CHICKEN-BACON-RANCH-STUFFED BAKED POTATOES
A twice-baked potato stuffed with a flavorful twist!

- Preheat the oven to 400 degrees F (200 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
- Bake in the preheated oven until potatoes are easily pierced with a fork, 40 to 50 minutes. Remove from oven, leaving oven on. Let cool.
- While potatoes are cooling, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Let cool 10 minutes and crumble.
- Combine cubed chicken and ranch dressing mix in a bowl and toss to coat.
- Heat canola oil in a skillet over medium heat. Cook chicken in the hot skillet until no longer pink in the center and juices run clear, 5 to 10 minutes. Set aside.
- Cut cooled potatoes in 1/2 lengthwise and scoop out insides, leaving about a 1/2-inch shell. Place insides into a medium bowl and mix with prepared ranch dressing until creamy. Add cooked chicken, bacon pieces, and 3/4 cup Cheddar cheese and mix well.
- Stuff potato skins with chicken mixture. Place stuffed potatoes on the baking sheet.
- Bake in the preheated oven until heated through and golden on top, 20 to 25 minutes.
- Remove potatoes from the oven, leaving oven on. Top with remaining 1/4 cup Cheddar cheese.
- Return potatoes to the oven and bake until cheese has melted. Remove from the oven, garnish with chives, and serve.

- Cut the potatoes into 1-inch cubes. Add 1/4 cup ranch dressing, salt, and pepper, and stir. Place the potatoes in a greased baking dish (9 * 13 inches). Place in the oven at 450 F. Stir every 10 minutes for half an hour.
- Slice chicken breasts 1 ", add remaining ranch dressing, salt, and pepper, and stir. Place on top of potatoes, cover with a piece of foil. Reduce temperature to 400 F. Return casserole to the oven for 20 minutes or until chicken is done.
- Remove casserole, remove foil, sprinkle with grated cheese, fried bacon, and green onions on top. Place in the oven for 8-10 minutes, until cheese melts and begins to bubble.

Steps:
- Preheat oven to 450F
- Grease a 9x13 inch casserole dish with oil spray
- Cut potatoes into one-inch dice
- In a large mixing bowl, mix potatoes with ¼ cup ranch dressing. Add salt and pepper to taste
- Transfer potatoes to the greased casserole dish
- Bake potatoes for 30 minutes, mixing one time through cooking to ensure they all cook evenly.

- Heat oven to 375°F and spray an 8 x 11-inch baking dish with cooking spray.
- If the breasts are uneven in thickness, pound them to an even 1" thickness using a meat pounder.
- Sprinkle both sides of meat with half the grated Parmesan cheese, salt and freshly ground black pepper. Place the chicken in the prepared baking dish.
- In a medium bowl, whisk together Ranch dressing and sour cream. Pour the mixture over the chicken breasts and sprinkle with remaining Parmesan cheese.
- Bake at 375°F for 20-30 minutes or until a meat thermometer inserted in the thickest part of the breast reads 150°F.
- Set oven to broil and broil the breast an additional 2-4 minutes or until the chicken turns golden. It will burn quickly so watch closely.
- The chicken is cooked through when the thermometer reads 160°F when inserted in the thickest part of the middle breast.
- Remove from the oven and sprinkle with cooked bacon crumbles. Allow the chicken to rest a few minutes before serving.

- Preheat oven to 425°F. Grease a 9×13-inch baking dish with olive oil or non-stick spray. Toss the potatoes with half of the olive oil and half of the seasoning mix and spread in the baking dish; place in oven.

- Preheat oven to 425F. Add the potato chunks to a large mixing bowl, then add oil, hot sauce, garlic powder, 1 tablespoon of the Ranch seasoning packet, salt, and pepper to the bowl. Mix well until oil and seasonings are evenly distributed. Using a slotted spoon (don’t pour them in), add the potatoes to a 9×13 inch casserole dish.
