Chicken Cacciatore is a rustic Italian chicken dish made with bell peppers and mushrooms simmered in tomato sauce.

6 chicken thighs ((or on the bone) skinned and trimmed)
olive oil spray
1 large red bell pepper (chopped)
1 cup chopped mushrooms
1/2 onion (chopped)
2 garlic cloves (finely chopped)
1 (28-ounce) can crushed tomatoes
1/4 cup fat free chicken broth (more if needed)
1 tsp dried oregano leaves
1/4 cup fresh chopped basil leaves
kosher salt and freshly ground black pepper
6 cups cooked whole wheat pasta

Steps:

  • Season chicken with kosher salt and pepper.
  • In a large heavy saute pan, heat the pan over a medium-high flame and spray with cooking oil.
  • Add the chicken pieces to the pan and saute just until brown, about 3-4 minutes per side. Set aside.
  • Add the peppers, onion and garlic to the pan and saute over medium heat until the onion is tender, about 3-4 minutes, then add mushrooms and cook another 2-3 minutes. Season with salt and pepper.
  • Add the tomatoes, chicken, broth, and oregano. Cover the bring the sauce to a simmer.
  • Continue simmering over low heat until the chicken is tender, about 35 to 45 minutes.
  • Add the chopped basil 5 minutes before sauce is done.
  • Serve over 1 cup pasta.

6 chicken thighs, (boneless, skinless, (about 1½ lbs), see shopping tips)
⅛ teaspoon salt
¼ teaspoon fresh ground pepper
1 tablespoon olive oil
1 tablespoon garlic, (minced)
8-10 ounce package mushrooms, (sliced)
1 large onion, (chopped, about 2 cups)
1 large red bell pepper, (sliced thin)
1 large yellow bell pepper, (sliced thin)
½ cup white wine or reduced-sodium chicken broth
1 (24 oz.) jar Classico Tomato and Basil Tomato Sauce (or your favorite)
½ teaspoon Italian seasonings
Fresh ground pepper, (to taste)

Steps:

  • Sprinkle chicken thighs with a little salt and pepper. In a large nonstick pan, add chicken and cook about 5 minutes or until brown, turning once. Remove chicken from pan to a plate. Place mushrooms, onions, and both peppers in a large microwave-safe bowl. Cook in microwave for about 2-3 minutes until the vegetables are softened.
  • In the same large pan, heat 1 tablespoon olive oil. Add garlic, softened mushrooms, onions, and peppers. Saute on high heat until lightly browned and soft, about 3-4 minutes.
  • Stir in wine and cook for about 1-2 minutes until wine is almost evaporated.
  • Return chicken to pan and add the tomato sauce, Italian seasonings and fresh ground pepper. Bring to a boil, reduce heat, and cook uncovered for about 15 minutes until chicken is tender and no longer pink.

6 bone-in skinless chicken thighs
Salt and pepper, ( to season)
1 medium onion, (diced)
2 tablespoons minced garlic, ((or 6 cloves))
1 small yellow bell pepper (capsicum), (diced)
1 small red bell pepper (capsicum), (diced)
1 large carrot, (peeled and sliced)
10 oz (300g) mushrooms, (sliced)
1/2 cup pitted black olives
8 sprigs thyme
2 tablespoons each freshly chopped parsley and basil (plus more to garnish)
1 teaspoon dried oregano
150 ml red wine
28 oz (820g) crushed tomatoes
2 tablespoons tomato paste
7 oz (200g) Roma tomatoes, (halved)
1/2 teaspoon red pepper flakes

Steps:

  • Season chicken with salt and pepper.
  • Heat 2 tablespoons oil in a heavy cast iron skillet. Sear chicken on both sides until golden, about 3-4 minutes each side. Remove from skillet and set aside.
  • Add remaining oil to the pan. Sauté the onion until transparent, about 3-4 minutes. Add in garlic and cook until fragrant, about 30 seconds. Add the peppers, carrot, mushrooms and herbs; cook for 5 minutes until vegetables begin to soften.
  • Pour in the wine, scraping up browned bits from the bottom of the skillet. Cook until wine is reduced, about 2 minutes.
  • Add crushed tomatoes, tomato paste, Roma tomatoes and chill flakes. Season with salt and pepper to your tastes. Return chicken pieces to the skillet and continue to cook over stove top OR in the oven following the instructions below.

8 oz chicken breast, skinless boneless
2 tsp olive oil, divided
1 Tbsp flour
14 oz crushed tomatoes
1/4 c tomato paste
1 stalk(s) celery, sliced
1/2 small green pepper, sliced
1/2 small onion, sliced
2 oz mushrooms, sliced
1/2 c red wine or water
1-2 clove garlic, minced
1/2 tsp each thyme, rosemary, parsley, basil and oregano, dried
1 tsp sugar (or sugar-substitute)
parmesan cheese, to serve
pasta, rice, etc to serve

Steps:

  • 1. Cut chicken breast into about 8 pieces. Sprinkle with flour, salt and pepper. Heat a deep skillet with a teaspoon of olive oil or a spray of olive oil, add chicken pieces. Cook over medium-high heat until browned on both sides. Set aside.
  • 2. Add a teaspoon olive oil (or another spray) to same skillet, add veggies. Cook and stir for approximately 5 minutes.
  • 3. Add tomatoes - crushed and paste - to pan. Add wine or water, spices. Bring to boil. Put chicken pieces back in. Lower heat and simmer together for about 1/2 hour or until chicken is tender.
  • 4. Serve over pasta, rice or any whole-grain mixture. Sprinkle each serving with some grated or shredded parmesan cheese.

  • Place the chicken thighs on a plate and spry them with the olive oil spray and then sprinkle with ½ teaspoon of salt, do so on both sides but don't’ use too much oil spray. Select the Saute function of your Instant Pot or any pressure cooker, set to 15 minutes and allow it to warm up or display Hot. Then add the chicken thighs placing them top side down, allow to brown then you can flip over and brown the second or bone side. You’ll know they’re ready to flip over when they peel away from the pot easily. Remove the browned chicken from the pot and set aside on a clean plate.
  • Next add the carrots, the onion, both mushroom types, the garlic, rosemary and remaining ½ teaspoon of salt. Stir to well combine the ingredients and cook until the onion has softened, about 3 to 4 minutes. Make sure to keep stirring so the ingredients don’t burn and stick to the pot.
  • In the meantime, in a small bowl whisk the chicken broth, the wine and tomato paste until well combined. Then pour over the vegetables. Put the browned chicken back into the pot and do so top down so the bone side is facing up. Press cancel on the Saute function then secure the lid on and move the valve to Sealing. Next select Pressure Cook, Low Pressure and set the time to 7 minutes. Once the cooking time is done select cancel to turn off your pot then let the pressure cooker sit for 5 minutes. Very carefully, use a wooden spoon to move the valve to Venting to release any build up pressure, it’s safe to open when the pin drops. When opening carefully turn and lift the lid facing away from your face.
  • Use a slotted spoon to carefully lift and remove the chicken and vegetables onto a serving platter. Skim the fat off the leftover cooking sauce. Select the Saute function and set to 15 minutes. Allow the sauce to come to a boil. While you wait combine the cornstarch with the water until there are no lumps. Pour it into the sauce and stir until the sauce thickens to a gravy-like consistency. Next stir in the tomatoes, select Cancel to turn off the pot. Use a ladle to pour the sauce over the chicken and vegetables. Lastly sprinkle with the red pepper flakes and enjoy!
