1 (15-oz.) can Progresso™ black beans, drained, rinsed
1 3/4 cups Progresso™ chicken broth (from 32-oz cartons)
2 tablespoons water
2 oz. (1/2 cup) shredded Cheddar cheese

Steps:

  • Heat oil in large skillet over medium-high heat until hot. Add rice, cumin and chili powder; cook and stir 1 minute.
  • Stir in all remaining ingredients except cheese. Bring to a boil. Reduce heat; cover and simmer 15 to 18 minutes or until liquid is absorbed and rice is tender, stirring occasionally.
  • Remove skillet from heat. Uncover; fluff mixture with fork. Sprinkle with cheese. Cover; let stand 1 to 2 minutes or until cheese is melted before serving.

1 cup uncooked white rice
2 cups water
¼ cup salsa, or to taste
1 (15 ounce) can black beans, drained
2 cooked skinless, boneless chicken breast halves - cut into strips
½ cup shredded Cheddar cheese
¼ cup chopped fresh cilantro
¼ cup sour cream

Steps:

  • Bring rice and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the water has been absorbed, 20 to 25 minutes. Allow rice to stand covered for about 10 minutes.
  • Mix salsa with black beans in a microwave-safe bowl, and cook in microwave oven on high until hot, about 2 minutes; stir once or twice during heating.
  • Divide cooked rice into individual serving bowls.
  • Top the rice with black bean mixture, chicken strips, and Cheddar cheese; garnish with fresh cilantro and dollops of sour cream.

1/2 cup chopped cilantro, divided
1/3 cup finely chopped red onion, divided
1 teaspoon (or more) fresh lime juice

3 garlic cloves, minced
1 1/2 teaspoons chili powder
1 teaspoon ground coriander
3/4 teaspoon cumin seeds
3 cups low-salt chicken broth
2 15-ounce cans black beans, rinsed and drained
Kosher salt and freshly ground black pepper
4 cups cooked brown or white rice
1 2-3-pound rotisserie chicken, skin discarded and meat shredded
4-6 lime wedges

Steps:

  • Combine apple, 1/4 cup cilantro, 2 tablespoons onion, and 1 teaspoon lime juice in a small bowl; toss to coat. Set apple salsa aside.
  • Combine remaining onion, bell pepper, and oil in a large skillet. Cook over medium heat, stirring often, until completely softened, 6-7 minutes. Add garlic and next 3 ingredients; stir constantly for 2 minutes. Stir in broth and beans; bring to a boil. Reduce heat to medium; simmer briskly, mashing some of the beans with the back of a spoon and stirring often, until sauce is thickened, 8-10 minutes. 1 chicken breast - cooked and shredded

salt and pepper or spicy seasoning
1 (16 ounce) can black beans, drained and rinsed
1 (12 -15 ounce) can whole kernel corn, drained
2 cups chunky salsa, divided
1 (4 ounce) can mild green chilies (optional)
1/4 cup fresh cilantro, chopped and divided
1 1/2 cups Mexican blend cheese

Steps:

  • Heat oven to 350°. Lightly grease a 2-quart casserole or spray with nonstick cooking spray.
  • Wash chicken and pat dry. Sprinkle the chicken all over with salt and pepper or a spicy chicken seasoning blend.

1/2 Tbsp chili powder ($0.10)
1/2 tsp dried oregano ($0.03)
2 chicken breasts (about 1.5 lbs. total) ($2.99)
1 cup shredded cheddar cheese ($0.94)
2 green onions, sliced ($0.17)

Steps:

  • Preheat the oven to 375 degrees. Drain and briefly rinse the black beans. Add the dry rice, black beans, corn, salsa, chicken broth, chili powder, and oregano to an 8×8 inch casserole dish. Stir until everything is evenly combined.
  • Cut the chicken breasts into three pieces each. Push the chicken pieces down into the rice salsa mixture in the casserole dish. Try to push them down as far into the liquid as they'll go. Cover the casserole dish tightly with foil. Bake for one hour.

24 ounces salsa
30 ounces black beans
1 cup cheddar cheese, shredded
1 cup brown rice
1 1/2 cups water

Steps:

  • Preheat oven to 350.
  • First, start your rice. Brown rice can take up to 45 minutes to cook sometimes (although I like the Uncle Ben's 10-minute brown rice). Time it accordingly so that the rice is finished by the time the main dish is finished.
  • Pour the salsa into the bottom of a 13" x 9" glass baking dish. You can add extra if you want salsa leftover to mix into the rice.
  • Fillet the chicken breasts. Lay them on top of the salsa.
  • Bake for 25 minutes.
  • Remove from the oven and pour the black beans in the baking dish. Bake for another 10 minutes.
  • Take it out again and sprinkle the top with shredded cheese. Bake for another 2 minutes or until the cheese melts.
  • Dish out the chicken and black beans onto plates. Then, mix in the prepared rice into the dish with the leftover salsa and beans, and serve alongside the chicken. Enjoy!
