1 1/2 cups finely chopped cooked chicken
1/4 cup finely chopped unpeeled red apple
1/4 cup chopped peanuts
1/2 cup mango chutney, chopped
3 medium English (seedless) cucumbers

Steps:

  • In medium bowl, mix all ingredients except cucumbers.
  • Cut tapered ends from cucumbers. Draw tines of fork lengthwise through cucumber peel to score; cut into 3/4-inch-thick slices.
  • With small melon baller, scoop and discard center portion of each slice; do not go through bottom. Fill each with 1 tablespoon chicken mixture.

1 English cucumber, halved lengthwise
1 (12.5 fl oz) can chicken breast, drained and flaked
4 ounces Neufchatel cheese, softened
1 tablespoon light mayonnaise
2 green onions, finely chopped
1 roma (plum) tomatoes, chopped
½ teaspoon red pepper flakes, or to taste
¼ teaspoon garlic salt
1 (7.2 ounce) package Original Snack Factory® Pretzel Crisps®

Steps:

  • Slice cucumber halves lengthwise with a mandoline or knife into 1/8 inch thick long slices
  • Mix chicken, Neufchatel cheese, mayonnaise, green onions, tomato, red pepper flakes, and garlic salt together until well blended.
  • Lay cucumber slices flat on a work surface. Spoon two teaspoons chicken mixture on bottom (flat) edge of each slice; roll up. Secure with toothpicks and place rolls upright like cups on a serving plate. Push a Snack Factory® Pretzel Crisp® about halfway down into the chicken mixture.

12 chicken thighs
1 (12 ounce) jar hot chutney
1 (1 ounce) package dry onion soup mix

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, combine chutney and dry soup mix. Mix together. Season chicken pieces with salt and pepper to taste. Place seasoned chicken pieces in a 9x13 inch baking dish and pour chutney mixture over chicken.
  • Bake in the preheated oven for 45 to 60 minutes, or until chutney sauce has turned brown and crunchy.

1/2 cup mango chutney, large pieces cut up
1/4 cup bottled fat-free vinaigrette
1 package (6 oz) refrigerated cooked seasoned chicken breast strips, cut into bite-size pieces (about 1 1/2 cups)
1/2 cup golden raisins or raisins
1 cup coarsely chopped seeded cucumber or radishes
1 small cucumber, cut into spears

Steps:

  • In a medium saucepan, bring chicken broth to boiling. Stir in couscous. Cover and remove from heat. Let stand for 5 minutes. Fluff couscous lightly with a fork.
  • In a medium bowl, combine mango chutney, olive oil, and salad dressing. Add chicken, raisins, chopped cucumber, and cooked couscous. Toss to coat.
  • Serve with cucumber spears.

2 tablespoons lemon juice
1 tablespoon lime juice
2 teaspoons minced fresh cilantro or parsley
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon pepper
1 medium cucumber, diced
1 medium mango, peeled and diced
1 medium tomato, chopped
1/4 cup finely chopped red onion
CHICKEN:
4 boneless skinless chicken breast halves (6 ounces each)
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • For dressing, in a small bowl, mix the first six ingredients. Place cucumber, mango, tomato and onion in a large bowl; toss with dressing., Brush chicken with oil; sprinkle with seasonings. Grill chicken, covered, over medium heat or broil 4 in. from heat 4-5 minutes on each side or until a thermometer reads 165°. Serve with salsa.
