CHICKEN & BLACK BEAN CHOWDER

Black beans are a staple of South American cuisine, whether cooked up with rice or in a feijoada (a smoky meat stew). We've gone for this satisfying chicken chowder, with chunks of griddled sweetcorn.

½ a bunch of fresh coriander, (15g)
olive oil
2 onions
2 cloves of garlic
2 sticks of celery
250 g free-range cooked chicken
1 teaspoon ground cumin
1 pinch of cayenne pepper
1 x 400 g tin of black beans
750 ml organic chicken stock
2 fresh corn on the cob
1 fresh bay leaf
75 ml single cream
2 corn tortillas
1 lemon

Steps:

  • Pick the coriander leaves and set to one side, then finely slice the stalks. Peel and finely chop the onions and garlic, then finely slice the celery.
  • Place a large saucepan over a medium-low heat and pour in a good lug of oil. Add the onion, garlic, celery and coriander stalks, then sauté for about 10 minutes, or until the veg is softened but not coloured.
  • Add the cumin and cayenne to the pan and fry for a further minute. Stir in the black beans, along with their liquid, and the chicken stock.
  • Cut the corn from the cob and add it all to the pan, along with the bay leaf. Gently bring it all to the boil, then reduce the heat to low and let it simmer for 15 minutes.
  • If you prefer your chowder to be on the smooth side, you could blitz it just a little with a stick blender, otherwise just leave it nice and chunky.
  • Shred the chicken and add it to the pan with the cream. Season with sea salt and black pepper to taste, then return to the hob for a further 10 minutes.
  • Toast the corn tortillas in a hot, dry frying pan until lightly golden. Cut them into large pieces and serve them wedged into bowls of the soup, finished with the reserved coriander leaves and wedges of lemon for squeezing over.

1 cup organic ketchup
2 tablespoons brown sugar
2 tablespoons dark amber maple syrup
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1 teaspoon coarse black pepper
2 cloves garlic, finely chopped
1 tablespoon EVOO
4 ounces smoky bacon, chopped, optional
5 to 6 baby Yukon gold potatoes, chopped
4 ears corn, cleaned and scraped, or 2 cups defrosted kernels
2 to 3 ribs celery, chopped
1 red onion, chopped
1 red bell pepper, seeded and chopped
1 red chile pepper, such as Fresno, sliced or chopped 4 cloves garlic, chopped
3 tablespoons fresh thyme leaves, chopped
1 round tablespoon seafood seasoning, such as Old Bay (a palmful)
1 bay leaf
One 12-ounce bottle warm lager beer
One 15-ounce can red kidney beans
Once 15-ounce can fire roasted tomatoes, stewed tomatoes or diced tomatoes with chiles
4 cups cooked chicken, chopped or shredded
4 cups chicken stock, homemade or store-bought
1 ripe avocado
1 lime, juiced
Tortilla chips

Steps:

  • For the sauce: Place the ketchup, brown sugar, syrup, vinegar, Worcestershire, pepper and garlic in a small pot. Bring to a low boil, reduce the heat to low and thicken 15 minutes. (This sauce stores well for weeks and makes a tasty sloppy Joe, burger baster and pork chop topper if you want to double the recipe. If using for a more all-purpose BBQ sauce, add 1/2 cup chicken stock and simmer for 20 minutes.) For the chowder: Heat the EVOO in a soup pot over medium-high heat and add the bacon, if using. Cook until crisp 2 to 3 minutes. Add the potatoes, corn, celery, onions, bell pepper, chile, garlic, thyme, seafood seasoning and bay leaf, and stir. Cook to soften, 8 to 10 minutes. Add the beer and cook the beer down by half, 1 to 2 minutes. Add the beans, tomatoes, shredded chicken, BBQ Sauce, stock and 2 cups of water. Simmer a few minutes to combine the flavors, cool and store for a make-ahead meal. Reheat over medium heat. When ready to serve, peel, pit and dice the avocado and dress it in the lime juice. Place diced avocado and some broken tortilla chips in each soup bowl, top with the hot chowder and serve.

1/2 cup half-and-half cream
1 can (15 ounces) black beans, rinsed and drained, divided
1/2 cup chopped onion
1 teaspoon olive oil
2 garlic cloves, minced
1/2 cup salsa
1/3 cup fresh or frozen corn
1 tablespoon lime juice
3/4 teaspoon ground cumin
1/2 medium ripe avocado, peeled and chopped
Sour cream and shredded cheddar cheese, optional

Steps:

  • In a blender, combine cream and 3/4 cup black beans; cover and process until smooth. Set aside. , In a small saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the salsa, corn, lime juice, cumin and remaining beans. , Reduce heat; stir in cream mixture. Cook, uncovered, for 2-3 minutes or until heated through. Stir in avocado. Serve with sour cream and cheese if desired.

This was so delicious. I couldn't get over how quick and easy it was with such a well blended flavor. My husband tried to go back for a 3rd bowl but I put it up so we could have leftovers for the next day. If you like it a little thicker, stir a couple tablespoons of cornstarch into cold water and whisk into boiling soup for a couple minutes to thicken. Personally, the sour cream, cheese and chips thickened it enough for me. Hubby went back for seconds so he ate it too quick to even notice. Top with blue corn tortilla chips, sour cream, and shredded Mexican-style cheese.

1 envelope fajita seasoning, divided
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
3 tablespoons canola oil
1 medium onion, chopped
2 garlic cloves, minced
3 cups water
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) Mexican stewed tomatoes, undrained

1 cup uncooked instant brown rice
1 can (4 ounces) chopped green chilies
1 can (11 ounces) condensed nacho cheese soup, undiluted
3 tablespoons minced fresh cilantro

Steps:

  • In a large resealable plastic bag, combine flour and 2 tablespoons fajita seasoning; add chicken. Seal bag and shake to coat. In a large saucepan, saute chicken in oil until no longer pink. 1 cup black beans, dried
1 tablespoon olive oil
1 cup red onion, diced
1 1/2 tablespoons garlic, minced
1 cup celery, diced
1 cup red pepper, diced
1 (6 ounce) ham steaks, trimmed and diced
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon thyme
1/2 teaspoon oregano
4 cups water
3 envelopes oxo low-sodium instant chicken bouillon granules (makes 2.25 c bouillon)
1 cup old el peso chunky salsa
1 ounce cheddar cheese, shredded
1/2 cup low-fat sour cream

Steps:

  • Soak the black beans for several hours or overnight.
  • Saute red onion, garlic, celery, and red pepper in olive oil until tender.
  • Add ham, cumin, coriander, thyme, and oregano to vegetables and cook for 1 minute.
  • Add drained black beans, chicken bouillon powder, water, and salsa and simmer until beans are tender.
  • Add more water if necessary.
  • Serve immediately or add 1/2 c water and refrigerate overnight, and reheat.
  • Makes 4 servings of 1-1/4 cups.
  • Garnish with 1/4 oz of cheddar shreds and 2 T of sour cream.

1 1/4 lbs potatoes, peeled and diced
2 cups frozen corn
1 (14 1/2 ounce) can diced tomatoes with onion and garlic
