"My sister-in-law gave me a recipe for a healthy side dish, and I added chicken to it to make this colorful main course," writes Nancy Daugherty of Cortland, Ohio. "It's wonderful with a salad and crusty bread."

1 pound boneless skinless chicken breasts, cut into 1/4-inch strips
1 tablespoon olive oil
1 small sweet red pepper, julienned
1 small zucchini, cut into 1/4-inch slices
1 small onion, chopped
2 garlic cloves, minced
1/2 cup frozen peas, thawed
1 teaspoon Italian seasoning
1/4 teaspoon salt-free seasoning blend
1 cup bow tie pasta, cooked and drained
2 medium tomatoes, seeded and chopped
1/4 cup shredded Parmesan cheese

Steps:

  • In a large nonstick skillet, saute chicken in oil for 3-5 minutes or until no longer pink. Remove and keep warm. In the same skillet, stir-fry red pepper, zucchini, onion and garlic for 3-4 minutes or until vegetables are crisp-tender., Add the peas and seasonings; stir-fry for 2 minutes. Add pasta and tomatoes; cook for 1 minute. Remove from the heat. Gently stir in chicken. Sprinkle with cheese.

3 cups cut-up mixed fresh vegetables (red peppers, zucchini, broccoli, mushrooms)
1-1/2 pkg. (6 oz. each) OSCAR MAYER CARVING BOARD Flame Grilled Chicken Breast Strips (about 2-1/2 cups)
2-1/4 cups farfalle (bow-tie pasta), cooked, drained
2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Heat oil in large skillet on medium-high heat. Add vegetables; cook and stir 5 min. or until crisp-tender.
  • Add chicken and pasta; stir. Cook and stir 2 min. or until heated through.
  • Stir in cheese.

4 boneless, skinless chicken breast halves
1 (12 ounce) package farfalle (bow tie) pasta
1 (14 ounce) can chicken broth
1 head broccoli, cut into florets
1 medium red bell pepper, thinly sliced
2 cloves garlic, minced
salt and pepper to taste
2 (8 ounce) containers chive and onion cream cheese
¼ cup freshly grated Parmesan cheese

Steps:

  • Place chicken in a saucepan, and add water to cover. Boil 20 minutes. Allow to cool, then pull meat into shreds.
  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • In a large skillet over medium-high heat, combine chicken broth, red pepper, garlic, broccoli, salt and pepper. Cover, and simmer for 8 to 10 minutes, until broccoli is crisp-tender. Stir in cream cheese until smooth. Mix in chicken and pasta until evenly coated. Garnish with Parmesan cheese.
