1/4 tsp. crushed red pepper
2 cups shredded cooked chicken
2 cups mashed potatoes
1/2 cup KRAFT Shredded Monterey Jack Cheese
1 egg, beaten
25 round buttery crackers, crushed
2 cups oil

Steps:

  • Cook and stir first 3 ingredients in skillet sprayed with cooking spray on medium-high heat 10 min. or until vegetables are crisp-tender.
  • Combine chicken, potatoes and cheese in large bowl. Add onion mixture; mix well. Cool completely. Shape into 15 (3-inch) sausage-shaped croquettes. Dip, 1 at a time, in egg then in cracker crumbs, turning to evenly coat both sides of each croquette.
  • Heat oil into large saucepan to 375°F. Add croquettes in batches; cook 3 min. on each side or until golden brown on both sides. Drain on paper towels. Serve warm.

1 (10.75 ounce) can condensed cream of chicken soup
1 ½ cups finely chopped, cooked chicken meat
¼ cup Italian-style dry bread crumbs
2 tablespoons minced celery
1 tablespoon minced onion
¼ teaspoon poultry seasoning
1 tablespoon shortening
½ cup milk
⅛ tablespoon poultry seasoning
½ cup Italian-style dry bread crumbs, for rolling

Steps:

  • Combine 1/3 cup of the soup, chicken, bread crumbs, celery, onion and 1/4 teaspoon poultry seasoning. Mix well and shape into 6 croquettes (I make patties). Chill in refrigerator for about 1 hour.
  • Remove croquettes from refrigerator and roll in additional bread crumbs. In a large skillet, melt 1 to 2 tablespoons shortening. Brown the croquettes in the shortening. Meanwhile, in a small saucepan, combine the remaining soup, milk and 1/8 teaspoon poultry seasoning. Heat over low, stirring occasionally. Serve sauce over croquettes.

This is a lovely side dish for a roast or a casserole that's really easy but utterly moreish. Add a few dried herbs to the potato croquettes if you wish.

750g/1lb 10oz floury potatoes, cut into chunks
25g/1oz butter
2 egg yolks plus 2 whole eggs
50g/1¾oz strong hard cheese, such as cheddar, emmental or gruyere
50g/1¾oz plain flour
100g/3½oz panko breadcrumbs
olive oil, for drizzling
salt and freshly ground black pepper

Steps:

  • Simmer the potatoes in lightly salted water for 15 minutes, or until tender. Drain and mash thoroughly, preferably with a ricer. Beat in the butter and 2 egg yolks then finally the cheese and season to taste. Cover and leave until firm and cool enough to handle.
  • Shape the mixture into 14-16 croquettes, weighing around 50g/2oz each.
  • Put the flour, whole eggs and breadcrumbs into three separate shallow bowls and beat the eggs. Dip each croquette in the flour, pat off any excess, then coat in the egg before dipping in the breadcrumbs. Transfer to a baking tray, then leave to cool to room temperature.Preheat the oven to 200C/180 Fan/Gas 6.
  • Drizzle the croquettes with oil and bake for 20 minutes, or until golden-brown.

250 grams boneless chicken (cut into cubes)
½ teaspoon ginger paste
½ teaspoon garlic paste
1 tablespoon soy sauce
1 tablespoon vinegar
½ teaspoon black pepper
¼ teaspoon white pepper
1 teaspoon salt
1 teaspoon oil
600 grams potatoes
2 small capsicum
1 packet instant noodles, chicken flavour (if not available then use 50 grams noodles / spaghetti)
1 teaspoon chili flakes
1 tablespoon vinegar (or lemon juice)
2 tablespoon soy sauce
½ teaspoon black pepper
½ teaspoon white pepper
1 ½ teaspoon salt
1 cup flour (or as needed)
2 cups bread crumbs or panko bread crumbs (use as needed)
2 eggs
Oil (for frying)

Steps:

  • Marinate chicken with ginger paste, garlic paste, soy sauce, vinegar, black pepper, white pepper and salt. Let it sit for 30 minutes.
  • Heat oil in pan, and add the marinated chicken. Cook for about 10 - 15 minutes till chicken is cooked through, and water has dried.
  • Place the chicken in a bowl to cool.
  • Once the chicken is cool, place the chicken in a food processor and pulse for a few seconds till cut into small pieces. Alternatively, shred the chicken into small pieces by hand.
  • Peel, boil and mash the potatoes. Place the mashed potatoes in a bowl.
  • Finely chop the capsicum. Alternatively you can also pulse it for a few seconds in the processor to save time.
  • Crush the instant noodles into small pieces. Make the instant noodles as per packet instructions, making sure there is minimal water in the final noodles. Add the seasoning packet and mix together. If not using instant noodles, take 50 grams of spaghetti and break into small pieces. Boil till it is cooked through. Drain the water and add to the mashed potatoes mixture.
  • Add capsicum, shredded chicken and instant noodles in the mashed potatoes mixture.
  • Add chilli flakes, lemon juice/vinegar, soy sauce, black pepper and white pepper. If using spaghetti instead of instant noodles, add a chicken cube. Mix together well. Taste and adjust seasonings as required.
  • Place the mixture in the fridge for 30 - 45 minutes to firm up.
  • In the meanwhile prepare an assembly line for the coating. Place flour in a plate / deep bowl. Whisk the eggs with 2 tablespoon water in a bowl. Add the breadcrumbs in a plate / deep bowl.
  • Make oval shaped balls of the potato and chicken mixture. Dip in flour, then egg mixture and then finaly the breadcrumbs mixture. Make sure the croquettes are coated properly.
  • Heat oil in a wok/karhai and then deep fry the croquettes till golden brown.

Steps:

  • Bring a large pot of water to a boil and add the salt and chicken.
  • Cook 5-10 minutes until done, then remove, let cool, and dice finely.
  • In a bowl put the mashed potatoes, garlic, onion, egg, chicken, parsley, cinnamon, turmeric, cayenne and salt and pepper to taste.
  • Mix well, if mixture is too dry add a little of the cooking liquid and then add enough flour, if needed, to easily form them into patties.
  • Wet or flour your hands and form mixture into patties.
  • In a heavy skillet heat 1/2 inch of oil to 350 degrees.
  • Slide in the patties and cook until golden brown, 3-5 minutes per side.
  • Do not crowd the pan, work in batches if necessary.

2 eggs, lightly beaten
vegetable oil, for deep-frying mayonnaise, lemon wedges to serve

Steps:

  • Place potatoes in small saucepan of salted water. Bring to boil and cook for 4-5 minutes, until just cooked through. Drain well.
  • Mix potato, chicken, corn and parsley into bechamel sauce. Chill 1 hour, until firm.
  • Shape 2 tablespoonfuls of mixture into log shapes. Combine breadcrumbs and cheese in dish. Gently coat croquettes in flour, dip into egg, then roll in breadcrumb mixture. Chill 15 minutes.
  • Heat oil in a large, heavy- based saucepan on medium, until a few crumbs sizzle as soon as they are added. Cook croquettes in 4 hatches for 5-6 minutes, turning, until golden. Drain on paper towel.

600 g fresh veal (or use left-over chicken or turkey, 1lb 5oz) or 600 g beef (or use left-over chicken or turkey, 1lb 5oz)
salt and pepper
75 g butter (2 1/2 oz)
1 tablespoon vegetable oil
1/2 cup white wine
1 small onion, finely chopped
1 clove
2 bay leaves
1/4 teaspoon ground nutmeg or 1/4 teaspoon mace
2 sprigs parsley, finely chopped
3/4 teaspoon thyme
2 teaspoons lemon zest (or a squeeze of lemon juice)
2 cups water (or chicken stock)
40 g all-purpose flour (1.5 oz)
cornstarch
3 eggs, separated into yolks and whites
4 cups fine breadcrumbs (beschuit) or 4 cups crushed dutch rusks (beschuit)
vegetable oil, to deep-fry

Steps:

  • If using left-over chicken or turkey, chop it finely and set aside. Continue with the recipe from Step 3, using stock to make the sauce rather than water, and add the chicken or turkey to the sauce at Step 6.
  • If using veal or beef, season with salt and pepper to taste.
  • Place a large pan over medium-high heat and melt 2 tablespoons of butter. Add the veal or beef, wine, onion, clove, bay leaves, nutmeg or mace, parsley, thyme, lemon zest or juice and water. (Use chicken stock if you have chosen to use chicken or turkey.) Bring to a boil, then reduce heat and simmer for 45 minutes to an hour. By this time the meat should be tender (or if using poultry, the stock will be bursting with flavor).
  • Strain the stock and reserve, along with the meat. Finely chop or cut the meat into into small pieces.
  • Melt the remaining butter in the pan, stir in the flour and keep stirring for a few minutes on low heat. Don't let it brown. Slowly and gradually add the stock and cook over moderate heat, stirring until the sauce is smooth and thick. Add more flour, or corn starch to thicken the sauce if necessary. Cool slightly and add the 3 egg yolks and mix well (reserve the whites for later).
  • Add the veal, beef, chicken or turkey, mix well and season to taste. The mixture should be thick and stiff by this time.
  • Set the mixture aside to cool thoroughly. When ready, cut or separate the stiff, thick mixture into rolls about 1.5" thick and about 3" long.
  • Spread the crumbs on a clean, dry chopping board. Slightly beat the eggwhites in a deep plate until just incorporated. Roll the croquettes through the breadcrumbs, then through the egg whites and again through the crumbs. (Make sure that the second coating of crumbs is even and thick and no meat mix sticks out, otherwise the croquettes may burst when being deep fried).
  • Deep fry the croquettes in batches of four or five for about 4 minutes, or until they are golden brown. Drain on absorbent paper.
  • Serve hot, with French fries or fresh chunks of bread. The best way to season is to slather with mustard, as the Dutch do!

1 tbsp Olive oil
1/2 cup Onions (minced)
1/4 tsp Ginger (grated)
1/4 tsp Garlic (minced)

1 tbsp Lemon juice
1/2 cup Parsley (chopped)
1/2 lb Boiled potatoes (2 large grated or mashed)
1/2 Breadcrumbs
1/4 cup Parmesan
1 cup Cheddar (grated)
1 tbsp Mustard paste
2 tbsp Parsley (chopped)
1 Egg (large)
1/2 cup All-purpose flour
1/2 cup Breadcrumb
1/2 tsp Salt
1/2 tsp Pepper
8 oz Cheddar cheese (cut into small 2 x 4 cm pieces)

Steps:

  • In a skillet, add the oil and sauté onions until translucent. Then, add the ginger and garlic. Followed by the ground chicken.
  • Sauté until the ground chicken breast is no longer pink, making sure to break it apart so you don't have big lumps. Pro tip - Large lumps will make shaping the croquettes difficult so break as many lumps as possible.
  • Season with salt and pepper. Add the chopped parsley and lemon juice. Cook until all the liquid is absorbed and the chicken is cooked through. Taste and adjust seasoning.Pro tip - Excess liquid will make soggy croquettes and very difficult to hold their shape. So make sure all the liquid is evaporated.
  • Remove from heat and set aside to cool completely. It is better to work with the mixture when cooled.Pro tip - Ensure the chicken does not have large chunks of meat. If necessary, use a fork to break it all into small pieces or give it a quick pulse in the food processor.
  • Mashed potatoes - Use leftover mashed potatoes for this dish. Alternatively, boil two large potatoes until fork tender. Peel and grate it - then, cool completely.
  • In a bowl, add cooled ground chicken, and grated/mashed potatoes. Followed by the cheeses, breadcrumbs, mustard, salt, pepper, and herbs.
  • Combine well so everything is glued to the mashed potatoes. Pro tip - The mashed potato works like glue to hold everything together but do not overmix as it can make the mixture sticky.
  • Take small golf size amounts in your hands. Shape into a ball then rolls into a sausage. Set aside while you make the remaining.Pro tip - Using moist hands dipped in water prevents the mixture from sticking to your hands.
  • Cut the block of cheese into small 2 x 4 cm pieces. You can make them smaller if you prefer to make small-size croquettes.
  • Take small golf size amounts of croquette mixture in your hands. Shape into a ball, flatten it on the palm of your hand. Place a piece of cheese then, bring the sides over the cheese and shape it into a sausage. Set aside while you make the remaining.Pro tip - Using moist hands dipped in water prevents the mixture from sticking to your hands.
  • Coating mixture - Have three bowls or trays at the ready.Bowl one - add the flour - season with salt and pepper.Bowl two - beat the egg, season with salt and pepper.Finally, bowl three - add breadcrumbs, season with salt and pepper.
  • Coat each croquette with the flour mixture. Then, coat with the egg mixture. Finally, generously coat it with breadcrumbs.Pro tip - I use one hand for the flour and breadcrumbs and the other hand for the breadcrumbs to keep it less messy.
  • Coat all the croquettes and set them aside on a baking tray. These can be made up to 2 days ahead of time and stored in the fridge.
  • When ready to serve, heat a few tablespoons of oil in a skillet and shallow fry these turning often until they are crisp and golden brown on all sides.Pro tip - Alternatively, you can deep-fry them in oil until crisp and golden brown. Remove and drain on clean paper towels.
  • Serve along with ketchup and mayo.

2 cups cooked potatoes (boiled) and cooled
2 tablespoon melted butter
1/4 cup milk or chicken stock, warmed
3/4 teaspoon salt
3/4 teaspoon black pepper
2 tablespoon shallots, minced
2 teaspoon parsley, divided
1/2 cup Panko or Gluten Free Panko
1/2 cup unseasoned (gluten free or regular) bread crumbs *See note on how to make gluten free bread crumbs
2 large eggs, divided
1 tablespoon water
1 1/2 cups cooked leftover chicken, chopped small (I recommend roasted chicken. Do not just use boiled chicken as that doesn't have enough flavor)
Olive oil
Pan gravy from roasted chicken for dipping

Steps:

  • In a bowl place the potatoes, butter, milk, salt, pepper, and 1 teaspoon parsley. Mash to desired consistency - I left some chunks. I would not make it super creamy as you want to texture. To the potatoes add the chicken and shallots; stir to combine. Next, add in 1 egg and 1/4 cup unseasoned bread crumbs. Mix to combine. The mixture should be sticky but not runny.
  • Cover and chill for at least 1-2 hours. You want it to be cold so you can form it.
  • When you're ready to bake, preheat the oven to 450F with a rack in the middle. Line a baking pan with parchment paper and lightly spray.
  • In a pie plate beat the remaining egg with 1 tablespoon water. In a second pie plate add in the panko and remaining unseasoned bread crumbs and 1 teaspoon parsley; mix to combine. Make an assembly line starting with the croquette mixture, egg and then breadcrumbs with the baking sheet at the end.
  • Measure 1/4 cup of the mixture and form into croquettes (long cylinders about 2" or you can make into balls).
  • Dip, coating all sides, in the egg mixture. Place in the breadcrumbs and coat evenly. Place on the baking sheet and repeat making the rest of the croquettes. Generously spray (or lightly drizzle) olive oil on the croquettes. Do not soak them but you should be able to see the oil glisten on the breadcrumbs. Bake for 15-20 minutes until golden brown.
  • Place the oven to broil and broil for 2-3 minutes on each side to get super crunchy. *To flip gently use tongs along the long side of the croquettes and flip. Remove from the oven and serve with pan gravy from the leftover roasted chicken as a dipping sauce.

  • Preheat the oven to 180 ° C convection.
  • Halve potato mixture (or divide into thirds) and shape into rolls on a floured surface about 2-3 cm in diameter (approximately 1-11/2 inch). Cut rolls into about 6 cm pieces (approximately 2 1/2 inch). Coat with flour and dip into beaten eggs. Roll in breadcrumbs and arrange on a lined with parhcment paper baking pan. Bake in preheated oven at 180°C (approximately 350°F) for about 20 minutes or until golden brown. Remove from the oven and serve.
