CREAMY CURRIED CHICKEN PIE

Creamy curried chicken pie image

Bake this pie for a family dinner, or simply batch cook the chicken curry base to freeze for later, then serve with rice or in jacket potatoes

Provided by Cassie Best

Categories     Dinner, Main course

Time 1h50m

Number Of Ingredients 16

1 ½kg whole chicken
2 onions , 1 quartered, 1 chopped
2 carrots , 1 cut into 3-4 chunks, 1 finely chopped
2 thick slices ginger
2 garlic cloves , crushed
small bunch parsley or coriander, leaves picked and chopped, stalks left whole
50g butter
vegetable oil or rapeseed oil, for frying
50g flour
2-3 tbsp mild curry paste , such as korma or tikka
½ tsp ground turmeric
1 chicken stock cube
150ml double cream
6 sheets filo pastry
A little melted butter or oil
Tenderstem broccoli , if you like

Steps:

  • Put the chicken, quartered onion, carrot chunks, ginger, garlic and herb stalks in a large stock pot. Cover the chicken completely with water, bring to a simmer, then turn down the heat, cover and cook gently for 1 hr. Turn the chicken over halfway through cooking and top up the water if you need to. After 1 hr the chicken should be tender - try pulling a leg away from the breast with some tongs. If there's much resistance, keep cooking, checking every 10 mins or so. Carefully remove the chicken from the cooking liquid and leave to cool on a plate for about 10 mins.
  • Shred the chicken meat and discard the fat and bones. Strain the cooking liquid (this is your stock) and discard the onions, carrots and other bits (or keep them to make soup). Measure out 500ml of the stock.
  • Melt the butter in a pan (use the stock pan if it's empty - you don't need to wash it). Add a drizzle of oil and the chopped onion and carrot. Cook until the veg is soft, for about 8-10 mins. Stir in the flour, curry paste and turmeric, then crumble in the stock cube. As you stir, the ingredients will clump together. Keep cooking for a min or so, then add a ladleful of the chicken cooking liquid. Stir well until smooth, then add another ladleful. Continue until all of the stock has been used up and you have a smooth sauce.
  • Stir the chicken, cream and chopped herbs into the sauce, then season well and remove from the heat. If freezing portions at this stage, transfer to a sealable container or bag, cool, then freeze for up to two months. Defrost thoroughly in the fridge before reheating in a pan or the microwave. See tips below for serving suggestions.
  • Heat oven to 180C/160C fan/ gas 4. Transfer the creamy curried chicken to a pie dish, about 25 x 5cm. Brush 6 sheets filo pastry with a little melted butter or oil and scrunch the sheets on top of the pie, covering the filling. Bake the pie for about 45-50 mins, until the top is crisp and the curried chicken is bubbling and hot. Serve with Tenderstem broccoli, if you like.

CHERRY PIE

Cherry Pie image

Bake an all-American Cherry Pie recipe from Food Network using fresh or frozen cherries and a buttery pie dough crust for a fruity summer dessert.

Provided by Food Network

Categories     dessert

Time 1h30m

Yield 1 (8-inch) pie

Number Of Ingredients 7

4 cups fresh or frozen tart cherries
1 to 1 1/2 cups granulated sugar
4 tablespoons cornstarch
1/8 tablespoon almond extract (optional)
Your favorite pie crust or pie dough recipe for 2 crust pie
1 1/2 tablespoons butter, to dot
1 tablespoon granulated sugar, to sprinkle

Steps:

  • Place cherries in medium saucepan and place over heat. Cover. After the cherries lose considerable juice, which may take a few minutes, remove from heat. In a small bowl, mix the sugar and cornstarch together. Pour this mixture into the hot cherries and mix well. Add the almond extract, if desired, and mix. Return the mixture to the stove and cook over low heat until thickened, stirring frequently. Remove from the heat and let cool. If the filling is too thick, add a little water, too thin, add a little more cornstarch.
  • Preheat the oven to 375 degrees F.
  • Use your favorite pie dough recipe. Prepare your crust. Divide in half. Roll out each piece large enough to fit into an 8 to 9-inch pan. Pour cooled cherry mixture into the crust. Dot with butter. Moisten edge of bottom crust. Place top crust on and flute the edge of the pie. Make a slit in the middle of the crust for steam to escape. Sprinkle with sugar.
  • Bake for about 50 minutes. Remove from the oven and place on a rack to cool.

CHERRY COBBLER RECIPE WITH PIE FILLING

Cherry Cobbler Recipe with Pie Filling image

Cherry Cobbler with canned pie filling is about the easiest cobbler recipe you can make! No fresh cherries, no extra needed - simple dough for a covered cherry mixture that bakes up in 40 minutes and is not only holiday friendly but a family favorite dessert recipe. Quite like a dump cake recipe, this cobbler recipe is even easier with canned filling and buttery flour. No biscuit dough or complicated roll outs needed, this cherry cobbler can use any flavor pie filling to create the custom cobbler flavors you want with the fruit you love to eat. Serve canned cherry cobbler warm over vanilla ice cream and add a bit of Cool Whip Topping. The light golden brown cake crust has about a 10 minute assembly time and comes together ridiculously easy. Considered an upside down cobbler, this dessert recipe helps you enjoy a homemade dessert when you really do not even feel like baking.

CHERRY-GLAZED CHICKEN

Cherry-Glazed Chicken image

Another TERRIFIC chicken recipe from Rodale's "Terrific Chicken: 100 Great Meals in Minutes". I haven't tried this one yet but because it's different from the couple of Cherry-Glazed Chicken recipes already posted here, I've decided to share it before making it. It's on my to-be-made-soon list. In the notes included with the recipe, is a recommendation to buy tart or sour pie cherries in a can because regular cherries will be too sweet. An alternative suggestion is to use 2 cups of frozen, unsweetened pitted tart cherries and 1/2 a cup of cherry juice in place of the can of cherries.

Categories     Chicken

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 10

6 chicken breast halves
1/2 cup milk
1/2 cup all-purpose flour
1 teaspoon dried thyme
salt & freshly ground black pepper, to taste
2 tablespoons vegetable oil
1 (16 ounce) can pitted tart cherries, drained, 1/2 cup juice reserved
1/4 cup brown sugar
1/4 cup granulated sugar
1 teaspoon yellow mustard

Steps:

  • Preheat the oven to 350ºF.
  • Rinse the chicken with cold running water and pat dry with paper towels.
  • Pour the milk into a shallow dish.
  • Mix the flour, thyme, salt and pepper together on a sheet of waxed paper or a shallow tray.
  • Dip each piece of chicken into the milk, then coat with the seasoned flour, shaking off the excess.
  • Heat the oil in a large non-stick pan over a medium-high heat and cook the chicken pieces for 5 minutes on each side or until golden-brown.
  • As they brown, transfer the chicken pieces to a 13x9-inch baking dish.
  • When all the chicken has been transferred to the baking dish, cover it with foil and bake for 30 minutes.
  • THE CHERRY SAUCE: Combine the reserved cherry juice and both sugars in a small saucepan and bring to the boil over a medium heat. Stir in the mustard and cook for a further 5 minutes, or until the sauce thickens slightly. Stir in the cherries. (The sauce will continue to thicken once it bakes.).
  • After the chicken has baked for 30 minutes, uncover it, and spoon the hot cherry sauce over it.
  • Bake, uncovered for a further 15 minutes, or until the chicken is tender and the juices run clear.
  • Serve over rice or noodles with steamed green vegetables.

Yield 6

Number Of Ingredients 14

1 (16 ounce) package phyllo dough
½ cup butter, melted
1 tablespoon olive oil
1 onion, finely diced
1 clove garlic, crushed
2 skinless, boneless chicken breast halves - cut into cubes
2 tablespoons chopped crystallized ginger
2 tablespoons capers
2 (8 ounce) containers creme fraiche
1 dash hot chile sauce, or to taste
1 teaspoon ground curry powder, or to taste
salt and pepper to taste
1 (16.5 ounce) can pitted dark sweet cherries, drained
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a 1-quart casserole dish.
  • Unroll phyllo dough and lay a slightly damp dishtowel over it. Carefully lift one sheet of dough from stack and fit into greased casserole dish. Brush sheet of dough very lightly with melted butter or margarine. Repeat process with 9 more sheets of phyllo dough. • Place a medium-size skillet over medium heat. Pour olive oil into pan. Saute onion until limp, approximately 5 minutes. Add garlic and chicken, and saute until chicken is browned on the outside and cooked through.
  • Add ginger, capers, creme fraiche, chili sauce, curry powder, and salt and pepper to skillet. Stir in cherries, then taste to check seasoning. Simmer until cherries are heated through.
  • Remove plastic wrap from casserole dish and pour in chicken mixture. Cover mixture with a sheet of phyllo dough. Brush very lightly with melted butter or margarine. Repeat process with 9 more sheets of phyllo. Brush top layer of phyllo with butter or margarine, then sprinkle with parmesan cheese.

  • Combine the flour and salt in a large bowl. Add the butter and cut the fat into the dry ingredients until it’s about the size of large peas with a pastry blender or food processor.
  • Add just enough ice water, 1 tablespoon at a time, so that the dough barely holds together when squeezed with your hand. Turn out the dough onto the counter, shape into 2 disks, wrap in plastic, and refrigerate for at least 20 to 30 minutes. (Meanwhile, work on the pie filling.)
  • After the dough has chilled, lightly dust your counter with flour. Roll one disk into a circle that’s 1/8-inch thick and about 2 inches larger than your pie plate in diameter, rotating and flipping the dough every so often to make sure that it's an even thickness, and sprinkling with more flour as needed to keep it from sticking. (You can also roll the dough between two sheets of parchment paper.) Transfer to the pie plate.
  • Roll out the remaining disk of dough in the same manner. Cut into strips to prepare for making the lattice pattern.
