BACON RANCH MACARONI SALAD
Macaroni salad can sometimes be a little boring. So one day I just started adding extra ingredients and this is what I came up with. The whole family love's it! This recipe is even better if served the next day so that all of the flavors are well-incorporated. Enjoy!

Steps:
- Cook bacon in a large, deep skillet over medium-high heat until crisp, about 10 minutes; drain on a plate lined with paper towels until cool. Crumble the bacon.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes; drain.
- Rinse macaroni with cold water until cool; drain.
- Mix cooled macaroni, crumbled bacon, mayonnaise, red onion, green bell pepper, ranch salad dressing mix, and Cheddar cheese together in a large bowl.
- Cover the bowl with plastic wrap and refrigerate at least 4 hours before serving.

Steps:
- 1. In large bowlcombine dry salad mix with sour cream. Add 24 oz. of the bottled salad dressing, mix well
- 2. Add Cooled macaroni stir well. add in chicken, cheese and peas * if using*
- 3. stir in crumbled bacon crisps
- 4. Add remaining bottled dressing if needed. Cover and refrigerate at least 2 hours before serving.

- Bring a pot of water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Drain, and pat dry.
- In a medium bowl, mix together the celery, olives, mayonnaise, sour cream, milk, chicken and Ranch dressing mix. Stir in macaroni until well blended. Refrigerate for 24 hours. Stir, and sprinkle paprika over the top before serving.

- Preheat oven to 350°. In a 6-qt. stockpot, cook macaroni according to package directions for al dente; drain and return to pot., Meanwhile, in a medium saucepan, melt butter over medium heat. Stir in flour, salt and pepper until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Stir in cheeses until blended. Stir in dressing., Add chicken and sauce to macaroni, tossing to combine. Transfer to a greased 13x9-in. baking dish., Toss bread crumbs with melted butter; sprinkle over macaroni. Top with bacon. Bake, uncovered, 30-35 minutes or until topping is golden brown. Sprinkle with parsley. Freeze option: Prepare recipe as directed, increasing milk to 1-1/3 cups. - Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.

- Preheat oven to 400°. Cook pasta according to package directions. Drain and transfer to a large bowl. , In the same pan, combine milk, ranch salad dressing and salad dressing mix until smooth. - In a large zipper-topped plastic baggie or a shallow dish, add the chicken, all of the spices, vinegar of choice, and oil. Close the bag and use your hands to mix everything together. If you are using a shallow dish, use tongs to work the spices evenly into the chicken. You can let this rest for up to a half hour or work with it right away. I like to let it rest a minute to increase the flavor.
- Heat a large skillet over medium to medium-high heat. When the skillet is hot, add the chicken. Cook for 13-15 minutes, turning once, until the chicken is cooked through. Remove the chicken from the pan and let it rest for 10 minutes.
- While the chicken cooks, add your salad greens to a shallow serving bowl. Top with tomatoes, bell pepper, bacon, cucumber, and red onion. When the chicken is cool, slice it into thin strips and add it to the salad.
- You can dress the salad with Litehouse Homestyle Ranch Dressing before serving or have everyone serve themselves and then dress as they like – it’s up to you.
