- In a large skillet coated with cooking spray, cook sausage over medium heat until heated through., Meanwhile, in a small bowl, combine the sour cream, cucumber, vinegar, oil and garlic powder. Serve chicken sausage on pita breads with tomato, onion and cucumber sauce.

ROASTED GARLIC AND FETA CHICKEN SAUSAGE
Salty feta and sweet roasted garlic meld with the chicken and a touch lemon and vinegar to create a subtle, but delicious Greek-influenced sausage.

Steps:
- Preheat oven to 350 degrees. Cut top quarters off of heads of garlic. Place garlic cloves, cut side down, in center of a sheet of aluminum foil and drizzle with olive oil. Seal foil and place directly on oven rack. Cook until cloves are browned and very soft, about 20 minutes. Remove from the oven, let cool for 10 minutes, then squeeze cloves out of the skin into a small bowl.
- Combine garlic, chicken, 1/2 of the feta cheese, shallots, oregano, salt, and pepper in a large bowl. Chill until ready to grind.
- Grind the mixture through a meat grinder, fitted with small die, into a bowl set in ice.
- Using paddle attachment of a standing mixer, mix on low speed for 1 minute. Add remaining feta, vinegar, lemon juice, increase speed to medium, and mix until liquid is incorporated, about 1 minute more.
- Form a small sausage patty; place rest of sausage mixture in refrigerator. Cook patty in a small frying pan over medium-high heat until cooked through. Taste and adjust seasonings of sausage if necessary.
- Stuff sausage into hog casings and twist into 6-inch links. Refrigerate until ready to cook.
- Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Grill over medium-high direct heat until sausage registers 160 degrees when an instant read thermometer is inserted in middle of link. Remove from grill, let rest for 5 minutes, and serve.

MEDITERRANEAN PASTA WITH CHICKEN SAUSAGE
Looking for an easy weeknight dinner that's packed with flavor? This Mediterranean pasta with chicken sausage, broccoli, olives, and feta is an easy-to-make meal that the whole family will love!

- Bring a large pot of salted water to a boil and cook pasta, until al dente. Reserve 1/3 cup pasta water before draining pasta and setting aside.
- Add 1 Tbsp. olive oil to a large skillet over medium heat (make sure skillet is large as you'll be adding all ingredients to it!). Once hot, add sliced chicken sausage and cook for about 5 minutes, until sausage is cooked through and browning around edges. Remove sausage to separate bowl or plate and set aside.
- Add remaining 1 Tbsp olive oil to skillet, along with broccoli and garlic. Cook until broccoli is bright green, about 5 minutes.
- With heat on low, add chicken sausage back to skillet, along with sliced olives, cooked pasta, feta, lemon juice, salt, pepper, and red pepper flakes. Add half the reserved pasta water. Toss well to combine and warm. Add remaining pasta water if desired.
MEDITERRANEAN SAUSAGE PASTA RECIPE
An easy Mediterranean Sausage Pasta Recipe featuring chicken sausage, feta, olives, spinach and tomato in a lemon herb oil.

- Place large pot of water on to boil. You will cook the pasta while preparing the rest.
- Slice the chicken sausages into roughly 1/2 inch pieces.
- Place large deep skillet or dutch oven over medium-high heat. Add the oil, sausages, garlic and oregano. Toss and saute for a minute.
- Add the zest of 1/2 a lemon. Stir it in.
- Now toss in the olives and tomatoes. Stir occasionally while cooking, until the tomatoes are starting to blister and a couple have split. The sausage should be browned by this point as well.
- Dump in the spinach. Mix in. Turn off the stove burner.
- Add the drained pasta and toss well to coat.
- Transfer from pan to serving platter and sprinkle with feta. Serve with fresh ground pepper and wedges of lemon.

- Combine the chicken, pork fatback, coriander, garlic, mint, lemon zest and 2 tablespoons salt in a large bowl. Transfer to a large plastic zip-top bag and refrigerate overnight.
- At least 30 minutes before grinding the meat, place all of your tools (including the meat grinder parts, stand mixer bowl, stand mixer paddle attachment and sausage stuffer parts) in the freezer to chill.
- Using your meat grinder, grind the marinated meat mixture through the small die plate into the chilled bowl of the stand mixer. Refrigerate at least 30 minutes, then return the mixture to the mixer. Add the feta, olive oil and wine and beat on medium speed using the chilled paddle attachment until combined. Refrigerate until ready to use.
- Stuff the sausages (see Cook's Note) and, for best results, refrigerate overnight.
- Before cooking, pierce each sausage several times with a pin. Grill over medium heat until the center registers 160 degrees F, 10 to 12 minutes. (You can also pan-fry or broil the sausages.) Drizzle the tomatoes with olive oil, sprinkle with parsley and season with salt and pepper. Serve the sausages with the tomato salad.
