CHICKEN AND SCALLIONS - HCG PHASE 2
To cut down on time to make, I roast a bunch of chicken at once and then grab and reheat for meals throughout the week. If you are starting with raw chicken, then slice into bite sized strips and add to a hot saute pan to get it cooking prior to cooking the scallions.

Steps:
- Preheat a saute pan over medium heat. Chop scallions and add to the pan. Stir fry until beginning to soften, about 2 minutes Slice your precooked chicken (I use 1 1/2 to 2 breast tenders) and add to the pan.
- Add water and seasonings to taste. Stir and let cook 1-2 mins or until chicken is warmed through and sauce is beginning to thicken.
- Remove to a plate or bowl and enjoy with a cup of green tea!

MUSTARD CHICKEN AND CABBAGE - HCG PHASE 2
Came up with this for something different for dinner during phase 2 of the diet. Technically soy sauce isnt in the protocol because it does contain a very small amount of sugar. I didnt mind adding such a small amount, but if you are stricly following the protocol you can substitute Bragg's Amino's for the soy sauce. (I just didnt want to drive to the nearest big city to find a health food store that sells Bragg's) This site lists total sugar in this recipe as 4.5 grams, however the soy is the only thing that has even a trace of sugar in it, and my bottle of Kikkoman Low Sodium says 1gram total carb for a full tbsp of soy sauce, so this site is incorrect (as it does average for national brands)

Steps:
- Cube the chicken into bite sized pieces, add to a hot pan. Cook for 2 mins and add a 1/4 cup water to loose from bottom of pan. Turn and immediately add the cabbage. Stir frequently until cabbage starts to wilt and chicken is cooked through.
- Add mustard, soy sauce, garlic powder, salt and pepper.
- Pour all into a bowl and enjoy.
CHICKEN CACCIATORE (HCG FRIENDLY P2)
I found this recipe online and tried it. It was really good!! My family even loved it!! =) You don't have to be on HCG to enjoy this!! =) The ingredients can also be thrown into a slow cooker on low in the morning, for a great meal at dinnertime. =)

- In a large heavy saute pan, heat the 3 tablespoons of Chicken broth over a medium-high flame. Add the chicken pieces (if doing the HCG diet, be sure there are 6 pieces weighing only 3.5 oz each) to the pan and saute just until brown, about 5 minutes per side. Add more broth as it evaporates, if needed. If all the chicken does not fit in the pan, saute in 2 batches or more.
- Transfer the chicken to a plate and set aside. Add the onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes.
- Season with salt and pepper. Add the remaining broth and simmer until reduced by half, about 3 minutes.
- Add the tomatoes with their juice, capers, oregano and about half of the basil. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over low-medium heat until the chicken is just cooked through.
- Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce.
- Spoon the sauce over the chicken, then sprinkle with the remaining basil and serve.
