1 (16 ounce) package light brown sugar
2 cups baking mix (such as Bisquick ®)
4 eggs
1 cup chopped pecans
2 tablespoons melted margarine, cooled
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix brown sugar, baking mix, eggs, pecans, margarine, and vanilla extract together in a bowl; spread into the prepared baking dish.
  • Bake in the preheated oven until brown and bubbling, 25 to 30 minutes. Cut into 2-inch squares.

1/2 cup water
1 can (15 1/2 oz.) crushed pineapple
5 Tbsp tapioca
1 Tbsp butter
4 cups flour
1/2 lb butter
Dash salt
3/4 cup sugar
5 tsp baking powder
4 egg yolks (separated)
1/2 pt sour cream (8 oz.)
3/4 cup chopped walnuts (fine)
1/2 cup sugar
Mix together

Steps:

  • Mix water, crushed pineapple, tapioca and 1 Tbsp. butter and cook over medium heat until thickened. Let cool.
  • Cut 1/2 lb. butter into flour with pastry cutter until size of pea. Add salt, sugar, baking powder, egg yolks and sour cream. Mix until sticky ball forms. Split in half with one ball a little larger than the other.
  • Pat larger half in 15 1/2 x 10 1/2 pan with sides (1 inch) ungreased pan. Spread pineapple mixture over dough layer. Roll second half of dough between 2 sheets of wax paper (cut the size of your pan). Remove top sheet of wax paper and lay dough on top of pineapple mixture and pinch sides. Sprinkle top with walnut and sugar mixture.
  • Bake at 350 degrees F for 40-45 minutes.

My grandmother always kept this cake in the freezer for unexpected company. A nice change of dessert from the usual bar or square recipe. Garnish with icing sugar sprinkled over the top if desired.

2 cups all-purpose flour
½ cup white sugar
2 teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter
¼ cup milk
1 egg
1 teaspoon vanilla extract
¼ cup butter
2 (8 ounce) cans crushed pineapple, drained and juice reserved
2 tablespoons white sugar
¼ cup cornstarch
½ cup all-purpose flour
¼ cup butter
1 teaspoon vanilla extract
⅓ cup white sugar

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl. Cut in butter using a pastry cutter or your hands until coarse crumbs form.
  • Whisk milk, egg, and vanilla extract together in a small bowl. Add to flour mixture and knead until just combined, adding a little more flour if too wet or a little more milk if too dry. Divide the dough into thirds; 2/3 will be for the bottom, save 1/3 for the top.
  • Roll 2/3 the dough out onto a lightly floured surface into an 11x15-inch rectangle. Place dough into the bottom of a 9x13-inch baking pan, making sure it comes at least halfway up the sides.
  • Combine pineapple and sugar in a small saucepan and bring to a boil over medium heat, about 5 minutes. Meanwhile, pour reserved pineapple juice into a bowl and add cornstarch; stir until dissolved. Add to the saucepan and stir until thickened, about 5 minutes more. Remove from heat and let filling cool in the refrigerator, about 15 minutes.
  • Scrape filling onto the bottom dough in the baking pan and smooth out.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Roll remaining 1/3 dough out onto a lightly floured surface into a 9x13-inch rectangle. Roll the dough onto the rolling pin and unroll on top of the pineapple filling, making sure edges of the dough reach the edges of the pan.
  • Combine flour and sugar in a small bowl. Add vanilla extract and cut in butter until coarse crumbs form. Sprinkle streusel topping over dough.
  • Bake in the preheated oven for 45 minutes. Remove from oven and let cool on a rack. Cut into 24 squares.

These squares are so popular in our N. E. Pa. area and are often requested for bake sales. At times more flour, little at a time, may have to be added to make it easier to roll without the dough falling apart. It is a very forgiving dough, though. If you seem to have extra filling left over it may be used to make small tarts using pie crust dough.

3 (20 ounce) cans crushed pineapple
1 2/3 cups granulated sugar
3 teaspoons minute tapioca
5 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon salt
3/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
2 whole eggs
1 cup butter or 1 cup margarine
3/4 cup milk (start with 1/2 cup milk)

Steps:

  • Place filling ingredients in a large saucepot. Allow to reach boiling point. Reduce heat and let simmer 5 minutes, mixing often. Remove from heat and let cool completely. May be done earlier in the day or day before.
  • Dough:.
  • In a large bowl work the flour and the butter (or margarine) as you would for pie crust.
  • Add the sugar, salt, baking powder, baking soda and mix well.
  • Add vanilla, eggs and milk, adding a little at a time until dough comes together. Depending on the flour you may have to add a little more.
  • Dough should be pliable enough to be able to roll out on a floured surface. Divide into 2 pieces.
  • Take one piece and roll out dusting with sufficient flour to prevent sticking. Using a 12x17 cookie sheet with sides, place dough into ungreased pan allowing the sides to come up the sides. Don't cut off excess dough.
  • Pour in filling and even out making sure the corners are evenly filled inches (Filling recipe follows).
  • Again, flour surface and roll out other piece of dough and place on top.
  • Press dough around the edges to seal in pineapple filling. Then cut around to remove excess dough. Brush top with well beaten egg. Bake 350 deg. for 45 minutes.
  • Let cool. Cut into desired squares. May be dusted with confectioners sugar.

1 1/2 cups all-purpose flour
3 tablespoons icing sugar
3/4 cup butter
1 cup crushed pineapple, with juice
4 ounces maraschino cherries, drained and cut up fine
1/2 cup sugar
2 tablespoons cornstarch, dissolved in a little cool water
1/2 cup desiccated coconut, fine
1 teaspoon almond extract
3 egg whites, beaten stiff
5 tablespoons white sugar

Steps:

  • Mix flour, icing sugar and butter with hands and press into an 8"square pan.
  • Bake for 10 to 12 minutes in a 350 degree oven.
  • Filling: Put pineapple, its juice, cherries, and white sugar in top of double boiler and when hot add cornstarch mixture.
  • Cook until thick and clear, stirring continuously. Remove from heat.

Your man will love these! Great for gatherings like football parties, picnics, etc. It's worth repeating: Do Not use the yellow cake mix with pudding, it won't work in this recipe. By all means use your food processor to make this easy. BTW, 16 ounces of powdered sugar equals 2 3/4 cups, for those who buy in bulk.

1 (18 1/4 ounce) classic yellow cake mix (Duncan Hines works best do NOT use the mix with pudding)
1 egg
1/2 cup real butter, softened (no substitute)
1 (8 ounce) cream cheese, softened
2 eggs
1 (16 ounce) box confectioners' sugar (can reserve 3-4 tablespoons for dusting)

Steps:

  • Preheat oven to 300 degrees. Prepare a 9"x13" baking pan by greasing with shortening and dusting with flour; set aside.
  • Place the cake mix, egg and softened stick of butter in a food processor. Process until thoroughly mixed, about a minute. Mixture will be crumbly then will form into a dough.
  • Scoop mixture into the prepared pan and press evenly. (I place a piece of plastic wrap over and press with my hand.).
  • No need to clean the processor's bowl. To the emptied food processor bowl, place the softened cream cheese, 2 eggs and confections' sugar (hold out a couple of tablespoons if using for dusting). Start pulsing then process until smooth; about a minute. Pour mixture over the cake layer, spreading evenly.
  • Bake 300 degress for approximatley 1 hour or until golden brown. Cool completely. Dust (best done using a sieve) with remaining confections sugar, if desired. Cut into squares.
