Steps:
- Melt Parkay in large skillet over medium-high heat. Add onion and bell pepper; cook 3 to 5 minutes or until tender, stirring occasionally. Add chicken and fajita seasoning; stir to combine. Cook 1 minute or until chicken is hot. Remove from heat; set aside.
- Combine Velveeta and undrained tomatoes in 1-1/2-quart microwave-safe dish; cover. Microwave on HIGH 5 minutes or just until Velveeta melts, stirring after 3 minutes. Remove from microwave; stir until mixture is blended.
- Add chicken mixture to Velveeta mixture; stir to combine. Serve with tortilla chips or assorted vegetables, if desired.

- While the chicken and vegetables marinate, prepare the cheese sauce. The cheese sauce can be made up to 3 days ahead and refrigerated in an airtight container until ready to use. When ready to use, reheat the cheese sauce in a small saucepan, over low heat. Add a little heavy cream or Half ‘n Half if the sauce is too thick. Be very careful not to burn the sauce.
- Place some slices of chicken on a plate. Spoon vegetables over the chicken and drizzle it with fresh lime juice. Smother the chicken & vegetables with hot cheese sauce and sprinkle with chopped fresh cilantro. Serve with flour tortillas, Mexican Rice, Refried Beans, Avocado slices, Tomato Salsa and other favorite Mexican side dishes.

- To cook the chicken: In a large resealable plastic bag, combine all dry ingredients for chicken, add the oil, mix and add the sliced chicken breast. Seal and refrigerate for 15 minutes to an hour (begin queso while chicken is marinating). Remove chicken from refrigerator. Heat 1 tbsp. olive oil in a large non-stick skillet. Empty contents of bag into the hot skillet and squeeze lime juice to taste. Cook until chicken is cooked all the way through (about 6 minutes). Remove chicken from skillet and set aside.
- To cook the queso: Heat the half-and-half over medium-high heat in a medium saucepan until simmering (do not boil, milk will foam around edges when ready). Once milk is ready, reduce heat to low and begin adding the cheese in batches while constantly stirring. Once cheese is melted, stir in all remaining ingredients other than garnishes. Stir to combine.
- Chop chicken into 1 inch cubes and add to queso. Stir to combine. Pour queso into large serving bowl and enjoy.
