My grandmother always made this dish when we came over for Sunday dinner. I still enjoy it today-it's quick and simple, and I can garden while it cooks!

1/2 pound medium fresh mushrooms, sliced, divided
1/2 cup egg substitute
1 cup bread crumbs
4 bone-in chicken breast halves (7 ounces each), skinned and boned
2 tablespoons butter
6 slices part-skim mozzarella cheese
3/4 cup chicken broth
Hot cooked rice or noodles
Fresh parsley, chopped

Steps:

  • Place half the mushrooms in a 13x9-in. baking dish; set aside., Place egg substitute and bread crumbs in separate shallow bowls. Dip chicken in milk, then roll in crumbs., In large skillet, brown both sides of chicken in butter; place chicken on top of mushrooms. Arrange remaining mushrooms on chicken; top with cheese. Add chicken broth to pan. , Bake at 350° for 30-35 minutes or until a thermometer reads 170°. Serve chicken with hot cooked rice or noodles. Sprinkle with chopped fresh parsley.

cornstarch

all-purpose flour

Steps:

  • Heat the butter and olive oil in a non-stick skillet over medium heat. Cut each chicken breast into cutlets, or into equally sized thirds. Pat dry with paper toweling and season with salt and pepper then dredge in flour. Shake off any excess. When skillet is hot add chicken pieces and brown on all sides. Transfer chicken to a plate and set aside. Add the onion, and cook, stirring occasionally for about 5 minutes until softened. Add the garlic, stir and then the mushrooms and cook until they begin to exude their juices, another 3 to 4 minutes. Add the wine and allow to reduce until most of the liquid has evaporated. Add oregano, broth, artichoke hearts, cornstarch and parsley. Cook, stirring until the sauce thickens, about 2 minutes. Return the chicken to the skillet, tossing to coat with the pan sauce and heat through, 1 or 2 minutes. Serve immediately.

8 ounces fresh mushrooms, sliced
4 large boneless chicken breasts
2 eggs, beaten
1 cup seasoned bread crumbs
2 tablespoons butter
6 ounces mozzarella cheese, sliced
3/4 cup chicken broth

Steps:

  • Place half of the mushrooms in a 13x9 baking pan.
  • Dip chicken in beaten eggs and roll in bread crumbs.
  • In skillet, melt butter over medium heat. Brown both sides of chicken for 2-3 minutes on each side.
  • Place chicken on top of mushrooms.
  • Arrange remaining mushrooms on chicken.
  • Top with cheese.
  • Add chicken broth to pan.
  • Bake at 350 deg. F. for 30-35 minutes.
  • Serve over hot cooked noodles or rice. Top with fresh parsley.

from spark people.com UPDATE 3-27-09 i first posted this as 6 points, but when i put into the recipe builder it is 7 points. I really enjoyed this, i loved all the flavors. I coulndnt find the cheese slices so i just used 6 ounces of the part skim mozzarella shredded (same points) and it worked really well. i actually think next time i will use less cheese as it was almost too cheesey(if thats possible). I also think that the chicken by itself is great! it would make a great breaded chicken tender to dip in ....whatever you want. if you eat those by themself and divide the 16 ounces of chicken into 8 servings, they would be 4 points per serving. :) enjoy!

1 cup dry breadcrumbs
2 tablespoons light margarine
6 ounces fat-free mozzarella cheese slices
3/4 cup fat-free chicken broth
8 ounces egg noodles

Steps:

  • Place half of the mushrooms in a 13x9x2" baking dish. Dip chicken in egg substitute; roll in bread crumbs. In a skillet, melt the margarine over medium heat. Brown chicken on both sides; place on top of mushrooms. Arrange remaining mushrooms over the chicken; top with cheese slices. Add broth to pan. Bake at 350° for 30-35 minutes. While chicken is cooking, boil noodles according to package directions, omitting oil and salt. Drain. Serve chicken over hot noodles.
