MELISSA'S CHICKEN, SPINACH & BLACK BEAN ENCHILADAS
This recipe is a combination of my Southwestern Spinach-Blackbean Dip (#169131) and the sauce used in Chicken Enchiladas (#129531). Very easy to make and can be frozen.

Steps:
- Saute the chopped onion in a little olive oil, add the frozen spinach and cook about 10 minutes, stirring often.
- Add the rotel tomatoes, cumin, chili powder to the spinach mixture and mix well. Cook about 5 minutes, then add cream cheese and cook until melted on medium low heat. Stir frequently while it melts.
- Add black beans to mixture, then add shredded cheese. Mix well then take off heat and put to the side.
- To make the Sauce:.
- Combine all the ingredients in a sauce pan and mix well. Heat until bubbly.
- Spread enough sauce to make a thin layer onto the bottom of a 9 x 13 inch pan. Heat the tortillas in the microwave for about 30 seconds until warm. Spread spoonfuls of the spinach filling onto each tortilla, then wrap it and place seamside down in the pan. When pan is full, pour the remaining sauce over enchiladas, the top with cheese.
- Bake at 350 about 30 minutes until sauce is bubbly and cheese is melted.

BLACK BEAN CHICKEN APPETIZER
This is a great hot dip recipe or a quick dinner idea. Even with the spinach, my two kids loved it and asked for more. What a great way to get everyone to eat something a little more healthy.

CROCK-POT CHICKEN WITH BLACK BEANS & CREAM CHEESE
I love this Crock-Pot chicken recipe for two reasons: one, my family loves it and two, it is so easy to make! I got this recipe from my sister. She has two children of her own, and they love it too! It's also the best leftovers in the world -- if there are any!

SOUTHWESTERN SPINACH-BLACK BEAN DIP
I was craving Southwestern Egg rolls from Chili's and since I've been cutting back on the carbs, I came up with this recipe that can be used as a dip with tortilla chips, quesadilla filling or as a side dish.

OUTRAGEOUS WARM CHICKEN NACHO DIP
This is my jazzed up version of classic queso dip taken to a heartier level, perfect for football games, tailgating or for taking along to pot lucks in a slow cooker! This is a serious crowd-pleaser that is served hot as a dip, spooned over crisp tortilla chips nacho-style, or rolled up in a warm flour tortilla! The heat can be turned up or down with the addition of jalapenos to taste.
