This isn't a true etouffee like the shrimp or crawfish you'll see at a restaurant. Which is probably why I and my family like it so much.

2 cups all-purpose flour
1 tablespoon salt
1 tablespoon ground black pepper
1 teaspoon ground cayenne pepper
¼ cup butter
1 tablespoon extra-virgin olive oil
1 (16 ounce) package skinless, boneless chicken breast halves, cubed
1 green bell pepper, chopped
1 onion, chopped
3 stalks celery, chopped, or more to taste
1 clove garlic, minced
2 tablespoons butter, or more to taste
1 cup water, or as needed to cover
4 bay leaves
3 cups cooked rice

Steps:

  • Whisk flour, salt, black pepper, and cayenne pepper together in a bowl.
  • Heat 1/4 cup butter and olive oil in a large skillet. Dredge chicken cubes in seasoned flour and fry in the hot butter and oil until golden brown and no longer pink inside, about 10 minutes. Remove chicken, leaving butter mixture in skillet. Reduce heat to low.
  • Stir 1 tablespoon leftover seasoned flour into pan drippings in skillet; cook and stir until the mixture forms a paste and cooks to the color of dark caramel, 10 to 15 minutes. Watch carefully and stir constantly to avoid burning. Add bell pepper, onion, celery, garlic, and 2 more tablespoons butter to flour paste and toss to coat vegetables with butter and browned flour mixture. Cook and stir until vegetables are soft, about 10 minutes.
  • Pour in enough water to cover vegetables, add bay leaves, and bring to a simmer. Return chicken to skillet and cook until flavors are blended, about 10 more minutes. Serve with cooked rice.

Chicken etouffée is a delicious and rich recipe from the city of New Orleans made with a roux, vegetables, chicken, shrimp, and spices.

2 tablespoons butter
2 tablespoons oil
1 onion (chopped)
3 cloves garlic (minced)
1/2 cup celery (chopped)
1 green bell pepper (chopped)
6 boneless skinless chicken breasts
1/4 cup flour
1/8 teaspoon cayenne pepper
1 1/2 teaspoons Cajun or Creole seasoning blend
1 (14-ounce) can chicken broth
1 (14-ounce) can diced tomatoes (undrained)
2 tablespoons tomato paste
1 pound small raw shrimp ( deveined and peeled)
Garnish: chopped scallion (optional)

Steps:

  • Gather the ingredients.
  • In large skillet , melt butter and oil together over medium heat.
  • Add vegetables and stir.
  • Meanwhile, cut chicken breasts into 3 pieces each.
  • Dredge in a mixture of the flour, cayenne pepper, and the seasoning blend.
  • Remove vegetables from skillet and set aside on a plate.
  • Add coated chicken to the skillet along with any remaining flour mixture; cook and stir until browned, about 5 to 6 minutes. The flour and the chicken should both be brown.
  • Return vegetables to skillet along with chicken broth, tomatoes, and tomato paste.
  • Bring to a boil, then reduce heat and simmer for 10 to 15 minutes or until chicken is cooked and sauce is thickened.
  • Add shrimp to the skillet; simmer for 3 to 5 minutes longer until shrimp curl and turn pink.
  • Serve over hot cooked rice and garnish with chopped scallion. Enjoy!

1/2 cup butter
1/2 cup flour
5 cups chopped onions
1 cup chopped green bell pepper
1 cup chopped celery
1 tablespoon minced garlic
1 teaspoon black pepper
1 teaspoon white pepper
1/4-1/2 teaspoon cayenne pepper
1 teaspoon salt
1 tablespoon paprika
1 1/2 cups chicken stock or 1 1/2 cups chicken broth
3 lbs boneless skinless chicken thighs, cut into 1 inch cubes
1 cup sliced green onion
1/4 cup choppd parsley

Steps:

  • Melt the butter in a large, heavy bottomed pot set over medium-high heat. Whisk in the flour and cook, stirring constantly to make a light-to-medium brown roux (about the color of peanut butter or a little lighter). Immediately add the chopped onion, bell pepper and celery. Reduce the heat to medium and cook, stirring often, for 10 minutes. Stir in the garlic, three peppers, salt and paprika; cook 1 minute. Add the chicken stock and stir to mix. Bring the mixture to a boil, stirring often.
  • Transfer the contents of the pot to the slow cooker and add the cubed chicken. Stir to mix, cover and cook on HIGH for 3 hours or LOW for 6 hours. Stir in the sliced green onions and chopped parsley, adjust seasonings and cook, covered for an additional 5-10 minutes.
  • Serve over rice.

I received this recipe from a cooking class at Williams-Sonoma. The recipe comes from a local private chef. It's a simply and fairly healthy recipe that packs a lot of flavor. The chef recommends using Paul Prudhome's cajun seasoning and buying your tomato paste in the tube.

1 lb boneless skinless chicken breast
4 tablespoons butter
1/2 cup chopped celery
1/2 cup chopped red pepper
1/2 cup chopped onion
1/4 cup all-purpose flour
2 tablespoons tomato paste
2 tablespoons cajun seasoning (see directions)
2 tablespoons cajun seasoning (see directions)
1 quart chicken stock
1 bunch scallion, sliced thin
cooked rice

Steps:

  • Cut chicken into one inch chunks and toss with 2 tablespoons of cajun seasoning.
  • Melt butter in a heavy bottomed saucepan over medium high heat. Add chicken, onions, celery, and red pepper and saute for 3-4 minutes. Pick out chicken and set aside. (you don't want to overcook the chicken).
  • Add tomato paste and stir to distribute.
  • Add flour and cook while stirring constantly for 2 minutes.
  • Add chicken stock and 2 tablespoons of cajun seasoning. Bring to a boil.
  • Add chicken back to pot and cook over medium heat until chicken is cooked through.
  • Add scallions, check for seasoning and serve over cooked rice.

1 fryer chicken, cut into 8 pieces
Salt and pepper
2 cups buttermilk
1 cup chopped green onions
1 cup minced garlic
1/2 cup chopped green peppers
4 cups canola oil, for frying
6 cups all-purpose flour, for dusting
1 cup all-purpose flour
3/4 cup vegetable oil
1 1/2 quarts chicken stock
1 cup chopped green onions, plus more for garnish
1 cup chopped green bell pepper
1 cup chopped celery
Cooked white rice, as accompaniment

Steps:

  • Season chicken on all sides with salt and pepper. Place the chicken in a shallow dish. Combine the buttermilk, green onions, garlic, and green peppers and the buttermilk. Pour the buttermilk mixture over the seasoned chicken, cover, and marinate for 24 hours, in the refrigerator.
  • Heat the canola oil in a deep pot to 350 degrees F. Be careful not to fill the pot more than halfway so the oil doesn't boil over when the chicken is added. Place the flour in a shallow dish and season with salt and pepper. Remove the chicken from the marinade and dredge in the seasoned flour, shaking off any excess. Fry the chicken until crisp, amber brown in color, and cooked through, about 20 minutes. The dark meat will take a little longer to cook. While the chicken is frying, make your roux.
  • In a large, deep soup pot over medium heat, add the oil. Stir in the flour and cook, stirring often, until the roux is peanut butter colored, about 10 to 15 minutes. Whisk in the chicken stock and add the onions, bell pepper, and celery. Bring to a simmer and season, to taste, with salt and pepper.
  • Drain the fried chicken on clean paper towels and add to the thickened chicken stock mixture. Cook for 30 minutes under a low flame. Serve chicken over white rice with a little extra gravy. Garnish with some green chopped onions and enjoy.
