BROCCOLI CHEDDAR CHICKEN BURGERS

Steps:
- Steam broccoli until tender and then roughly chop into small pieces. Add the broccoli to a large mixing bowl. Let sit until cool enough to handle comfortably.
- Cut the chicken thighs up in large chunks and add to a food processor. Make sure to only fill the food processor up about 1/3 of the way full so work in batches if needed. Pulse the chicken into a ground meat mixture then transfer to a large bowl. Or - just use pre ground chicken.
- Add the chopped broccoli, shredded cheese, salt, pepper, paprika and garlic powder (if using) to the bowl and mix everything together with your hands until well combined.
- Divide the chicken mixture into 5 pieces (about 6 oz each) then shape each section into a burger patty. Season each side with pepper.
- Warm the oil in a large skillet. When the oil is hot add the patties to the pan and fry on each side, about 7-10 minutes each until cooked through. Internal temp should be 165°F/74°C.
- Serve in lettuce wraps or on gluten free buns with your favourite burger add-ons.

- Cook the broccoli until it is soft but not mushy. Follow the tips listed above.
- Add the cooked broccoli florets to the food processor.
- Buzz the broccoli florets until all large pieces are well chopped. Set aside.
- In a large mixing bowl, combine all of the ingredients. Ground chicken, olive oil, salt, pepper, garlic powder, onion powder, chopped broccoli, parmesan cheese, and shredded cheddar cheese.
- Mix everything together using your hands.
- Once well combined, form your chicken burger patties.
- Cook the patties in a non-stick skillet that has been sprayed with olive oil cooking spray. Or, you can grill your burgers. If grilling, please follow the tips listed above.
- Enjoy your burger on a bun or wrapped in lettuce. Top with cheese, tomato, mayo or any toppings you enjoy!

- Directions 1. Preheat the oven to 375°F. 2. Make the burgers: in a medium sauté pan, heat 1 Tbsp olive oil over medium heat. Add the onion to the pan and sauté until tender, 4-5 minutes. Add the garlic and cook until fragrant, 1 minute more. 3. Transfer the onion and garlic to a large bowl and let cool slightly. Stir in the cilantro, 5 spice, cayenne, mustard, salt, pepper, soy sauce, rice vinegar, and egg. Mix well to combine. 4. Add the ground chicken and mix to combine. Add the breadcrumbs and mix just until fully incorporated. Divide the meat into 4 even pieces, and form into patties. 5. In a large sauté pan, heat the remaining 3 Tbsp olive oil over medium heat. Add the patties to the pan and cook until evenly browned, 3-4 minutes per side. Glaze each side of each patty with 1 Tbsp sweet chili sauce, and transfer the pan to the oven. Continue to cook until the patties are fully heated through, 8-10 minutes more. 6. While the burgers cook, make the broccoli rabe: in a large sauté pan, heat the olive oil over medium heat. Add the garlic and reduce heat to low. Cook for 1 minute, then add the broccoli rabe, and continue to cook until the rabe is tender, 5-6 minutes. Season with salt and pepper. Keep warm. 7. Make the mayonnaise: in a small bowl, stir the mayonnaise, lemon zest, and lemon juice together to combine. Spread 2 tsp on each side of each bun. 8. Heat a large cast iron skillet over medium heat. Place the buns, mayonnaise side down, into the pan and toast until evenly golden, 3-4 minutes. 9. To serve, scoop 1/4 of the broccoli rabe onto the bottom of each bun, and place a patty on top. - In a small-medium bowl combine all the ingredients for the slaw and refrigerate until ready to eat.
- In a medium mixing bowl combine the ingredients for the Thai burgers - make sure to not over mix. Divide into patties.
- - Heat a grill medium high heat. Add a bit of olive oil to a pan or brush onto the grill so the burgers don't stick. Cook the burgers for about 4-6 minutes on each side - or until cooked through.
- spray air fryer basket and place chicken burgers in the basket with some room in between. Do not over crowd them, cook in batches if need be. Lightly spray burgers with non-stick spray. Cook at 380 degrees F for 13-15 minutes or until they are cooked through.
- Serve burgers on naan bread, buns, or lettuce wraps with avocado and the spicy broccoli slaw. Enjoy!

- Preheat oven to 200C/390F. Line a baking tray with baking paper (or spray with oil).
- Place Fritter ingredients in a bowl, mix to combine.
- Measure out about ¼ cup of mixture and pat into fritter shapes about 6 cm / 2.25" wide, 1cm / 2/5" thick (they shrink a bit and become thicker).
- Place on tray. Spray the top (generously) with oil.
- Bake for 15 minutes, flip, spray with oil again then bake for a further 8 - 10 minutes until golden on top. Serve immediately with Sauce.
- Sauce: Mix ingredients together. Add salt and pepper to taste. Set aside for 20+ minutes.

- Mix ground chicken with chopped broccoli and cheese (I used an 8oz bag of the Kraft Crumbles).
- Add Montreal Seasoning and form into burgers. I bake them on a non-stick pan so no oil is needed and they still come out crispy (see photos).
- I topped mine with Franks Red Hot sauce because I love that on my turkey and chicken burgers. My husband used BBQ sauce and said it was really good, so whatever condiment makes you happy, try on these burgers or just have them plain.
