2 heads broccoli, cut into florets
¼ cup butter
¼ cup all-purpose flour
3 tablespoons sherry
2 cups chicken broth
½ cup heavy cream
½ teaspoon salt
1 pinch ground black pepper
2 cooked chicken breast halves - bones and skin removed, cut into 1/4 inch slices
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add broccoli, and cook until just tender, 3 to 4 minutes. Drain and rinse well with cold water to chill. Place drained broccoli into a 9x13 inch baking dish and set aside.
  • Melt butter in a saucepan over medium heat. Whisk in flour, and cook, whisking constantly, until the flour begins to turn from white, to a pale beige, about 3 minutes. Whisk in sherry, chicken broth, and heavy cream until smooth. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer for 5 minutes; season with salt and pepper.
  • Pour half of the hot cream sauce over the broccoli and top with chicken slices. Stir Parmesan cheese into the remaining sauce, and pour over the chicken slices. Sprinkle top with extra cheese, if desired.
  • Bake in preheated oven for 20 minutes or until heated through, then broil for a few minutes until top has turned golden brown.

1 bunch broccoli (1 1/2 pounds), cut into florets (about 5 cups)
Kosher salt and freshly ground pepper
4 tablespoons unsalted butter, plus 2 tablespoons melted
1 1/2 pounds boneless, skinless chicken breast, cut crosswise into 1/2-inch-thick strips
1 small onion, finely chopped (1 cup)
8 ounces cremini mushrooms, sliced (about 2 1/2 cups)
3 tablespoons unbleached all-purpose flour
3 cups whole milk, room temperature
9 ounces shredded medium-sharp cheddar (3 cups)
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper
1/2 cup sour cream
1 cup panko breadcrumbs
Cooked egg noodles or steamed white rice, for serving

Steps:

  • Preheat oven to 400 degrees. In a large straight-sided skillet, simmer 1/2 cup water over medium-high heat, then add broccoli and a pinch of salt. Cover, reduce heat to medium-low, and cook until crisp-tender, about 6 minutes. Drain well, then transfer to a large bowl; set aside. Wipe out skillet.
  • Pat chicken dry; season with salt and pepper. Melt 2 tablespoons butter over medium-high heat. Add half the chicken and cook, turning once, until browned and cooked through, about 4 minutes. Transfer to a plate. Repeat with remaining chicken; set aside.
  • 3. In same skillet, melt 2 tablespoons butter, then add onion and mushrooms. Cook, stirring occasionally, until tender and starting to brown, 6 to 7 minutes. Add flour and cook, stirring, 30 seconds. Slowly add milk, reduce heat to medium, and cook, stirring constantly, until mixture is thick enough to coat the back of a spoon, about 9 minutes. Add 2 cups cheese, Dijon, Worcestershire, cayenne, and sour cream; stir until combined. Season with salt and pepper. Add cheese sauce to bowl with broccoli, followed by chicken and accumulated juices; toss to combine. Transfer to a 2 1/2-quart baking dish.
  • In a small bowl, combine 2 tablespoons melted butter, panko, and remaining 1 cup cheese. Sprinkle over broccoli-and-chicken mixture. Bake until bubbly and golden, 20 to 25 minutes. Let cool 15 minutes, then serve over noodles or rice.

2 tablespoons extra virgin olive oil, divided
1 pound boneless-skinless chicken breast, cut into bite-sized chunks
1 large onion, diced
3 cloves garlic, minced
¾ teaspoon salt
½ teaspoon pepper
½ teaspoon dry thyme
¼ cup dry sherry
2 cups chicken broth, divided
¼ cup all-purpose flour
2/3 cup grated Parmesan cheese, divided
¼ cup sour cream
2 pieces medium crowns Broccoli chopped into small pieces (about 6 cups)
½ cup water
3 tablespoons panko
½ teaspoon paprika

Steps:

  • Preheat oven to 400ºF. Coat a 2 ½ quart baking dish with cooking spray.
  • Heat 1 tablespoon oil in a large non-stick skillet over medium-high heat. Add chicken and cook, stirring once or twice, until browned on the outside and just cooked through, 7 to 10 minutes. Transfer to a plate and tent with foil.
  • Return the skillet to medium heat and add 2 teaspoons oil. Add onion, garlic, salt, pepper and thyme and cook, stirring often until the onion is softened and starting to brown slightly, 3 to 4 minutes. Add sherry, increase heat to high and simmer, scraping up any browned bits (or until the sherry is almost completely evaporated), 1 to 3 minutes.
  • Stir in 1 ½ cups broth and bring to a simmer, stirring occasionally. Stir the remaining ½ cup broth and flour in a small bowl to make a slurry. Gradually whisk the slurry into the simmering vegetable mixture. Bring to a simmer, stirring constantly. The sauce will thicken when it reaches the simmering point.
  • Remove the skillet from the heat. Stir in 1/3 cup parmesan and sour cream. Stir in the chicken and any accumulated juices.
  • Meanwhile, place broccoli and ½ cup water in a microwave-safe bowl. Cover with a layer of parchment and then a layer of plastic wrap and microwave until the broccoli is bright green, about 2 minutes. Carefully remove cover, drain broccoli.
  • Add the broccoli to the chicken mixture. Mix thoroughly. Transfer the mixture to the prepared baking dish.
  • Top with the remaining 1/3 cup Parmesan. Mix the remaining 1 teaspoon oil with panko and paprika in a small dish. Sprinkle over the casserole. Bake until hot all the way through and the top is golden, 15 to 22 minutes.

You can substitute chicken thighs for the breasts and use any combination of shredded cheese that you happen to have on hand. You can also substitute any dairy product (i.e. cream) for the milk depending on how decadent you would like to be. The recipe can be doubled or tripled easily and it freezes beautifully. 2 -4 boneless skinless chicken breasts
1 tablespoon extra virgin olive oil
3 tablespoons butter
3 tablespoons flour
3/4 cup chicken broth

1 cup shredded cheddar cheese (or more to taste)

Steps:

  • Preheat oven to 325.
  • Steam broccoli for 5 minutes until crisp-tender. Alternatively, place broccoli in a shallow bowl and cover with plastic wrap. Microwave for 2-5 minutes (depending on the strength of your microwave) until crisp-tender. Drain in colander.
  • In a medium frying pan, saute chicken breasts in olive oil until lightly browned, about 4-5 minutes per side. Remove from heat and drain on paper towls.
  • In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to eliminate the taste of raw flour. Then gradually whisk in chicken broth, sherry and milk or half and half, until incorporated. Bring to a boil and then reduce to a simmer until the sauce is the consistency you desire. Steps:

  • Preheat the oven to 375, and spray a 9 x 13 baking dish with cooking spray.
  • In a large skillet, heat the butter over medium heat, until melted. Add the flour and whisk to combine. Cook 2-3 minutes, or until bubbly and golden. Slowly whisk in the chicken broth, followed by the milk, stirring constantly to prevent lumps. Cook the sauce until thickened and bubbling. Remove the sauce from the heat, and stir in the sour cream and salt.
  • Add the broccoli to a microwave safe bowl with 2 tablespoons of water. Cover and microwave on high for 2 minutes, or until softened slightly but not fully cooked. Drain well.

1 (12 ounce) bag broccoli florets
1 tablespoon vegetable oil
1 ½ pounds chicken breasts, cubed
1 tablespoon steak seasoning (such as McCormick®)
6 tablespoons salted butter, divided
3 tablespoons all-purpose flour
1 cup chicken broth
½ cup heavy cream
3 tablespoons cooking sherry
1 cube chicken bouillon
1 cup shredded Colby Jack cheese, divided
4 slices bread, cubed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 3 to 5 minutes. Drain and pour into the prepared dish.
  • Warm oil in a large frying pan. Add chicken; sprinkle with steak seasoning. Saute until browned on all sides, about 5 minutes. Pour over broccoli in the casserole dish.

3 tbsp olive oil (or unsalted butter divided)
3 tbsp avocado oil
3 tbsp arrowroot
1 chicken broth (pacific)
2 cups low sodium chicken broth (divided)
2 cups milk (if you are using dairy)
1/3 cup cassava flour
1 chicken bouillon- rapunzel
1 1/2 tsp Dijon mustard
1 1/2 tsp gluten-free Worcestershire sauce (optional)
1 tsp EACH granulated onion, granulated garlic, dried parsley
1/2 tsp ground cumin
1/4 tsp pepper
1 1/2 cups freshly grated sharp cheddar cheese divided (- if you are using diary)
1/2 cup freshly grated Parmesan cheese (- if you are using dairy)
1/2 cup sour cream (- if you are using dairy)
3/4 cup panko breadcrumbs
1 tbsp melted butter
1 tbsp olive oil (extra virgin)

Steps:

  • Preheat oven to 350 degrees F. Spray a 9x13 pan with nonstick coconut or avocado oil cooking spray.
  • Season chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper. Set aside
  • Add 1 tablespoon avocado oil to a large skillet. Heat over medium-high heat until very hot. Toss the broccoli in a skillet and sauté for 30 seconds. Add 1/2 cup chicken broth, cover pan, and lower heat to medium. Steam broccoli until tender about 2 - 3minutes. Transfer broccoli to prepared bake dish in an even layer.
  • Melt one tablespoon butter (you can substitute with olive oil or avocado) over medium heat. Turn the heat up to medium-high and add chicken in a single layer and sear it. Continue to cook and stir chicken until cooked through. Then evenly layer chicken on top of broccoli.
  • Melt 2 tablespoons butter with 2 tablespoons olive oil over medium heat (or just use olive oil for dair-free version). Whisk in cassava flour and cook stirring for 1 minute. Turn heat to low then gradually whisk in remaining 1 1/2 cups chicken broth and 1 cup of milk. Add remaining 1 cup milk, then add Dijon, Worcestershire sauce, spices, and chicken bouillon.
  • Bring sauce to a boil, whisking constantly. Reduce heat to a simmer and whisk often until thick. Remove from heat, set it asaide, and whisk in 1/2 cup cheddar until melted. Add Parmesan cheese, whisk it until melted. Then whisk the sour cream in until blended. Pour sauce over broccoli and chicken and spread into an even layer.
  • Cashew sauce: Add all the ingredients to the high- speed blender. Tharnser it to a small pot and cook it for 5 minutes, whisking in occasionally.
  • Breadcrumbs topping: Melt butter over medium heat in a medium skillet. Add Panko and stir to coat. Continue cooking until crumbs become golden brown. Evenly sprinkle over cheese. Cover Chicken Divan with a lid and bake at 350 degrees for 30 minutes.

3 Cup Chicken, rotisserie chicken, diced. See Note 2
12 Oz Broccoli, about 4 cups, See Note 1
Salt and Black Pepper
8 Oz Mushrooms, thin sliced
1/4 Cup Parmesan Cheese
2.5 tbsp All-Purpose Flour
2.5 tbsp Unsalted Butter
1.25 Cup Chicken Stock, low sodium
1 Cup Milk
1/4 Cup Heavy Cream
2 Cup Cheddar Cheese, sharp cheddar, shredded
1 Cup White Onion, small diced
2 tbsp White Wine
1 Garlic, clove, thin sliced
2 tsp Mustard, dijon
1/2 tsp Curry Powder
1 tbsp Lemon, juice

Steps:

  • Preheat oven at 375 degrees Fahrenheit. Melt butter in a large heavy bottom skillet. Sauté onions and garlic in melted butter until onions are translucent. Add mushrooms and cook until most water from mushroom evaporates. (3-4 minutes)
  • Add wine and cook until most liquid evaporates. (2 minutes) Sprinkle flour over mushrooms and cook stirring often for one minute.
  • Add chicken stock, milk, cream, salt. Mix well. Bring to a boil, then reduce heat to simmer and cook stirring occasionally until sauce thickens to coat back of a spoon. ( about 6-7 minutes)
  • Take mixture off heat. Add all but 1/2 cup of shredded cheddar cheese, curry powder, mustard, lemon juice, and black pepper. Stir mixture until cheese melted in the hot sauce.
  • Stir in broccoli florets (see note 1) and chicken. Transfer mixture to a 3 quart casserole. Top with any remaining sauce in skillet. Sprinkle remaining cheese and parmesan on the top.
  • Bake at 375 degrees Fahrenheit for 20-25 minutes or until sauce is bubbling on the sides, cheese has melted and slightly brown on the top. Let stand 10-15 minutes before serving. Garnish with fresh herbs (optional) before serving.

1 large bunch of broccoli, trimmed and cut into 4-inch long spears
1/2 stick (1/4 cup) unsalted butter, cut into pieces
5 tablespoons all-purpose flour
2 cups chicken broth
1/2 cup well-chilled heavy cream
3 tablespoons medium-dry Sherry
fresh lemon juice to taste
1/2 cup freshly grated Parmesan
2 whole boneless skinless chicken breasts (about 1 1/2 pounds total), cooked and sliced thin

Steps:

  • In a large saucepan of boiling salted water cook the broccoli for 6 to 8 minutes, or until it is just tender, drain it well, and keep it warm. In a heavy saucepan melt the butter over moderately low heat, add the flour, and cook the roux, stirring, for 3 minutes. Add the broth, stirring, bring the mixture to a boil, stirring, and simmer it, stirring occasionally, for 10 minutes. Reduce the heat to low and cook the mixture, stirring, for 10 minutes. In a bowl beat the cream until it holds stiff peaks, fold it, the Sherry, and the lemon juice into the sauce, and season the sauce with salt and pepper.
  • Arrange the broccoli on a flameproof platter or in a 2-quart gratin dish and pour half the sauce over it. Stir 1/4 cup of the Parmesan into the remaining sauce. Arrange the chicken on the broccoli, pour the remaining sauce over it, and sprinkle the mixture with the remaining 1/4 cup Parmesan. Broil the mixture under a preheated broiler about 6 inches from the heat for 1 minute, or until the sauce is golden and bubbling.
