CHICKEN PENNE ALLA VODKA
Chicken Penne alla Vodka is a 30 minute, restaurant quality pasta entree with lean chicken breast and penne pasta in a creamy tomato vodka sauce. Make chicken alla vodka for date night OR any weeknight and win hearts.

Steps:
- Follow package instructions to cook PENNE PASTA with SALT added to the water.
- Drain pasta, reserving 1/2 cup cooking liquid. Briefly rinse the pasta with cool water to stop it cooking, and set aside.
- Flatten CHICKEN BREAST to 1/2" thickness with a flat-sided meat tenderizer. Season with SALT and PEPPER.
- Heat OLIVE OIL in skillet over med-high heat. Add CHICKEN BREAST and sauté about 3-4 minutes each side until chicken is cooked through.
- Transfer chicken to a cutting board, cover, and rest.
- Continue heating skillet on med-high heat and add a splash of OLIVE OIL, if needed.
- Add ONION and GARLIC. Sauté until the onion is tender and slightly browned.
- Add VODKA and scrape the pan to release any browned bits to deglaze.
- Stir in CRUSHED TOMATOES, HEAVY CREAM, OREGANO, and CRUSHED RED PEPPER.
- Bring everything to a gentle boil. Then reduce heat to med-low and simmer about 10 minutes to thicken sauce, stirring as needed. This also cooks off the alcohol.
- Add COOKED PENNE to vodka sauce and allow to heat through, stirring as needed. Add splashes of the reserved pasta water as needed to adjust sauce consistency.
- Add PARMESAN CHEESE to the sauce, continue heating to incorporate, stirring as needed.
- Slice the cooked chicken into 1/2" thick pieces and add to the vodka sauce along with the COOKED CHICKEN BREAST.
- Stir everything together. Add SALT and PEPPER to taste.
- Serve warm garnished with chopped fresh OREGANO or parsley.
- To store, allow chicken pasta to cool completely and refrigerate in an airtight container up to 5 days.

- Cook and stir drained mushrooms and green pepper in butter or margarine over medium heat for 5 minutes. Remove from heat.

Chicken à la King is one of my favorite classic comfort foods. This recipe is easy to adapt--you can make it thicker or thinner by changing the amount of roux and having a little extra stock on hand. Usually I make this with leftovers from a large roasted chicken. Serve over pasta, toast, rice, or mashed potatoes.

- Melt butter in a large skillet over medium-high heat. Add mushrooms and salt. Saute until mushrooms release their moisture. Continue cooking until moisture evaporates and mushrooms begin to brown, 8 to 10 minutes. Add shallots; cook and stir just until shallots soften, 3 or 4 minutes.
- Reduce heat to medium. Stir in flour to coat the mushrooms; cook until flour begins to turn golden, about 5 minutes, to form roux. Add peppers; cook and stir about 1 minute. Pour in sherry wine; allow to sizzle about 30 seconds. Stir in stock. Raise heat to medium-high and bring to a simmer. When it starts to bubble, reduce heat to medium-low and cook until slightly thickened, 10 to 15 minutes stirring occasionally. Add nutmeg and cayenne pepper.
- Stir in thyme, parsley, cream, and chicken. Reduce heat to low and cook until chicken is heated through, about 5 minutes. Check seasonings and adjust as needed. Top each serving with some chopped fresh chives.

CHICKEN ALA BOOZE
Have had this recipe for years. My daughter who was a pre-teen at the time gave the chicken it's name. It's real name "Chicken Ala Sauterne". The marinate time (2hrs) isn't in the prep & cook time.

- Marinate chicken in wine for 2 hours.
- Pour wine from chicken; add onion, parsley & butter to wine.
- Pepper (salt if you are using) chicken & sprinkle with paprika.
- Place skin down in casserole dish.
- Pour wine mixture over chicken.
- Bake 25 minutes at 450°F.
- Turn chicken; add mushrooms & bake for 25 minutes or until tender.
