1 tbsp EACH dried cumin powder, paprika, dried oregano
1/4 tsp black pepper
3/4 tsp cayenne pepper ((optional, adjust to taste))
2 tbsp olive oil
3 tbsp flour (, plain/all purpose)
2 cups (500ml) chicken stock/broth (, low sodium)
1.5 cups (375ml) tomato passata or US puree ((Note 4 sub))
600g / 1.2lb chicken breast (, sliced in half horizontally (or boneless thigh) (Note 2))
2 tbsp olive oil (, separated)
1/2 onion (, chopped)
2 garlic cloves (, finely minced)
1 red capsicum/bell pepper (, diced)
400g / 14oz refried beans ((Note 3))
400g/14oz canned corn (, drained (sub frozen 1 3/4 cups))
1/4 cup (65ml) water
1 cup (100g) cheese (shredded (Mexican cheese blend, Monterey Jack, cheddar))
1.5 cups (150g) cheese (, shredded)
2 tbsp coriander/cilantro (, roughly chopped)

Easy Chicken Enchilada Soup image

Quick and easy chicken enchilada soup! It takes 30 minutes to make and has the best creamy texture. Serve it with crunchy tortilla chips and cheese on top for an easy weeknight dinner.

2 tablespoons olive oil
1 medium yellow onion, chopped (see note)
1/2 cup masa harina
2 cups chicken broth
10 oz red enchilada sauce
2 cups cooked chicken
14 oz canned Black beans
10-ounce Rotel (mild or spicy)
1/2 teaspoon kosher salt
4 ounces cream cheese, cubed
Tortilla chips
Shredded cheddar cheese
Chopped cilantro

Steps:

  • Heat the olive oil over medium heat in a large pot. Add the onions and cook them for four to five minutes or until they start to soften.
  • Add the masa harina and stir. Cook it with the onion for about a minute and then add the chicken broth. Stir until the masa dissolves into the broth.
  • Add the enchilada sauce, chicken, beans, Rotel, and salt. Stir and bring the soup to a boil. Lower the heat to maintain a simmer and simmer the soup for 10 to 15 minutes.
  • Take the pot off of the heat and stir in the cream cheese. Stir until it's melted into the soup. Ladle into bowls and top each with garnishes.

2 pounds skinless, boneless chicken breast halves
2 (14 ounce) cans black beans, rinsed and drained
2 cups chicken stock
1 (15 ounce) can whole kernel corn, drained
1 (14 ounce) can fire-roasted diced tomatoes, with juice
1 (10 ounce) can enchilada sauce
1 (4 ounce) can diced green chiles
1 white onion, diced
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon ground cumin

Steps:

  • Combine chicken breasts, black beans, chicken stock, corn, tomatoes, enchilada sauce, green chiles, onion, garlic, salt, and cumin in a multi-functional pressure cooker. Close and lock the lid. Select Stew mode and cook on high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Remove chicken, shred it with 2 forks, and return it to the soup.

7 tablespoons homemade gourmet chicken enchilada soup mix
1 (14 1/2 ounce) can diced tomatoes
1 cup milk
4 cups water
1 cup cooked chicken (diced or shredded- optional)

Steps:

  • In a 2 quart (or larger) stock pot, combine soup mix, diced tomatoes, milk and water.
  • Bring to rolling boil on medium-high heat, then reduce and simmer 15-20 minutes, stirring occasionally.
  • If you like, add cooked chicken, and heat through, about 5 minutes.

1 small yellow onion, diced
1 red bell pepper, diced
1 jalapeno chile pepper, seeded, minced
2 large garlic cloves, minced
1 tsp cumin
1/2 tsp ancho or chipotle chile powder
1/4 tsp cayenne pepper
1 boneless, skinless chicken breast
2 cups fat-free low-sodium chicken broth, increase or decrease liquid by 1/2 cup for a thinner or thicker soup, respectively
1 (4 oz) can fire-roasted green chiles
1/4 cup enchilada sauce
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Heat a drizzle of oil in a medium pot over medium heat. Add in the onion, red bell pepper, and jalapeno, and cook, stirring frequently, until softened, about 3-5 minutes. Add garlic, cumin, chili powder, and cayenne to the pot, and cook, stirring, for about 1 minute. Pour in the chicken broth, green chiles, and enchilada sauce. Bring to a boil, then add in the chicken breast. Reduce heat to low and simmer for 1 hour, flipping the chicken halfway through to ensure even cooking. Remove the chicken from the broth, and place in a bowl. With two forks, shred chicken. Set aside. Using an immersion blender, regular blender, or food processor, blend the broth until smooth. Add the shredded chicken into the soup, and season to taste with salt and pepper. Allow the chicken to sit in the soup over low heat for about 20 minutes so that it can continue to absorb the flavors. You can also let the soup sit for a few hours off of the heat before reheating on the stove. Serve with accoutrements.
