk and water. Slowly add to skillet; stirring constantly. Loosen bits from bottom of pan while stirring. This is where the flavor is.
  • Add salt and pepper to taste. Bring to a boil. When bubbling, lower heat and simmer for 5 minutes.
  • Serve this dish with Mashed Potatoes.

1 1/2 cups whole milk
2 large eggs
2 cups all-purpose flour
2 teaspoons seasoned salt
Freshly ground black pepper
3/4 teaspoon paprika
1/4 teaspoon cayenne pepper
3 pounds cube steak (tenderized round steak that's been extra tenderized)
Kosher salt
1/2 cup canola or vegetable oil
1 tablespoon butter
1/3 cup all-purpose flour
3 to 4 cups whole milk
1/2 teaspoon seasoned salt
Freshly ground black pepper
Mashed potatoes, for serving

Steps:

  • For the steak: Begin with setting up an assembly line of dishes. Mix the milk with the eggs in one; the flour mixed with the seasoned salt, 1 1/2 teaspoons black pepper, paprika and cayenne in another; and the meat in a third. Then have one clean plate at the end to receive the breaded meat.
  • Work with one piece of meat at a time. Sprinkle both sides with kosher salt and black pepper, then place it in the flour mixture. Turn to coat. Place the meat into the milk/egg mixture, turning to coat. Finally, place it back in the flour and turn to coat (dry mixture/wet mixture/dry mixture). Place the breaded meat on the clean plate, then repeat with the remaining meat.
  • Heat the oil in a large skillet over medium heat. Add the butter. Drop in a few sprinkles of flour to make sure it's sufficiently hot. When the butter sizzles immediately, you know it's ready. (It should not brown right away, if it does, the fire is too hot.) Cook the meat, 3 pieces at a time, until the edges start to look golden brown, about 2 minutes each side. Remove the meat to a paper towel-lined plate and keep them warm by covering lightly with another plate or a sheet of foil. Repeat until all the meat is cooked.
  • After all the meat is fried, pour off the grease into a heatproof bowl. Without cleaning the skillet, return it to the stove over medium-low heat. Add 1/4 cup of the grease back to the skillet and allow it to heat up.
  • For the gravy: When the grease is hot, sprinkle the flour evenly over the grease. Using a whisk, mix the flour with the grease, creating a golden-brown paste. Add more flour if it looks overly greasy; add a little more grease if it becomes too pasty/clumpy. Keep cooking until the roux reaches a deep golden brown color.
  • Pour in the milk, whisking constantly. Add the seasoned salt and black pepper to taste and cook, whisking, until the gravy is smooth and thick, 5 to 10 minutes. Be prepared to add more milk if it becomes overly thick. Be sure to taste to make sure gravy is sufficiently seasoned.
  • Serve the meat next to a big side of mashed potatoes. Pour gravy over the whole shebang!

QUICK CHICKEN-FRIED STEAK WITH PAN GRAVY

4 (6 ounce) beef steaks, cubed
1/2 cup flour
4 tablespoons flour
1 teaspoon salt, plus more to taste
1 teaspoon black pepper, plus more to taste
1 teaspoon paprika, plus more to taste
1 cup vegetable oil
3 cups milk, divided

Steps:

  • Combine 1/2 C flour and 1 tsp salt, 1 tsp pepper and 1 tsp paprika on a plate.
  • Stir with fork until well blended.
  • Put 1/2 C milk in bowl.
  • Dip steak in milk first, then coat generously with flour mixture.
  • Heat oil in skillet until it reaches 375°F.
  • Add steaks to skillet.
  • Cook until seared and well crusted on one side, about 2 minutes.
  • Turn steaks with tongs, cook 2 more minutes for medium.
  • Transfer steaks to a plate. Keep warm.
  • To prepare gravy, pour off all but 4 T cooking oil from pan.
  • Return pan to medium heat.
  • Whisk in remaining 4 T flour; cook 1 minute.
  • Whisk in milk; cook until thick, 3 minutes.
  • Add more milk if gravy becomes too thick.
  • Season with salt, pepper, and paprika.
  • Serve with steak and mashed potatoes.

2 large egg whites
1/2 cup plus 1 tbsp all purpose flour
1/2 tsp plus more to taste ground black pepper
3/4 tsp plus more to taste salt

4 lean, 4 oz. each cubed round steak
3 tbsp canola oil
3 tbsp or scallion finely chopped onion
1/2 cup low sodium chicken broth
1/4 cup milk

Steps:

  • In a shallow bowl or pie plate, whisk the egg whites with 2 teaspoons water. In a separate bowl or pie plate, whisk together 1/2 cup of the flour, the salt, pepper and garlic powder. Dip the steaks, one at a time, into the buttermilk. Then, dip each steak into the egg whites, letting any excess drip off. Lastly, dip the steaks into the flour mixture. Gently shake each steak to remove any excess.
  • In a large nonstick skillet, heat 2 tablespoons of the oil over medium-high heat. Add the steaks and cook until well-browned, 3 to 4 minutes per side. Transfer to a paper towel-lined plate to drain.
  • Add the remaining 1 tablespoon oil to the skillet. Add the onion and cook over medium heat until soft, 3 to 5 minutes. Stir in the remaining 1 tablespoon flour and cook for 1 minute. Slowly whisk in the chicken broth and milk. Simmer until the gravy is thick and bubbly, about 2 minutes. Season to taste with salt and pepper. Serve the steaks with the gravy over the top.

Gradually add the milk and cook over medium heat, stirring constantly, until the mixture is thickened and bubbly. Stir in 1/4 tsp salt and 1/2 tsp black pepper. Serve the meat with the gravy.
