CHICKEN AVOCADO MELT
Avocados are used in many Southwestern recipes, so I feel this represents my region well. It's very easy to make and it tastes so good. My family and friends love it.

- Flatten chicken to 1/4-in. thickness; set aside. In a shallow bowl, combine cornstarch, cumin, garlic powder, salt and cayenne. In another shallow bowl, beat egg and water. Dip chicken into egg, then roll in the cornstarch mixture and cornmeal. , In a large skillet, cook chicken over medium heat in oil until golden brown on both sides. Place in a greased 13x9-in. baking dish; arrange avocado evenly on top. , Bake, uncovered, at 350° for 10-15 minutes or until chicken juices run clear. Sprinkle with cheese. Serve with sour cream, salsa and green onions if desired.

- In a small bowl, add mayo and chipotle sauce. Stir to combine and set aside.
- Slice the focaccia lengthwise. On the bottom half, add chipotle mayo sauce. Then add cheese, chicken, avocado, tomato, peppers, and cilantro.

CHIPOTLE CHICKEN AVOCADO MELT {PANERA COPYCAT}
This Chipotle Chicken Avocado Melt tastes exactly like the Panera version, complete with focaccia, smoked Gouda and roasted red peppers.

- Add chicken breast to a large pot of boiling water and cook for 15-20 minutes or until internal temperature of chicken reaches 165 F. Remove from water, then shred chicken and season with salt & pepper.
- Slice focaccia in half lengthwise if needed. Mix ingredients together for chipotle mayo, then spread a little over a tablespoon over one half of focaccia bread.
- Top with 1/4 of the chicken, about 1 tbsp roasted red pepper, 1/4 of the avocado and one cheese slice. Top with remaining slice of focaccia bread, then add to a skillet over medium heat. Place lid overtop and cook for 3-4 minutes until cheese has just melted. Serve and enjoy!

AVOCADO AND CHICKEN MELTS
This is nice for an easy brunch/lunch/supper dish. I made these up when I had a couple of avocados that needed using and some uncooked chicken left over from making another dish. You can also use some crushed garlic in with the avocado and also top with sliced tomato before topping with the cheese. I have also made this with some shredded chicken from the deli and this works well too. If your avocado is still firm just use slices instead of mashing.

Steps:
- Slice chicken breast if using horizontally through middle.
- Place raw chicken on plate and squeeze over the juice from 1/2 a lemon.
- Sprinkle with the garlic pepper and turn to coat.
- Leave to marinate for a few mins then drain and fry in a little oil until golden brown on each side.
- Remove from pan and slice.
- Place avocado into a bowl and mash (if soft) or slice.
- Add juice of other 1/2 of lemon, salt, crushed garlic (if using)and freshly ground black pepper and mix well.
- Place the four slices of bread on a baking paper lined tray and place in hot oven and grill/broil for a few mins until lightly browned.
- Remove tray from oven, turn bread slices over and spread right to the edges with the mashed or sliced avocado.
- Top with the chopped chicken, sliced tomatoes (if using) and cover with grated cheese and return to oven and grill/broil until cheese melts.
- Remove from oven and serve hot.

CHICKEN AVOCADO MELT
This recipe combines some of my favorites! Chicken, avocado, monterey jack cheese, and green onions! This makes some great baked chicken. Just make sure you pound your chicken breasts so they are an even thickness so it all gets done at one time. My grocery store sells chicken breasts cut thinly that I like to use for this and eliminate the pounding. :) I also like to eat these on sandwiches, and add the toppings to the sandwiches.

- Place the chicken breasts between 2 sheets of wax paper. Flatten them to 1/4 inch thickness, using a meat mallet or a rolling pin.
- Combine the cornstarch, cumin, and garlic salt in a small bowl, stirring well.
- Combine the beaten egg and water in a small bowl, stirring well. Place the cornmeal in a shallow plate. Dredge the chicken in the cornstarch mixture; dip in the egg mixture, and then dredge in the cornmeal.
- Saute the chicken in oil in a large skillet for 2 minutes on each side or until lightly browned. Transfer the chicken to a 13 x 9 x 2 inch baking pan.
- Arrange the avocado slices over the chicken, and sprinkle evenly with the shredded cheese. Bake, uncovered, for 15 minutes or until the cheese melts and the chicken is done. Top with sour cream, green onions, and sweet red pepper. Garnish if desired.
GRILLED CHICKEN AVOCADO MELT
Steps:
- 1.Marinate the chicken thighs in Teriyaki Marinade & Sauce for at least 2 hours. 2.Grill chicken until no longer pink in the center. 3.Brush Teriyaki Baste & Glaze on each thigh, top with slices of cheese and avocado. Place under the broiler for about 1 minute, until cheese is melted; serve on buns. For preparation all on the grill brush Teriyaki Baste & Glaze on each thigh, top with slices of cheese. Cover grill for about 1 minute or until cheese is melted. Place chicken on bottom half of the sandwich buns, top with avocado slices and bun top; serve. Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly. Serving Suggestion: Serve with a fresh green salad or fruit, or try with Wasabi Avocado Potato Salad.

- Skin and bone chicken breasts. On hard surface, with meat mallet or similar flattening utensil, pound chicken to ¼ in thickness. In shallow dish, mix together cornstarch, cumin and garlic salt. Add chicken on piece at a time, dredging to coat. In a small bowl, mix egg and water. Place cornmeal in another bowl. Dip chicken, first in egg and then in cornmeal turning to coat. In large frying pan, place oil and heat to medium temp., add chicken and cook 2 minutes on each side. Remove chicken to shallow baking pan; place avocado slices over chicken and sprinkle with cheese. Bake in 350℉ (180℃) F oven about 15 minutes or until fork can be inserted in chicken with ease and cheese melts. Top chicken with sour cream, dividing equally; sprinkle with chopped green onion and red pepper.
