STICKY ORANGE MARMALADE CHICKEN (GLUTEN-FREE)

Sticky Orange Marmalade Chicken (Gluten-Free) image

This orange marmalade chicken recipe is quick and easy and perfect for a weeknight dinner. Made using a glaze with my favourite marmalade with no added sugar, it's got a lovely sticky finish and is very juicy. Serve with a side of steamed veg for a healthy meal.

Categories     Main

Time 35m

Yield 2

Number Of Ingredients 7

2 chicken drumsticks skin on
2 chicken thighs (skin on or off)
1/2 teaspoon sea salt
A generous pinch of ground pepper
3 tablespoons orange marmalade (I use this brand with no added sugar)
4 teaspoons wholegrain mustard (I use this brand which has very little sugar added)
4 teaspoons lemon juice

Steps:

  • Preheat the oven to 200 C / 400 F.
  • Place the chicken pieces (skin side up) on a flat baking tray covered with foil or parchment paper. I used foil as I was at a friend's house but ideally you would want to use parchment paper. Otherwise, drizzle the tray with some olive oil. The parchment paper is mostly there to catch any sweet juices and to prevent them from sticking to your tray, which is a pain in the *** to clean.
  • So, the chicken is on the tray, not sprinkle with pieces with salt and some pepper. Put the tray in the oven, middle shelf, and bake for 17 minutes.
  • In the meantime, mix together the marmalade, mustard and lemon juice in a small bowl and set aside.
  • After 15 minutes, remove the chicken and spread the marmalade over the top. Place the tray back in the oven for 15 more minutes. Prepare a side of vegetables or a salad while it's cooking.

ROASTED CHICKEN BREAST WITH MARMALADE

Roasted Chicken Breast with Marmalade image

Provided by Alex Guarnaschelli

Categories     main-dish

Time 15m

Yield 2 servings

Number Of Ingredients 18

5 airline chicken breasts, skin on
Kosher salt
Freshly ground black pepper
2 to 3 tablespoons canola oil
12 to 16 ounces Orange Marmalade, recipe follows
Wilted romaine, recipe follows
5 oranges or tangerines, washed and dried
1/2 cup honey
Kosher salt
Freshly ground black pepper
1 lemon, juiced
1 vanilla bean, split and scraped, or 2 teaspoons vanilla extract
3 tablespoons butter
5 cloves garlic, peeled and minced
5 heads romaine, washed and dried, leaves picked
Kosher salt
Freshly ground black pepper
1 lemon, halved

Steps:

  • Preheat the oven to 450 degrees F.
  • Season the chicken breasts with salt and pepper, to taste. In a large saute pan over high heat, add the oil. Once heated, place the chicken into the pan. Cover the chicken with aluminum foil and place another heavy pan on top. Cook the chicken until the skin is golden brown, about 5 to 8 minutes, and then flip and cook until cooked through, about 5 to 8 more minutes. Serve with the marmalade and wilted romaine.
  • Place the oranges on a flat surface and slice a few thin rounds from both ends. Avoid the center part because that's where a large concentration of the pits are.
  • Measure the honey directly into a medium skillet over low heat until it melts. Add the oranges rounds and bring the mix to a boil. Add a sprinkle of salt and pepper, to taste. Add the juice of the lemon and the vanilla. Stir to blend. Cook for an additional 2 minutes and then transfer to a bowl to cool.
  • In a large skillet, heat the butter and add the garlic over medium heat. Cook until fragrant and add the romaine. Season with salt and pepper, to taste. Use a wooden spoon and stir to blend for an additional minute. Remove from the heat and drain any liquid remaining. Add a few squirts of lemon juice and serve with chicken.

Orange marmalade is the key ingredient in a simple sauce with broth, lemon juice, flour and pepper added. Chicken breasts are lightly browned, then simmered in the sauce. Serve over hot cooked rice and sprinkle with fresh parsley, if desired. This came from Thinner Times. I have not tried this, just posting for easy finding.

Number Of Ingredients 21

6 chicken breasts, boneless and skinless
chicken marinade (recipe (below)
1 cup finely chopped macadamia nuts
3/4 cup breadcrumbs
1/2 cup all-purpose flour
3 eggs, lightly beaten
2 tablespoons oil
1 tablespoon butter
tropical marmalade (recipe below)
1/2 cup soy sauce
1 1/2 tablespoons brown sugar
1 tablespoon mirin (sweet Japanese rice wine)
1 tablespoon olive oil

3 cups diced papayas
1/2 cup gooseberry (optional)
6 tablespoons granulated sugar (or to taste)
1/8 teaspoon prepared horseradish (optional)
1/8 teaspoon chopped of fresh mint (optional) or 1/8 teaspoon spearmint (optional)

Steps:

  • Combine all the marinade ingredients in a large bowl, and blend well. Add chicken breasts, and let marinate for 1 hour in the refrigerator, turning occasionally.
  • While chicken is marinating, prepare the Tropical Marmalade by combining in a saucepan all the Tropical Marmalade ingredients (except mint); bring to a boil. Reduce heat to a simmer and let simmer for 1 hour or until the mixture reaches jam consistency. Stir frequently to avoid scorching. Cool. Fold in fresh mint, to taste; set aside.
  • Remove chicken from refrigerator, and let drain. Combine macadamia nuts and bread crumbs in a shallow dish. Dredge chicken breasts in flour, then dip in beaten eggs, and then coat with the macadamia nut mixture.
  • In a heavy skillet, heat oil and butter over medium heat. Saute chicken for 6 to 8 minutes, turning once. (Add a litte more oil if necessary, since macadamia nuts may absorb oil.).
