- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add broccoli, and cook until just tender, 3 to 4 minutes. Drain and rinse well with cold water to chill. Place drained broccoli into a 9x13 inch baking dish and set aside.
- Melt butter in a saucepan over medium heat. Whisk in flour, and cook, whisking constantly, until the flour begins to turn from white, to a pale beige, about 3 minutes. Whisk in sherry, chicken broth, and heavy cream until smooth. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer for 5 minutes; season with salt and pepper.
- Pour half of the hot cream sauce over the broccoli and top with chicken slices. Stir Parmesan cheese into the remaining sauce, and pour over the chicken slices. Sprinkle top with extra cheese, if desired.
- Bake in preheated oven for 20 minutes or until heated through, then broil for a few minutes until top has turned golden brown.

- Preheat oven to 400 degrees. In a large straight-sided skillet, simmer 1/2 cup water over medium-high heat, then add broccoli and a pinch of salt. Cover, reduce heat to medium-low, and cook until crisp-tender, about 6 minutes. Drain well, then transfer to a large bowl; set aside. Wipe out skillet.

- Preheat oven to 400ºF. Coat a 2 ½ quart baking dish with cooking spray.
- Heat 1 tablespoon oil in a large non-stick skillet over medium-high heat. Add chicken and cook, stirring once or twice, until browned on the outside and just cooked through, 7 to 10 minutes. Transfer to a plate and tent with foil.
- Return the skillet to medium heat and add 2 teaspoons oil. Add onion, garlic, salt, pepper and thyme and cook, stirring often until the onion is softened and starting to brown slightly, 3 to 4 minutes. Add sherry, increase heat to high and simmer, scraping up any browned bits (or until the sherry is almost completely evaporated), 1 to 3 minutes.
- Stir in 1 ½ cups broth and bring to a simmer, stirring occasionally. Stir the remaining ½ cup broth and flour in a small bowl to make a slurry. Gradually whisk the slurry into the simmering vegetable mixture. Bring to a simmer, stirring constantly. The sauce will thicken when it reaches the simmering point.
- Remove the skillet from the heat. Stir in 1/3 cup parmesan and sour cream. Stir in the chicken and any accumulated juices.
- Meanwhile, place broccoli and ½ cup water in a microwave-safe bowl. Cover with a layer of parchment and then a layer of plastic wrap and microwave until the broccoli is bright green, about 2 minutes. Carefully remove cover, drain broccoli.
- Add the broccoli to the chicken mixture. Mix thoroughly. Transfer the mixture to the prepared baking dish.
- Top with the remaining 1/3 cup Parmesan. Mix the remaining 1 teaspoon oil with panko and paprika in a small dish. Sprinkle over the casserole. Bake until hot all the way through and the top is golden, 15 to 22 minutes.

- Preheat oven to 325.
- Steam broccoli for 5 minutes until crisp-tender. Alternatively, place broccoli in a shallow bowl and cover with plastic wrap. Microwave for 2-5 minutes (depending on the strength of your microwave) until crisp-tender. Drain in colander.
- In a medium frying pan, saute chicken breasts in olive oil until lightly browned, about 4-5 minutes per side. Remove from heat and drain on paper towls.
- In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to eliminate the taste of raw flour. Then gradually whisk in chicken broth, sherry and milk or half and half, until incorporated. Bring to a boil and then reduce to a simmer until the sauce is the consistency you desire. Add just a dash of nutmeg. Add 3/4 of the cheese blend and whisk until combined. Add salt and pepper to taste.
- In a 9x13 dish arrange chicken breasts (either whole or sliced) and broccoli. Pour sauce over top and sprinkle with remaining cheese. Cover with aluminum foil. Make several slits in the aluminum foil to allow the steam to escape.

- Preheat the oven to 375, and spray a 9 x 13 baking dish with cooking spray.
- In a large skillet, heat the butter over medium heat, until melted. Add the flour and whisk to combine. Cook 2-3 minutes, or until bubbly and golden. Slowly whisk in the chicken broth, followed by the milk, stirring constantly to prevent lumps. Cook the sauce until thickened and bubbling. Remove the sauce from the heat, and stir in the sour cream and salt.
- Add the broccoli to a microwave safe bowl with 2 tablespoons of water. Cover and microwave on high for 2 minutes, or until softened slightly but not fully cooked. Drain well.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 3 to 5 minutes. Drain and pour into the prepared dish.
- Warm oil in a large frying pan. Add chicken; sprinkle with steak seasoning. Saute until browned on all sides, about 5 minutes. Pour over broccoli in the casserole dish.
- Melt 3 tablespoons butter in a small saucepan. Stir in flour to make a thick paste, then pour in chicken broth. Continue stirring to dissolve the paste. Pour in heavy cream and sherry. - Preheat oven to 350 degrees F. Spray a 9x13 pan with nonstick coconut or avocado oil cooking spray.

- Preheat oven at 375 degrees Fahrenheit. Melt butter in a large heavy bottom skillet. Sauté onions and garlic in melted butter until onions are translucent. Add mushrooms and cook until most water from mushroom evaporates. (3-4 minutes)
- Add wine and cook until most liquid evaporates. (2 minutes) Sprinkle flour over mushrooms and cook stirring often for one minute.
- Add chicken stock, milk, cream, salt. Mix well. Bring to a boil, then reduce heat to simmer and cook stirring occasionally until sauce thickens to coat back of a spoon. ( about 6-7 minutes)
- Take mixture off heat. Add all but 1/2 cup of shredded cheddar cheese, curry powder, mustard, lemon juice, and black pepper. Stir mixture until cheese melted in the hot sauce.
- Stir in broccoli florets (see note 1) and chicken. Transfer mixture to a 3 quart casserole. Top with any remaining sauce in skillet. Sprinkle remaining cheese and parmesan on the top.
- Bake at 375 degrees Fahrenheit for 20-25 minutes or until sauce is bubbling on the sides, cheese has melted and slightly brown on the top. Let stand 10-15 minutes before serving. Garnish with fresh herbs (optional) before serving.

- In a large saucepan of boiling salted water cook the broccoli for 6 to 8 minutes, or until it is just tender, drain it well, and keep it warm. In a heavy saucepan melt the butter over moderately low heat, add the flour, and cook the roux, stirring, for 3 minutes. Add the broth, stirring, bring the mixture to a boil, stirring, and simmer it, stirring occasionally, for 10 minutes. Reduce the heat to low and cook the mixture, stirring, for 10 minutes. In a bowl beat the cream until it holds stiff peaks, fold it, the Sherry, and the lemon juice into the sauce, and season the sauce with salt and pepper.
- Arrange the broccoli on a flameproof platter or in a 2-quart gratin dish and pour half the sauce over it. Stir 1/4 cup of the Parmesan into the remaining sauce. Arrange the chicken on the broccoli, pour the remaining sauce over it, and sprinkle the mixture with the remaining 1/4 cup Parmesan. Broil the mixture under a preheated broiler about 6 inches from the heat for 1 minute, or until the sauce is golden and bubbling.
