Steps:
- Sear the sausages in the oil in a large skillet over medium-high heat until the internal temperature is 150 degrees F, about 5 minutes per side. Remove the sausages from the skillet and set aside. Return the skillet to medium-low heat and add more oil if the pan is dry. Add the onions and salt to taste and cook the onions until translucent and just beginning to brown, about 5 minutes.
- Deglaze the skillet with the vinegar, scraping the bottom to get all the brown bits (fond), which equals flavor. Add the cabbage and apples and stir to combine. Let it cook down a bit, stirring occasionally, about 4 minutes. Season with salt and sugar and cook until the cabbage and apples start to soften, another 5 minutes. Return the sausages and any juices that have collected to the skillet. Cover and cook to heat through. Sprinkle in some sage and cook until the internal temperature of the sausages is 165 degrees F, about 5 minutes more. Garnish with additional sage. Adjust the salt if needed, then serve with crusty bread.
HOMEMADE CHICKEN AND APPLE SAUSAGE
I got this recipe from my mom's Joy Of Cooking book. It is very easy, and only has half the fat of regular sausage! Also, you know what's in it (no lips and hooves)! To me, that is a major plus!

CHICKEN APPLE BREAKFAST SAUSAGE
This was not my favorite dish of the class, but it was a very close second. The best breakfast sausage I have ever tried! Eating raw meat is a HUGE NO NO - so to make sure you have added enough salt and/or seasoning, fry up a small piece of the sausage mixture to taste before you make the whole batch. This recipe will make 8 good sized patties or 16 small patties. These patties can be seared in a skillet, placed on a baking sheet lined with parchment paper and popped into a 400ºF oven for 10 min or so to finish the cooking.

- Put the ground chicken into the bowl of a stand mixer, breaking it apart as you add it. You can also do all this by hand in a large mixing bowl.
- Add the rest of the ingredients EXCEPT the olive oil, and mix until everything is well combined, and the little chunks of apple and onion are evenly distributed.
- Form the meat mixture into small 1 inch balls. I use a 1 inch scoop to portion out the meat and then roll it in my hands. Place all the balls on a baking sheet and put in the refrigerator until you are ready to cook them.
- Heat 2 tablespoons of olive oil in a large skillet and brown the sausage patties for 2 minutes on each side. Then lower the heat, cover the pan, and cook for another 7-10 minutes, or until the meat is cooked through. The internal temperature of the sausage should be 165F.

- In a large non-stick pan over medium heat, cook the onion, while stirring often, until it lightly starts to brown (about 3 minutes). Add the apples to the pan and cook for another 3 minutes or until they've softened.
- Once it's cooled a bit, add the sage, salt and pepper. Mix until well combined and then mix in the chicken.
- Use a paper towel to wipe out any leftover onion / apple bits in the pan. Add additional oil, if needed (I used about 1 1/2 teaspoons). Turn on the heat to medium and divide the mixture into 12 balls so that you can form about 2 1/2" patties.
