PAPRIKA HENDL

Paprika Hendl image

I started searching for this recipe after reading "Dracula" by Bram Stoker. I found the recipe in the link listed below. I skipped step 4 and just mixed it together good and thought it was fine. I don't know how authentic this dish is, but it's yummy. http://www.hermitsrock.com/article/notes-from-dracula

Time 1h

  • Cut chicken into serving pieces, and salt.
  • Lightly brown onions in fat. Blend in half the paprika. Add tomato juice and chicken. Simmer, covered, 1 hour or until tender. Remove chicken.

DRACULA PART 2: PAPRIKA HENDL RECIPE | PARBAKE & PROSE
2017-03-02 Dracula! I read it on a ridiculously small screen, but I can still picture the woods and the castle. The food reference in the book is a great one. Like most of Stoker’s writing, it’s very sensory – ‘very good but thirsty’. Paprika hendl is a very common dish in Hungary, but I’ve taken some liberties with it. I see it as a spicy chicken …

  • First, break down the chicken. Start by taking the wings off at the second joint and then skin the chicken. Do this by cutting down the length of the chicken back. Next work your fingers under the skin. Separate the chicken from the skin as you go taking care to not rip the skin.
  • Now pull the legs down and pop the hip socket out. Take your knife and scoop out the oyster, this is the best bite of the entire chicken, and cut at the thigh joint. Separate the thigh from the drumstick by cutting at the joint. Take the bone out of the chicken thigh and dice the thigh. Remove the wish bone. Next take your knife and make an incision down the center of the breasts to separate them. Follow the breast and rib bones with your knife separating the breast from the bones. Repeat with the other breast and dice both.

  • If your chicken breasts are too thick cut them in half crosswise. Season the chicken breasts with salt, pepper and smoked paprika on both sides.
  • Heat the olive oil in a skillet. Add chicken breasts and cook on each side for about 5 minutes or until golden brown. The chicken may not yet be cooked through, but that's OK since we'll finish it off in the oven.
  • In the meantime, add the butter, garlic, parsley, lemon juice, salt and pepper to your food processor and pulse for about 30 seconds or until the mixture is all crumbled up and there are no huge pieces of garlic anymore.

PAPRIKáS CSIRKE – THE NOSEY CHEF
2019-11-01 Chicken paprikash has its moment in the limelight (as paprika hendl) in the first two paragraphs of Bram Stoker’s Dracula. While making the journey to Castle Dracula to consult on an extremely sketchy property deal, Jonathan Harker stops at the Hotel Royale in Klausenburgh (German term for Cluj-Napoca in modern Romania, and the unofficial capital of Transylvania).
