- Sprinkle chicken with 1/4 teaspoon salt and pepper. In a large skillet over medium heat, brown chicken in oil; remove and set aside. In the same skillet, saute onion, celery, green pepper and garlic until tender. Stir in tomatoes, water, paprika, remaining 1/4 teaspoon salt, cayenne pepper and bay leaf; bring to a boil. Reduce heat; cover and simmer for 10 minutes. , Add chicken. Whisk cornstarch and cold water until smooth; stir into chicken mixture and bring to a boil. Simmer, uncovered, until chicken is tender, 10-15 minutes. Remove bay leaf before serving. If desired, serve with rice.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, heat the oil over medium heat. Add the garlic, onion, celery and bell pepper. Cook, stirring occasionally, until tender (about 4 minutes). Add the tomatoes, bay leaf, salt and cayenne pepper. Cook this Creole sauce 3 minutes longer, stirring often.
- Arrange the chicken breasts in an 8 x 11 inch baking dish. Pour the Creole sauce over the chicken.
- Bake 15 to 20 minutes, until the chicken is tender and white throughout.

CREOLE SOUP
This recipe has been in my soup recipe cookbook for years so I have no idea where it came from but it is quick and easy and it is one that you can have the ingredients on hand and make up right away. It can be made as spicy as you want or not spicy at all. Enjoy.

- 1. In a 4 quart pot cook bacon until crisp. Remove and save.
- 2. In the bacon fat saute the vegetables until crisp tender. I drain the fat or blot with a paper towel.
- 3. Stir in soup, tomatoes (breaking them up if needed), water, bay leaf and hot pepper sauce.
- 4. Bring just to a boil, reduce heat, and simmer uncovered for 10 minutes. Add bacon. Discard bay leaf and serve passing more hot sauce if needed.
- 5. I have also added a can of green chilies to this soup and some sausage cut into slices or diced is a good addition.
CREOLE CHICKEN SOUP
Just put this in the slow cooker in the morning and get a whiff of heaven when you come in the door in the evening! I cook it on high heat for one hour while the family gets ready for school and work, then turn it to low before we leave for the day. This is great served with corn muffins or over rice. Lots of ingredients but, except for the okra, they are all things that most cooks have on the shelf, or in the freezer or fridge. From the folks at Rodale Press's book "Your Family Will Love It." CLASSIC CHICKEN GUMBO RECIPE
Steps:
- Gather the ingredients.
- Peel and chop the onions .
- Cut the bell pepper in half lengthwise; remove the seeds and stem. Cut the pepper into 1/4-inch dice.
- Chop the celery. Set the vegetables aside.
- For the roux , melt the shortening in a large Dutch oven over low heat. Add the flour and cook, stirring, until medium brown-about 10 to 15 minutes. Stir the roux constantly to avoid burning. If it burns, you will have to start over.
- Add the chopped vegetables to the roux, adjust the heat to medium-low to medium, and continue to cook, constantly stirring, until the onion is translucent.
- Slowly add the chicken stock and bring it to a boil, stirring constantly.
- Add the diced tomatoes, okra, salt, pepper, thyme, oregano, cayenne, and bay leaf; bring to a boil.
- Reduce the heat to low and simmer, uncovered, for 20 minutes.
- Meanwhile, cook the rice following the package directions. Set aside and keep warm.
- Cut the chicken into bite-size pieces.
- Add the chicken to the soup and cook, covered, for 6 to 8 minutes longer, or until the chicken is thoroughly cooked. Taste the soup and adjust the seasonings with more salt and pepper, as needed.
- To serve, scoop a mound of rice into the center of each of the four large, shallow bowls. Ladle the soup around the rice. Sprinkle with fresh chopped parsley and/or green onion tops, if desired.

- This recipe cooks fast so prep your vegetables as directed above before turning on your Instant Pot (IP).
- Heat IP on Sauté High. Once hot, add 2 tablespoon of Olive Oil. In batches, brown chicken on both sides and set aside on a plate. Leave any dripping and bits of chicken stuck to the IP pot after browning. Do not rinse or throw out...this is the FLAVOR!
- Add peppers, onions, celery and andouille sausage to the pot and sauté for about 5 minutes or until vegetables soften slightly. Only lightly season with salt and pepper as the sausage has plenty of salt and spice. Once the vegetables begin to sweat, use a wooden spoon to scrape any bits of chicken from the bottom of the IP. Add garlic during last minute of cooking vegetables and andouille. Remove vegetable/andouille mixture with a slotted spoon and set aside. Press cancel and let the IP cool down for about 5 minutes.
- While the IP cools, slice the browned chicken into cubes reserving any juices released from the chicken as you slice.
