CHICKEN SATAY SKEWERS RECIPE BY TASTY

- In a food processor, blend the peanut butter, coconut milk, spring onions, garlic, ginger, chilies, curry powder, cumin, turmeric, salt, soy sauce, and lime juice into a smooth paste; this should make about 2 cups. Reserve half of the marinade and pour the other half over the chicken thighs. Mix and chill for 2 hours or overnight.
- Preheat the oven to 425˚F (220˚C). Line a baking tray with parchment paper.
- Skewer the marinated chicken onto bamboo skewers, then arrange the skewers so their ends rest on the edges of the baking tray, allowing the chicken to be suspended. Bake the chicken skewers for 15-20 minutes, until slightly dark brown on the edges and cooked through.
- With no oil in the pan, toast the chopped peanuts on low to medium heat, stirring constantly until the peanuts turn golden brown, 2-3 minutes. Add in the reserved marinade and the coconut milk. Stir and cook until thick and very aromatic, 5-10 minutes.
- Serve the chicken skewers with the sauce on the side.

- Pound the chicken breasts to an even ½-inch thickness between two pieces of wax or parchment paper. Cut the breasts into 1½" pieces and set aside.
- Make the marinade by combining the soy sauce, dark brown sugar, lime zest, vegetable oil, garlic, curry powder, ginger, cardamom and salt in a large bowl. Add the chicken pieces to the bowl and mix until chicken is evenly coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 4 hours or overnight.
- Make the sauce by whisking together the coconut milk, peanut butter, brown sugar, soy sauce and red curry paste in a medium saucepan. Bring to a simmer, then cook over medium heat, stirring occasionally, for about 3 minutes. Add the fresh lime juice. Set aside.
- Preheat the grill to high heat. Meanwhile, thread the chicken pieces onto skewers. Grease the grill. Place the skewers on the grill and cook for about 10 minutes, turning once, or until the chicken is cooked through. Serve the chicken skewers with the Coconut-Peanut Sauce and lime wedges, if desired.

- Place kebab skewers (soak 10) onto a cooking sheet and cover with water. Place a pot lid or something weighted onto skewers so they stay covered and let soak until ready to skew.
- Combine the first five ingredients in a large bowl or tupperware. Slice chicken breasts into 1" pieces (slice lengthwise, then dice), season lightly with salt and pepper and place into bowl, covering all pieces.Place bowl into refrigerator for at least 10 minutes, preferably 20-30.
- Combine all ingredients for the peanut sauce and taste for seasoning.
- Heat outdoor grill to 400 degrees or start to warm a grill pan over medium heat.
- After chicken has marinated, skew 6-7 chicken pieces onto skewers leaving room on one end. Thread the chicken pieces twice through the skewer so they're less likely to fall from stick.
- On outdoor grill, cook kebabs for about 5 minutes per side. On indoor grill pan, spray with cooking spray (not needed if you have a nonstick pan) and cook for the same time or until chicken is no longer pink.
- Serve on their own or over rice! Top with peanut sauce and place more on the table for dipping. Let chicken rest for a few minutes before sliding off of kebabs!

- Stir together 1/2 cup coconut milk, garlic, 1 teaspoon curry powder, brown sugar, salt, and pepper until the sugar has dissolved. Toss marinade with the chicken, cover, and marinate for at least 2 hours.

- Soak the bamboo skewers in water for two hours so they do not splinter or burn while cooking.
- Slice the chicken breast into lengthwise strips, about ½-inch thick.
- Combine the coconut milk, garlic, ginger, soy sauce, fish sauce, cumin, coriander, turmeric, brown sugar, and crushed red pepper flakes. Add chicken strips and toss to evenly coat the chicken with the marinade. Refrigerate and marinate for 6 to 8 hours.
- Thread the chicken strips, like an accordion, onto the pre-soaked skewers. You can leave one piece of chicken on a skewer or double up and use two pieces of chicken per skewer.
- Cook the chicken in one of the following ways:
- a. Grill - Pre-heat an outdoor grill or indoor grill pan and oil the grates lightly. Grill for 4 minutes on each side.
- b. Broil - Place the chicken satay under the broiler for 4 minutes on each side.
- c. Pan Fry - Pre-heat a 12-inch pan or griddle over medium high heat and add a glug of peanut or vegetable oil. Pan-fry the chicken satay for 3 to 5 minutes on each side.
- d. Air-fry - Pre-heat the air fryer to 400°F. Air fry for 10 to 12 minutes, turning over halfway through the cooking process.
- Transfer the cooked chicken to serving platter. Garnish with cucumber slices, lime wedges, torn basil or mint leaves and serve the chicken satay with peanut dipping sauce.
