CHICKEN AND HAM CASSEROLE

This dish made good use of my leftovers. Some chicken, ham, noodles and cheese, and you've got dinner. Try adding whatever leftovers you may have in your fridge.

2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
½ cup cooked, cubed chicken breast meat
½ cup cooked and cubed ham
½ cup cooked wide egg noodles
¼ cup chopped celery
¼ teaspoon salt
¼ teaspoon ground black pepper
3 ounces shredded Cheddar cheese
1 teaspoon paprika

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt butter in a large saucepan over low heat. Stir in the flour and heat until bubbly. Slowly add the milk, stirring constantly, until mixture is thickened and smooth.
  • Remove from heat and stir in the chicken, ham, noodles, celery, salt and ground black pepper. Transfer this mixture to a 1 1/2 quart casserole dish.
  • Bake at 400 degrees F (200 degrees C) for 15 minutes. Remove from oven, sprinkle with the cheese and top with paprika, as desired. Return to oven and bake for 5 to 10 minutes, or until cheese is bubbly.

I have seen many recipes for cassoulet made several ways. It is a homecooked French dish that is very hearty. This recipe is simplified from traditional Cassoulet which usually has rabbit or pork with sausage and beans in it. It's basic ingredients simply prepared that taste delicious. I hope you enjoy it.

2 lb chicken pieces (i use 3 thighs, 3 legs and 2 small breasts)
3 Tbsp olive oil, extra virgin (divided)
1 Tbsp italian seasoning
1 1/2 tsp thyme, dried
pinch salt and pepper
pinch red pepper flakes
1 medium onions, yellow, medium
1 medium green pepper
3 medium carrots, chopped
1 can(s) mushroom pieces
2 small tomatoes, diced
1 can(s) stewed tomatoes
1 can(s) cream of chicken soup, fat-free
1 c chardonnay
1/2 c water
2 can(s) great northern beans
1/2 can(s) tomato paste
2 bay leaves

Steps:

  • 1. Preheat multicook pressure cooker using the browning feature. (You can use a dutch oven on your stove top if you prefer) Add 2T olive oil. Meanwhile, clean chicken pieces and drizzle 1T olive oil over the chicken. Season with italian seasoning, thyme, salt and pepper.
  • 2. Place chicken into preheated pressure cooker or large dutch oven with 2T olive oil skin side down (you may remove skin for a healthier version). Brown the seasoned chicken pieces for 5-7 minutes on all sides and remove from the pan.
  • 3. While you are browing chicken pieces dice the onion, bell pepper, carrots and fresh tomatoes. Slowly add the onion, bell pepper and carrots cooking for 2-3 minutes so that the veggies are opaque. Then add the peeled and smashed garlic cloves.
  • 4. Deglaze the pan by adding the chardonnay wine (you may substitued this with low sodium chicken or vegetable stock). Add the remaining ingredients and stir to combine.
  • 5. Reintroduce the browned chicken pieces to the beans, veggies and sauce mixture. Be sure to push the chicken into the sauce. You may also debone the chicken in this step if you like.
  • 6. If you are using a pressure cooker change the setting to 15psi. Secure the lid closed and set the time for 35 minutes.
  • 7. If you are using a dutch oven you can keep the heat on medium low for 1 hour simmering until liquid is somewhat cooked into the beans. You can finish this off in the oven with the lid off for 30 more minutes which will concentrate the flavor and thicken the sauce.
  • 8. Prior to serving this dish you may add add breadcrumbs that I browned on the stovetop with a drizzle of olive oil and butter. This thickens the beans and broth to a stew like consistency.

1 lb dried navy beans, rinsed
4 cups water
4 boneless skinless chicken breast halves, cut into 1 inch pieces
8 ounces cooked ham, cut into 1 inch pieces
3 large carrots, sliced
2 medium onions, coarsely chopped
2 celery ribs, sliced
1/4 cup firmly packed brown sugar
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon pepper
1 (8 ounce) can tomato sauce
2 tablespoons molasses

Steps:

  • In slow cooker, soak beans overnight in 4 cups water.
  • Cover; cook on HIGH for 3 hours.
  • Add remaining ingredients; mix well.
  • Cover; cook on HIGH for an additional 3 to 4 hours or until beans are tender.

CHICKEN AND ANDOUILLE CASSOULET

Cassoulet is one of those great comfort foods that is wonderful anytime, but absolutely perfect on a cold winter evening. It's meant to be warm and rustic, can you can pretty much throw whatever you have into the pot and it will come out tasting good. I made this recipe up tonight on the fly, but it was so good I had to share it. Try it yourself and let me know what you think.

4 slices bacon
1 lb boneless skinless chicken breast, cubed
3 -4 links andouille sausages, diced (I prefer Aidells but any will do)
3 (15 ounce) cans cannellini beans, drained and rinsed (white kidney)
1 yellow onion, diced
2 carrots, peeled and chopped
4 roma tomatoes, diced
10 garlic cloves, finely chopped
1 cup dry white wine
2 -3 cups chicken stock
salt, pepper, italian seasoning, crushed red pepper, and Emirils essence to taste

Steps:

  • Pre-heat your oven to 350 degrees. Fry the bacon in a large stock pot until crispy. Remove and set aside. In a separate pot, bring the chicken stock to a boil. Sauté the onions in the bacon fat for 5 - 7 minutes until translucent. Add the sausage and cook another 10 minutes, scraping the bottom with a metal spatula. Add white wine and garlic, and simmer for 2 minutes. Season chicken with emeril's essence. Add chicken, tomatoes, carrots, beans, crumbled bacon, and other spices and stir. Add boiling chicken stock. The chicken stock should not quite cover the other ingredients, unless you want your cassoulet a little soupy. Cover the pot and put into oven. Bake at 350 for 75 - 90 minutes, stirring every 20 minutes. Leave pot uncovered for the last 20 minutes to help evaporate off some of the excess liquid. 2 1/4 cups dried navy beans, rinsed, soaked overnight and drained
8 cups water
2 teaspoons olive oil
2 cloves garlic, peeled and minced
1 medium onion, peeled and chopped
1 14 1/2-ounce can stewed tomatoes, with their liquid
1 teaspoon chopped fresh thyme
1 1/2 teaspoons salt
Freshly ground pepper to taste
1 teaspoon chopped fresh sage
1 cup white wine
8 smoked ham hocks, meat cut from bones and shredded, bones reserved
3 tablespoons bread crumbs
3 teaspoons butter, cut into small pieces

Steps:

  • Place the beans and the water in a large pot, bring to a boil, reduce heat, cover partly and simmer until tender, about 1 1/2 hours. Drain and set aside. Heat the oil in a large, wide ovenproof pot over medium-low heat. Add the garlic and onions and saute until golden, about 7 minutes.
  • Preheat the oven to 425 degrees. Stir in the tomatoes, thyme, salt and pepper and cook for 5 minutes. Stir in the beans, sage and wine. Add the ham hock bones, cover and cook for 20 minutes. Remove the bones from the pan and stir in the meat. Sprinkle the bread crumbs over the top and dot with butter. Bake for 15 minutes. Divide among 6 plates and serve.

Easy French Cassoulet With Wine, Beans, Sausage, Ham and Herbs image

This cassoulet is a wonderful and EASY one-pan variation of the French classic! Great, warming comfort food that takes the chill off in the colder months. Very hearty and welcoming to come home to after a winter's walk or some sledding fun! Serve the steaming cassoulet in bowls accompanied with a baguette or corn bread, a tossed salad, and a nice glass of cider or wine. ENJOY! Notes: Chopped kielbasa will work in place of the bulk pork sausage, and ground allspice in place of the cloves. Also dry white vermouth in place of dry white wine, is good. Can be baked in a 2-quart size casserole dish (deep rather than shallow), if you do not have a Dutch oven.

1/2 lb bulk pork sausage or 1/2 lb chopped kielbasa
1 small onions, sliced or 1/2 cup onion
1 carrot, thinly sliced
1 stalk celery & leaves, sliced
1 garlic clove, minced
1 1/2 cups cubed cooked ham
2 tablespoons snipped fresh parsley
1 teaspoon dried thyme
1 pinch rosemary
1 bay leaf
2 (15 ounce) cans white beans (undrained)
1/4 cup dry white wine or 1/4 cup dry white vermouth
1 dash ground cloves or 1 dash allspice

Steps:

  • In a large oven-proof skillet such as a Le Creuset or Dutch oven cook sausage, onion, and garlic over medium-low heat until meat is lightly browned and onion is tender; drain off fat.
  • Add ham, parsley, and bay leaf; mix well. Stir in undrained beans, wine, and cloves.
  • Bake, covered, at 325°F for 45 minutes.
  • Uncover and bake 40 to 45 minutes longer, stirring occasionally. Remove bay leaf.
  • Serve in bowls with butter and a baguette or hot corn bread, if desired.
  • Makes 6 servings.
