- Mix tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.
- Place chicken in 3-qt. casserole sprayed with cooking spray; sprinkle with basil and cheese.
- Top with stuffing mixture. Bake 30 min. or until chicken is done.

- Step 1 - Cut up the chicken breasts (uncooked) into bite sized pieces
- Step 2 - Mix together the chicken breast, diced tomatoes, stuffing (not cooked), cheese, Italian seasoning and garlic salt in a large bowl
- Step 3 - Step the entire mixture in a greased baking dish (I used a large pie plate but a 9x13 pan works just fine too)
- Step 4 - Bake at 350 for 30 minutes or until the top is brown and cheese melted. I added a small amount more mozzarella cheese on the top after I pulled it out of the oven. Enjoy!

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch glass baking dish with cooking spray.
- Toss the cubed chicken with the salt in a large bowl. Place the chicken in a layer into the bottom of the baking dish. Stir together tomatoes, water, garlic, and stuffing mix in a large bowl; set aside to soften. Sprinkle the cheese on top of the chicken, then sprinkle with the Italian seasoning. Spread the softened stuffing mixture on top.
- Bake uncovered until the chicken cubes have turned white and are no longer pink in the center, about 30 minutes.

- Preheat your oven to 375 degrees f.
- Heat oil in a skillet over medium-high heat, add in chicken and season with sea salt and freshly ground black pepper.
- Cook, stirring occasionally, until golden brown on the sides and almost cooked through.
- Transfer the chicken to a 8x8 baking dish (sprayed or brushed with oil to prevent sticking), top with chopped tomatoes, oregano, garlic and a drizzle of balsamic vinegar.
- Sprinkle with mozzarella cheese.
- Place your casserole into the preheated oven, uncovered, and bake for 18-20 minutes, just until cheese is melty and sauce is bubbling at the bottom of the dish.
- Remove from the oven, cover, and allow casserole to rest for 5 minutes, then garnish with fresh basil and enjoy!

- Bring quinoa and water to boil in medium saucepan; cover. Simmer on medium-low heat 15 min. or until water is absorbed and quinoa is tender. Fluff quinoa with fork; spoon into large bowl.
- Reserve 1 cup shredded cheese for later use. Add remaining cheese to quinoa along with all remaining ingredients except tomatoes; mix lightly.
- Spoon into foil-lined 13x9-inch freezer-safe baking pan sprayed with cooking spray; top with reserved cheese. Cover with plastic wrap, then foil. Freeze up to 2 months.
- WHEN READY TO SERVE:
- Heat oven to 350°F. Unwrap frozen casserole; discard plastic wrap and foil. Loosely cover casserole with additional foil. Bake 1 hour 20 min. or until heated through, uncovering after 1 hour. (Or, thaw frozen casserole overnight in refrigerator, then bake [uncovered] in preheated 350°F oven 35 to 40 min. or until heated through. - Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Spread orzo evenly in the prepared baking dish. Add broth, 2 tablespoons melted butter, garlic, 1/2 teaspoon salt, and pepper; stir to combine. Spread tomatoes evenly over top.
- Place chicken breasts on a cutting board and trim any visible fat. Drizzle remaining 2 tablespoon melted butter over chicken, then sprinkle with Italian seasoning, remaining 1/4 teaspoon salt, and red pepper flakes. Place chicken over the tomatoes and cover the baking dish with foil.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Remove foil and sprinkle chicken with mozzarella cheese. Bake until cheese is melted, 5 to 7 minutes longer.
