1 (10 3/4 ounce) can cream of chicken soup, undiluted
3/4 cup sour cream
1/4 cup milk
1 cup cubed cooked chicken
2 1/2 cups shredded cheddar cheese, divided
2 1/2 cups frozen hash browns, thawed
1 (3 ounce) can Durkee onions
1 cup crushed sour cream and onion potato chips

Steps:

  • In a bowl, combine soup, sour cream, milk, chicken, and 1-1/4 cups cheese.
  • Spread three-fourths of mixture in a greased baking dish.
  • Sprinkle hash browns over top and press lightly.
  • Spread remaining soup mixture over top.
  • Sprinkle with remaining cheese and potato chips.
  • Bake at 350°F for 1 hour or till bubbly.
  • Sprinkle onions over top and bake 5-7 minutes or till lightly browned.
  • Let stand 5-10 minutes before serving.

This turned out great, better then I thought. I don't cook often with canned soup, but one I had to try, I served it with tosses garden salad and soft fresh biscuits.

4 ounces medium egg noodles, cooked, drained
2 cups chopped cooked chicken
1/4 cup melted butter
1 (10 ounce) can cream of chicken soup
1 1/2 cups sour cream
1/2 teaspoon salt
1/4 teaspoon pepper
3 green onions with tops, chopped
2 cups shredded cheddar cheese
1/2 cup corn flakes

Steps:

  • Combine noodles and chicken in bowl; mix well.
  • Combine butter and soup in bowl, stirring until blended.
  • Add sour cream, salt, pepper, green onions and 1 1/2 cups cheese; mix well.
  • Spoon into buttered 2 1/2-quart baking dish.
  • Bake at 350 degrees for 30 minutes.
  • Sprinkle with mixture of 1/2 cup cheese and corn flakes.
  • Bake for 10 minutes or until cheese melts.

This delicious dish uses Parmesan-breaded chicken breasts sauteed then baked with Jack cheese, mushrooms and a white wine sauce. It is guaranteed to be one of your favorites. This dish goes well with a pasta side (try angel hair pasta with garlic herb butter). You may also use a drier white wine if you prefer.

3 teaspoons vegetable oil
4 boneless skinless chicken breast halves
1 1/2 cups grated parmesan cheese
3 eggs, beaten
1 1/2 cups Italian style breadcrumbs
1 1/2 cups white zinfandel wine (or a dry wine)
2 cups sliced fresh mushrooms
3 cups shredded monterey jack cheese

Steps:

  • Heat oil in a large skillet over medium high heat.
  • Dredge chicken first in Parmesan cheese, then in egg, then in bread crumbs.
  • Brown each breast in oil until golden brown.
  • Place chicken in a 9x13 inch baking dish and set aside.
  • Pour wine into skillet with chicken brownings.
  • Add mushrooms and saute for 5 minutes, or until tender.
  • Top each chicken breast with an even amount of Monterey Jack cheese.
  • Top with sauteed mushrooms and wine sauce.
  • Cover dish with aluminum foil and bake at 375 degrees F.
  • for 30 to 35 minutes, or until chicken is cooked through and is no longer pink.

½ cup raisins
1 tablespoon chopped peanuts
½ cup honey
1 teaspoon prepared mustard
⅓ cup maple syrup
¼ cup butter
3 tablespoons brown sugar
1 (3 pound) whole chicken

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium saucepan over low heat combine the raisins, peanuts, honey, mustard, syrup and butter; stir all together until a medium thick glaze has formed, then leave on burner to cook slowly. Stir occasionally to keep from burning.
  • Bake hen at 375 degrees F (190 degrees C) for about 1 hour or until bird is cooked through and juices run clear. Baste hen thoroughly with prepared glaze every 10 to 15 minutes while baking; when hen is cooked through and ready to serve, garnish with orange zest.

2 cans celery soup
