1/2 cup chopped onion
1 clove garlic, minced
1 cup heavy cream
1 cup chicken broth
2 teaspoons salt
1 teaspoon white pepper
1 tablespoon Worcestershire sauce
2 tablespoons flour
1/2 cup water
parsley (to garnish)

Steps:

  • Brown chicken breast.
  • Place breasts in oven dish.
  • Mix together the onion, garlic, cream, broth, salt, white pepper and worcestershire and mix well.
  • Pour over the chicken and bake 2 hours at 300 degrees.
  • After baking, remove breasts; strain juices into saucepan.
  • Add 2 tablespoons flour and 1/2 cup water.
  • Mix with whisk until thickened.
  • Add milk if too thick.
  • Pour sauce over breasts and garnish with parsley.

1 teaspoon dried oregano
1 teaspoon dried basil

1 cup heavy whipping cream
½ cup chicken broth
½ cup freshly grated Parmesan cheese

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Season chicken breasts with oregano, basil, salt, and black pepper.
  • Cook the chicken breasts on preheated grill until no longer pink in the center and the juices run clear, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Melt butter with vegetable oil in a saucepan over medium heat. Cook and stir garlic in the butter mixture until fragrant, about 2 minutes. Stir flour through the butter mixture; cook and stir until flour is incorporated, about 1 minute more. Pour heavy cream and chicken broth into the saucepan; stir. Continue cooking until the mixture thickens, 3 to 5 minutes. Add Parmesan cheese and cream cheese to the saucepan; cook, stirring occasionally, until the cheese is melted into the sauce, about 5 minutes.
  • Plate the chicken breasts. Spoon sauce over the chicken. Serve extra sauce on the side.

It turns this quick chicken dinner into a meal that's both worthy and elegant enough to serve to company!It's an excellent sauce to serve with chicken breast, which is very lean and doesn't actually have very much flavour. Also, the lightly-floured crust on the chicken makes it nice and crispy, giving the sauce something to cling on to. So don't skip it!

1/2 tsp salt
black pepper
1/4 cup flour
15g / 1 tbsp unsalted butter
30g / 2 tbsp unsalted butter
300g / 10 oz mushrooms (, sliced (button or Swiss brown))
2 garlic cloves (, minced)
1/4 cup dry white wine ((sub more chicken stock, Note 2))
1/2 cup chicken or vegetable stock (, low sodium)
1 cup thickened / heavy cream (, full fat (Note 3))
1/2 cup parmesan (, finely and freshly grated (Note 4))
2 tbsp chives (, finely sliced (optional) - sub parsley, green onions, or omit)

Steps:

  • Split breast: Cut each breast in half horizontally to form 4 thin steaks in total.
  • Dust with flour: Sprinkle each side with salt and pepper, then sprinkle with flour and use your fingers to spread it all over the surface.
  • Cook chicken: Melt 15g butter in a large non-stick frying pan over medium high heat. Add chicken and cook each side for 2 1/2 minutes until golden brown and just cooked through. Remove from pan, cover and keep warm.
  • Cook mushrooms: In the same frying pan, add remaining butter and increase heat to high. Add mushrooms and cook for 4 minutes, until starting to turn golden brown on the edges.
  • Add garlic later: Then add garlic and a pinch of salt and pepper, and continue cooking for another minute until both garlic and mushrooms are golden.
  • Deglaze skillet: Add white wine - it will bubble and be steamy! Cook for 30 seconds, scraping the bottom of the pan, until wine is mostly evaporated and the alcohol smell is gone.
  • Make creamy sauce: Add chicken stock, cook vigorously for 1 minute so it mostly evaporates. Then add cream, lower heat to medium and simmer for 2 minutes until it reduces and thickens slightly.
  • Add parmesan: Stir in parmesan, taste and add more salt and pepper if needed.
  • Finish chicken in sauce: Return chicken to sauce for 30 seconds (to warm through slightly.) Garnish with chives and serve as-is in the pan, for people to help themselves (or transfer to serving platter, if you prefer). Alternatively, serve a portion of chicken onto each plate, spoon sauce over and garnish with more chives.

2-4 chicken breasts
1 sleeve (Ritz Crackers, crushed)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup milk
2 cups shredded cheddar cheese
1 can (10.5 oz, cream of chicken soup)
2 tablespoons butter
2 tablespoons sour cream
1 teaspoon dry parsley

Steps:

  • Preheat oven to 400 and grease a cast iron pan or baking dish with nonstick cooking spray. Set aside.
  • First, you can decide to cut chicken into smaller pieces and slice down the middle if your breasts are super large. The smaller you make your chicken, the less cooking time you may need so please be aware to adjust times if you cut down into strips or down the middle.
  • Add crushed Ritz crackers, salt and pepper, and mix spices and crackers well in a shallow bowl.
  • Add milk to a shallow bowl and shredded cheddar cheese to a separate bowl. You will be dipping the chicken in these bowls, so do not combine.
  • Dip chicken into milk first, making sure both sides are covered.
  • Dip chicken into shredded cheese and press the cheese into the chicken on both sides.
  • Now dip into crushed Ritz crackers and press the crackers into both sides of the chicken breasts. Some of the cheese will fall off into the crackers and that's okay.
  • As you finish coating chicken, please chicken into prepared pan.
  • Repeat recipe process until all chicken is covered and pan is full.
  • Cover chicken with foil and bake for 35 minutes.
  • Remove foil and discard.
  • Return chicken to oven for 10 more minutes until crispy, melty, and golden brown.
  • Serve topped with cream sauce (recipe below)

  • To make the sauce, add cream of chicken soup, sour cream and butter to a small saucepan.
  • Heat sauce over low heat, stirring occasionally until blended well and hot. This only takes a few minutes.
  • Drizzle sauce on chicken and sprinkle with parsley before serving.

6 chicken thighs, boneless and skinless (or 4 boneless, skinless breasts)
1 teaspoon seasoning salt
1/2 teaspoon garlic powder
1 -2 tablespoon olive oil
1/2-2/3 cup water (for sauteing chicken)
6 ounces cream cheese, cubed (if you like a thicker, richer sauce use 8 ounces cream cheese)
3/4 cup milk (adjust depending on how thin or thick a sauce you like)
1/2 teaspoon seasoning salt
1/2 teaspoon garlic powder
1/2 teaspoon ground pepper (red, white or black pepper)
1/2 teaspoon dried parsley flakes (to garnish) or 2 dashes chives (to garnish)

Steps:

  • Sprinkle chicken with seasoning salt and garlic powder, and set aside.
  • In a microwaveable bowl, mix cream cheese, milk, garlic powder and pepper.
  • Microwave for 30 seconds at a time, checking and stirring until cream cheese is melted.
  • Heat olive oil in a saute pan.
  • Add chicken to pan and saute at medium heat adding small amounts of water to pan, as needed, so that chicken doesn't get too dry or stick to pan. The chicken will release juices that blend with the water.

1 tablespoon flour

1/3 c flour
salt and pepper to taste
1 egg, beaten
3 Tbsp oil
1 4 oz. package cream cheese
1 1/2 c chicken broth
1 green onion, chopped (or chopped parsley, to taste)

Steps:

  • 1. Mix salt and pepper to taste with flour. Cut chicken breasts into serving size pieces; dip in beaten egg, then coat well with flour mixture.
  • 2. Brown chicken breasts in oil til golden and cooked through. It will just take a few minutes; don't overcook or it will become dry. Remove from pan.
  • 3. Pour chicken broth into pan; stir, scraping up chicken drippings. Meanwhile, heat cream cheese in microwave until very soft, 15 - 20 seconds. Add to chicken broth. Stir over medium heat until cream cheese dissolves into broth - don't worry if it does not become perfectly smooth, it will still taste good!
  • 4. Add chicken back to pan, turning over to coat all sides with sauce. Heat for a few additional minutes, until all is heated through.
  • 5. Remove chicken to serving platter or individual plates, top with sauce and sprinkle with chopped green onions (or parsley). Serve with pasta or rice to soak up the tasty sauce!
