Cool, buttery avocado makes a soothing salsa -- a palate-pleasing contrast to spicy meats, such as these cayenne-rubbed chicken breasts.

Coarse salt and ground pepper
1/4 teaspoon cayenne pepper
4 boneless, skinless chicken breast halves (6 to 8 ounces each)
2 tablespoons olive oil
1 medium red onion, finely diced
2 tablespoons fresh lime juice
1 Hass avocado, pitted and cut into chunks

Steps:

  • In a small bowl, combine 1 teaspoon salt, 1/4 teaspoon pepper, and cayenne; rub all over chicken.
  • In a large skillet, heat oil over medium. Add chicken, and cook until browned on the outside and opaque throughout, 8 to 10 minutes per side.
  • Meanwhile, in a medium bowl, combine onion and lime juice; set aside. Just before serving, fold avocado chunks into onion mixture; season with salt and pepper. Serve chicken topped with salsa.

These delicious and healthy burgers always hit the spot and aren't difficult to prepare - especially if you have a food processor to do the chopping for you.

1/2 cup fresh cilantro (chopped fine)
1/2 medium red bell pepper (chopped fine)
1/2 medium green bell pepper (chopped fine)
1/2 medium orange bell peppers (chopped fine) or 1/2 medium yellow bell pepper (chopped fine)
1/2 medium red onion (chopped fine)
1/2 lb ground chicken (one full package)
1 tablespoon olive oil
1 teaspoon sugar
1/2 medium red bell pepper (cut into strips)
1/2 medium green bell pepper (cut into strips)
1/2 medium orange bell peppers (cut into strips) or 1/2 medium yellow bell pepper (cut into strips)
8 rolls
8 tablespoons mayonnaise

Steps:

  • In large bowl place ground chicken and the first five ingredients, stir to combine completely until the mixture is consistent and smooth.
  • Place a grill pan, or regular skillet, (if you plan to do these on the grill, know that they are very moist and will need to be placed very gently on the grill.) Spray it with non-stick spray and set the skillet/grill pan to medium heat.
  • Slice the remaining bell peppers into strips,.
  • toss with the olive oil and sugar. Place into a second skillet set to medium heat.
  • Cook these stirring occasionally until they soften and get little black char marks (depending on how hot your stove is, this may take 4-7 minutes).
  • Divide the burger mixture into 8 even amounts and shape with hands then place into skillet. The burgers should be roughly ½ inch thick throughout.
  • Cook the burgers for 7 minutes on each side or until the juices run clear and they have an internal temperature of 170° before serving.
  • To assemble the burgers, place on a fresh.
  • Italian roll with mayo and cooked bell peppers on top.

3 chicken breasts
1 lime
1 medium yellow onion, chopped
2 poblano peppers, chopped into 1/4 ",pieces and seeded
1/2 cup sour cream
1 (8 ounce) carton whipping cream
1 cup shredded monterey jack cheese
1/4 cup butter
salt, to taste
pepper, to taste
thyme, to taste

Steps:

  • Shake pepper and thyme on chicken breasts.
  • Melt butter in skillet and brown the chicken (do not cook all the way thru because you are still going to put it in the oven).
  • Set aside in a baking dish and preheat oven to 375 degrees.
  • In a saute pan, melt butter and saute onion and poblano peppers till soft.
  • Take 3/4 of the onion and pepper mixture and place in blender along with a dash of salt.
  • Add sour cream and whipping cream to reach a thick consistency (about 1/4 of the carton).
  • Turn on blender and puree, leaving some of the texture- set aside.
  • Place chicken breasts in a baking dish, squeeze lime juice on each breast, then pour the pureed mixture over them.
  • Take the remainder of the peppers and onion and place them on top of the chickens.
  • Cover the top with cheese and lightly sprinkle thyme on top of everything.
  • Place in the oven uncovered for 25 minutes- the cheese will be starting to brown by then.
  • Serving suggestion: With rice!

  • Charring the Poblano. Roast the skin of your poblano chili over open flame or under your broiler for about 6 minutes, just to make sure all of the edges are charred.
  • Steaming and Slicing. After the 6 minutes of charring, put your chile in a bowl and cover it tightly with plastic wrap to let it steam. It needs to stay there about 20 minutes.
  • Onion. Heat a teaspoon or two of veggie oil in a skillet. Once hot, toss in your onions with some salt and pepper (to taste). This is where I added a dash of Hacienda tequila (don't worry, the alcohol burned off) and a bit of chili powder.
  • Chicken. Martha recommended making ground chicken burgers but I think this is too much of an extra hassle for nothing. I bought very large chicken breasts from the meat counter and cut them into burger-size.
  • Bread. Take your whole wheat bread or buns and coat them with a bit of butter and toast them for a couple minutes on the grill or in the oven. I recommend using extra butter and leaving them a bit mushy.
