2 lbs chicken breasts (I cut them in half so they aren't so thick. Chicken tenders also work very well with this recipe.)
1 (6 ounce) box seasoned stuffing mix
1 2/3 cups chicken broth (water can be used instead)
1 (4 ounce) can sliced mushrooms, drained
1 (10 3/4 ounce) can cream of chicken soup or 1 (10 3/4 ounce) can cream of mushroom soup
8 ounces sour cream
1/2 cup shredded cheddar cheese

Steps:

  • Mix contents of vegetable/seasoning packet from the stuffing mix, stuffing crumbs and 1-2/3 cup chicken (or vegetable) broth, set aside.
  • Arrange uncooked chicken in 13x9 inch baking dish.
  • Scatter mushrooms over chicken.
  • Mix soup, cheese and sour cream; pour over chicken.
  • Top with the set-aside stuffing mixture.
  • Bake at 375 for 45 minutes or until chicken is cooked through.

1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon chopped onion
1 tablespoon chopped celery
1 tablespoon butter
1/4 teaspoon minced fresh parsley
1/8 teaspoon dried thyme
1/8 teaspoon dried basil
1 drop hot pepper sauce
1 slice day-old bread, cubed

Steps:

  • Place chicken skin side down on a double thickness of heavy-duty foil lightly coated with cooking spray; sprinkle with salt and pepper. , In a skillet, saute onion and celery in butter until tender. Stir in the remaining ingredients. Spoon over chicken. Fold foil around chicken and seal tightly; place in a baking pan. Bake at 400° for 40-45 minutes. Carefully open foil. 3 tablespoons fat-free milk
1/2 teaspoon dried parsley flakes
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme
8 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small nonstick skillet, saute the onion, celery and garlic in 1 tablespoon butter until tender. In a large bowl, dissolve bouillon in boiling water.
