"CHICKEN" MELON CURRY SALAD



Cool off and wind down with this Curried Melon Salad. It's a sweet and savory dish made with melons, Quorn meatless "chicken," and a delicious curry yogurt sauce. Ready in 20 minutes or less!

1 medium honeydew melon
1 green bell pepper (seeded and diced)
3 cups spring mix salad
2 Tbsp sliced almonds
1 Tbsp olive oil (15 mL)
1 12-oz package Quorn Meatless Pieces (frozen, 340 g)
1 tsp smoked paprika
¼ tsp each salt and pepper
2 Tbsp mayonnaise (30 g)
2 Tbsp plain Greek yogurt (30 g)
1 ½ tsp curry powder
1 tsp lemon juice (5 mL)
Salt and pepper (to taste)

Steps:

  • Salad: Cut melon in half and scoop out seeds. Using a small melon scooper or rounded spoon, scoop ball shapes out of the melon, getting as much of the fruit out as possible, but leaving the rind intact. Set melon balls aside. Cut bell pepper and measure out spring mix.
  • "Chicken": Heat oil in a large saute pan over medium heat. Add Quorn Meatless pieces, paprika, salt, and pepper, stirring to evenly coat. Cook for 10 to 12 minutes, or until cooked through and lightly browned.
  • Sauce: Stir together all ingredients, adding salt and pepper to suit your taste.
  • Assemble: Toss to combine the melon balls, bell pepper, spring mix, "chicken", and sauce. Spoon back into hollowed out melon shells, or into individual serving bowls. Top with sliced almonds.

6 cups cubed, cooked chicken meat
2 cups chopped celery
2 cups seedless grapes
1 (8 ounce) can sliced water chestnuts
½ cup sour cream
½ cup plain yogurt
1 ½ teaspoons curry powder
salt and pepper to taste

Steps:

  • Cut melon in half, and remove seeds. With a melon baller, scoop out melon balls; place in a large salad bowl.
  • Add chicken, celery, and grapes to melon. Add water chestnuts if desired.
  • In a small bowl, mix together, sour cream, yogurt, and curry powder. Gently stir into salad. Season with salt and pepper to taste. Serve.

1 1/3 cups finely diced peeled seeded honeydew or other melon
1/4 cup finely chopped fresh cilantro plus 1/4 cup cilantro leaves
1/4 cup finely diced red onion
2 tablespoons fresh lime juice
2 tablespoons olive oil
2 teaspoons finely grated lime peel
1 teaspoon finely chopped seeded serrano chile
Nonstick vegetable oil spray
4 boneless chicken breast halves with skin

Steps:

  • Combine diced melon, 1/4 cup chopped cilantro, finely diced red onion, lime juice, olive oil, grated lime peel, and chopped serrano chile in medium bowl. Toss to blend flavors. Season melon salsa to taste with salt and pepper.
  • Spray grill with nonstick vegetable oil spray; prepare barbecue (medium heat). Sprinkle chicken breasts with salt and pepper. Grill chicken breasts until skin is crisp and brown and chicken is cooked through, about 5 minutes per side.
  • Slice chicken breasts and arrange on plates. Top with melon salsa and cilantro leaves and serve.
