CHICKEN ESCALOPES WITH LEMON AND SERRANO HAM
Chicken escalopes are flattened chicken breast fillets - they cook quicker than normal breast portions and absorb flavors more readily. Can be assembled in advance. Can substitute boneless chicken thighs for breasts and bacon or prosciutto for serrano ham. If using chicken thighs, spread apart, no need to flatten with rolling pin.

Steps:
- Preheat oven to 350 degrees. Mix butter with plenty of pepper. Place chicken breasts in plastic wrap and beat with a rolling pin until 1/2 their original thickness.
- Place chicken in large, ovenproof dish with a slice of serrano ham crumpled on each one. Cut 8 thin slices from the lemon and place on edged of chicken/ham.
- Dot with pepper butter, salt if wanted, and bake for 30 minutes.

QUICK CHICKEN ESCALOPE WITH HAM AND GRUYERE
This dish can be finished within 25 minutes and is good enough for dinner guests. However, lovely crisp roast potatoes and a couple of vegetable dishes should go with it, so plan accordingly. Recipe can easily be multiplied for more guests, and in this house a hungry person might want a second helping! I'd make this for the two of us in the house at present.

- With a meat mallet, flatten the breasts to a thickness of about 1/4 inch (3/4 cm) on a wooden board sprinkled with flour.
- Preheat broiler (oven grill).
- Brush the egg (or milk) over the chicken cutlets (add water if it looks as if the egg isn't going to stretch to 8 sides).
- Melt the butter in a skillet over quite high heat until foamy. In the meantime season the chicken escalopes on both sides with salt, pepper and pepper flakes, but don't overdo the hot factor! It has to be just a passing flavour!
- Fry the chicken in the butter (you may have to do this in 2 batches) until golden, then turn -- about 2 minutes per side.
- Remove from heat to an oven tin.
- Top each escalope with the arugula (use more if necessary) or trimmed spinach or swiss chard leaves.
- Top that with 1 slice ham each (use more if you like).
- Top the ham with 1/4 cup grated Gruyere cheese each.
- Broil under the oven grill until cheese melts, 1 - 2 minutes.
- Serve with suggested side dishes (in Intro).
GERMAN CHICKEN, HAM, AND CHEESE ROULADES
A substantial and altogether winning appetizer. Flattened chicken breasts with thin slices of Westphalian or Black Forest ham, garlic and herbs rolled up and cooked in chicken stock and white wine. Chilled and sliced crosswise into rounds.

Steps:
- Place each chicken breast between sheets of plastic wrap and pound it lightly with the flat side of a cleaver or a wooden mallet until it is about 1/4 inch thick. Trim the slices of ham and cheese so that they are the same size as the flattened pieces of chicken. Place a slice of ham on each piece of chicken and cover the ham with a slice of cheese. Season with the finely chopped garlic, thyme, marjoram, or sage and white pepper. Roll up the pieces tightly and fasten with wooden picks, or tie securely with string.
- Arrange the roulades in a greased baking sheet just large enough to hold them comfortably in one layer and pour the wine and broth over them. Cover with aluminum foil. Bake in a preheated 350°F oven 35 to 40 minutes or until the chicken is tender.
- Transfer the roulades to a platter and cool to room temperature, then cover and chill. Remove the wooden picks or string. Slice the roulades crosswise into rounds and arrange on a chilled serving platter. Garnish with watercress or parsley sprigs and serve. Makes about 20.
- VARIATION: In a medium sized, heavy skillet melt 2 Tablespoons Clarified Butter, or heat a mixture of 1 tablespoon each butter and flavorless vegetable oil or olive oil over moderate. Add the roulades and sauté, turning to brown lightly on all sides. Add the wine and chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer about 30 minutes or until the chicken is tender. Cool, chill, slice, and serve as directed above.
