- In a large bowl or the bowl of an electric mixer, place the flour, salt, sugar and yeast. Mix to just combine. Add the water and mix well, adding more flour, as needed, a bit at a time to form a soft, smooth dough that clears the sides and bottom of the bowl. Knead the dough, by hand or machine, for about 5 minutes, until it is soft, smooth and quite slack. The goal is to get a really soft dough that isn’t overly sticky. Lightly flour the dough and place it in a plastic bag; close the bag, leaving room for the dough to expand, and let it rest for 30 minutes or up to 60 minutes (see pictures below).
- Transfer the dough to a lightly greased work surface, and divide it into eight equal pieces (about 70g, or 2 1/2 ounces, each). Allow the pieces to rest, uncovered, for 5 minutes. While the dough is resting, combine the 1/2 cup warm water and the baking soda, and place it in a shallow bowl or pie plate. Make sure the baking soda is thoroughly dissolved; if it isn’t, it will make your pretzels splotchy. Sometimes I have a hard time getting the baking soda completely dissolved, so I just lightly stir up the mixture right before adding each pretzel.
- Roll each piece of dough into a long, thin rope (anywhere from 14 to 22 inches long), and twist each rope into a pretzel. Dip each pretzel in the baking soda wash (this will give the pretzels a nice, golden-brown color), and place them on the baking sheets. Sprinkle them lightly with coarse, kosher, or pretzel salt. Allow them to rest, uncovered, for 10 minutes.

- Combine first 4 ingredients in large bowl, mixing it in a little. Let sit until mixture foams. Add flour and butter. Mix until combined, by hand or stand mixer.
- Knead until dough is smooth and no longer sticks to bowl (about 5 min). Put dough into well oiled bowl and turn dough so it is oiled on all surface areas.
- Cover with damp towel and set in warm place for 1 hour, or until doubled in size. The actual time it takes to double depends, of course, on the temperature. If the room is cool, I set my dough in the oven, with only the light turned on. If you do that, just make sure you remove the dough before preheating oven.

- Combine yeast and sugar in warm milk, stir to dissolve yeast and let sit for 5-10 minutes until yeast is foamy.
- In a large bowl, combine flour and salt. Make a small well in the center of the flour mixture, add active yeast mixture and light beer or water. Stir until a shaggy dough forms, then pour onto a lightly floured workspace and knead for 5 minutes until a smooth dough forms. Add softened butter, and and knead for an additional 5 minutes, or until the butter is completely incorporated. The dough should be kneaded for a total of 10 minutes, but up to 15, until a smooth dough has formed. Lightly grease your bowl and put the kneaded dough inside. Cover, and let rise until doubled in size, 45-60 minutes.
- While the dough is rising make the baking soda solution. In a tall sauce pot bring 2 cups of water to a boil. Turn off the heat and pour in 3 tablespoons of baking soda, the water will bubble and boil violently when baking soda is added, so ensure the pot is tall. Set solution aside to cool. Prepare two baking sheets with the covering of your choice, parchment paper, foil or a silicon mat.
- Punch down dough and divide into 8 equal pieces, use a food scale if you have one, 80-85 grams each. On a clean table, roll out each piece into a rope anywhere from 24-30” long, the thicker your rope the thicker your pretzel will be. For a more German style pretzel, taper the ends and leave the middle thicker. If your ropes resist being rolled out, cover, and let your dough pieces rest for 5-10 minutes. For pretzel sticks, roll ropes into 14” lengths then cut into two 7” pieces.
