MARMALADE GLAZED CHICKEN TENDERS

- 1. Preheat oven to 350 degrees. Spray a 10x8 inch baking pan with nonstick cooking spray and set aside. Rinse and dry the chicken tenders. Remove all visible fat. In a medium-sized bowl, mix the orange marmalade, mustard, soy sauce and garlic. Dip the chicken pieces in the sauce and arrange in the baking pan. Spoon the remaining mixture over the chicken and bake uncovered for 40 minutes.

- Place the rack in the middle of the oven. Preheat to 375°F Put parchment paper on a baking sheet.
- Roasted Chicken: In a bowl, mix marmalade, butter, parsley and dijon mustard. Add salt and pepper. Set aside.
- On a working plan, with a chief knife, cut the bone in the back of the chicken to open it flat. Delicately loosen the skin of the breasts and thighs without breaking it. Spread the mixture of marmalade between the meat and skin. Put the chicken on the baking sheet, breasts side up Add salt and pepper.
- Cook in oven 1h15 to 1h30 or until thermometer inserted in the thigh, without touching the bone, shows 82 C (180 F). Baste with the baking juice at mid-cooking. Set aside the chicken and baking juice for the sauce and keep warm.
- Orange Sauce: Meanwhile, in a small saucepan, melt butter. Sprinkle with flour and cook 1 minute while stirring. Add orange juice and chicken stock. Bring to boil while stirring with a whisk. Let simmer 2 to 3 minutes. Add baking juice of the chicken. Adjust seasoning.

BAKED CHICKEN BREASTS WITH GARLIC AND OREGANO
This would be a very good last minute dinner to be served during the week. Served with steamed broccoli and pasta tossed with lots of chopped garlic and sautéed in olive oil, dash of hot pepper flakes and parmesan cheese.

Steps:
- Trim off any excess fat from the chicken.
- Season the breast generously on both sides with salt and pepper.
- Sprinkle 1/4 teaspoon oregano over each piece and rub with the crushed garlic.
- Squeeze the lemon juice over the chicken and coat lightly with the olive oil.
- Pour the wine into a 12-inch baking dish.
- Place the chicken breast in the wine, skin side down, and marinate at room temperature for 20 to 30 minutes.
- Meanwhile, preheat the oven to 375°.
- Set the baking dish in the oven and bake the chicken 30 minutes.
- Turn skin side up and bake, basting with the pan juices every 10 minutes, for 25 to 35 minutes longer, until the skin is lightly browned and the chicken is cooked through but still juicy.
- Serve with any remaining pan juices spooned over the chicken.

CHICKEN BREAST WITH WHISKEY AND OREGANO MARMALADE
This recipe slicks chicken with a bold and slightly boozy marmalade baste to serve with a lip-smacking roasted carrot mash. Perfect for entertaining.

Steps:
- Preheat the oven to 375°F
- Heat half of the oil in a frying pan and fry the chicken on both sides until brown.
- Pour the whiskey into a saucepan and add the oregano. Cook until reduced by half. Add the marmalade and stir until fully incorporated.
- Brush the chicken breasts with the mixture and bake for 20 minutes.
- While the chicken is in the oven, prepare the carrot mash.
- Boil the carrots for 5 minutes, drain, toss in olive oil and scatter over a roasting sheet.
- Add the garlic and roast alongside the chicken for 10 minutes.
- Cook the potatoes for about 15 minutes, until soft.
- Drain and add the roasted carrot and garlic; mash until soft. Stir the cream and butter into the mash and season to taste.
- Take the chicken out of the oven and remove from the roasting tin - leave to rest for 5 minutes. Pour the white wine into the tin and place over a low heat, scraping and lifting any meat sediment from the tin. Cook down for a few seconds to make a jus.
- To serve, place a dollop of mash in the centre of each plate, slice the chicken breasts and arrange on the top. Drizzle over the jus, and serve immediately.
