Chicken French has everything I love in a recipe. It's delicious and easy, frugal, yet fancy, and everyone loves it. Better yet, it has a vague, confusing history and completely preposterous name. This not-French recipe hails from the Rochester area of New York State, where it's a staple on virtually every Italian-American restaurant menu.

4 eggs
2 tablespoons milk
1 cup all-purpose flour
1 tablespoon salt
1 teaspoon ground black pepper
1 pinch cayenne pepper
1 ½ pounds skinless, boneless chicken breast cutlets, pounded flat
2 tablespoons olive oil
1 tablespoon butter
1 cup vegetable broth
½ cup dry sherry
2 lemons, juiced
¼ cup cold butter, cut into chunks
1 tablespoon chopped fresh flat-leaf parsley
salt and ground black pepper to taste

Steps:

  • Beat eggs and milk together in a shallow bowl. Whisk flour, salt, black pepper, and cayenne pepper together in another shallow bowl.
  • Gently press chicken into flour mixture to coat; shake off excess flour. Dip into egg mixture and coat completely.
  • Heat olive oil and 1 tablespoon butter together in a large skillet over medium heat. Cook chicken in hot oil until lightly browned, 2 to 3 minutes per side. Transfer chicken to a plate.
  • Cook and stir vegetable broth, sherry, and lemon juice in the same skillet; bring to a boil and cook until sauce is reduced by half. Remove from heat and add cold butter chunks; stir until butter is melted and sauce is shiny and thickened, 1 to 2 minutes. Stir parsley into sauce and season with salt and pepper.
  • Return chicken to the skillet over medium heat, spoon sauce over the top, and cook until chicken is heated through and no longer pink in the center, 1 to 3 minutes more.

4 skinless, boneless, chicken breasts (about 1 1/2 pounds)
All-purpose flour, for dredging
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
4 ounces prosciutto, thinly sliced
8 ounces crimini or porcini mushrooms, stemmed and halved
1/2 cup sweet Marsala wine
1/2 cup chicken stock
2 tablespoon unsalted butter
1/4 cup chopped flat-leaf parsley

Steps:

  • Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them; pound with a flat meat mallet, until they are about 1/4-inch thick. Put some flour in a shallow platter and season with a fair amount of salt and pepper; mix with a fork to distribute evenly.
  • Heat the oil over medium-high flame in a large skillet. When the oil is nice and hot, dredge both sides of the chicken cutlets in the seasoned flour, shaking off the excess. Slip the cutlets into the pan and fry for 5 minutes on each side until golden, turning once - do this in batches if the pieces don't fit comfortably in the pan. Remove the chicken to a large platter in a single layer to keep warm.
  • Lower the heat to medium and add the prosciutto to the drippings in the pan, saute for 1 minute to render out some of the fat. Now, add the mushrooms and saute until they are nicely browned and their moisture has evaporated, about 5 minutes; season with salt and pepper. Pour the Marsala in the pan and boil down for a few seconds to cook out the alcohol. Add the chicken stock and simmer for a minute to reduce the sauce slightly. Stir in the butter and return the chicken to the pan; simmer gently for 1 minute to heat the chicken through. Season with salt and pepper and garnish with chopped parsley before serving.

1 1/2 lbs boneless skinless chicken breasts (4)
all-purpose flour, for dredging
kosher salt
fresh ground black pepper, to taste
4 large eggs
3 tablespoons water
1/4 cup extra virgin olive oil
1/2 lemon, with rind cut in thin rounds
1/2 cup dry white wine
1 cup chicken broth
1/2 lemon, juice of
2 tablespoons unsalted butter
1/4 cup chopped flat leaf parsley

Steps:

  • Place chicken breasts side by side on a cutting board and cover with a piece of plastic wrap.
  • Pound the chicken breasts with a meat mallet until they are about 1/4 inch thick.
  • Place some all purpose flour in a large Zip Loc bag and season with a fair amount of salt and pepper.
  • Shake bag to mix flour and seasonings.
  • In a wide bowl beat the eggs with 3 tablespoons of water to make egg wash.
  • Pour oil in a large skillet and heat over medium-high heat until oil is hot about 5-6 minutes.
  • Place chicken breasts in Zip Loc bag containing seasoned flour mixture and shake to coat completely.
  • Dredge chicken in egg wash.
  • Once oil is hot add chicken and fry for 2 minutes on each side until golden brown, turning once.
  • Remove chicken to a large platter and keep warm.
  • Toss the lemon slices into the skillet and cook for 1-2 minutes, until fragrant.
  • Add the wine, chicken broth and lemon juice and simmer for 5 minutes to reduce the sauce slightly.
  • Roll the butter in some flour and add to the skillet- this will thicken the sauce.
  • Stir to mix well and dissolve the flour.
  • Reduce heat to medium-low and return the chicken to the pan.
  • Place the lemon slices on top of the chicken.
  • Simmer gently for 2 minutes to heat the chicken through.
  • Season with salt and apper and garnish with chopped parsley before serving.
