Steps:
- Preheat oven to 350°. Pour butter into a 13x9-in. baking pan. In a large bowl, combine the next 6 ingredients; mix well. Stir in pecans. Spread over butter. , Bake 30-35 minutes. Remove from oven. If desired, immediately dust with confectioners' sugar. Cool before cutting.

- 1. PREHEAT; Oven to 350 degrees F. COAT: 9x13x2-inch baking pan with nonstick cooking spray.
- 2. IN: Large mixing bowl, combine cake mix, melted butter and 1 egg, mixing until stiff dough forms. PRESS: Mixture evenly in bottom of prepared pan. BAKE: Crust 15 minutes or until light brown.
- 3. IN: Large mixing bowl, combine remaining 2 eggs, corn syrup, brown sugar, egg white, and vanilla, mixing well. STIR: In pecans. POUR: Evenly over baked crust and return to oven 20 minutes or until filling is set. COOL: Cut, serve and enjoy! * Top with a dollop of fat-free whipped topping.
CHEWY CARAMEL PECAN BARS
Steps:
- Preheat oven to 350°F and butter and flour a 13- by 9- by 2-inch baking pan, knocking out excess.
- Beat together butter and brown sugar in a large bowl with an electric mixer until light and fluffy. Beat in 1 tablespoon vanilla and eggs. Sift in flour with salt and baking powder and beat until just blended.
- Spoon batter into pan, spreading it evenly, and bake in middle of oven until it pulls away slightly from sides of pan and a toothpick inserted in center comes out with crumbs adhering, 20 to 30 minutes. Cool base completely in pan on a rack.
- Bring granulated sugar, corn syrup, a pinch of salt, and water to a boil in a 2-quart heavy saucepan over moderate heat, stirring constantly until sugar is dissolved. Continue to boil mixture, without stirring, until it turns a golden caramel. Remove pan from heat and carefully add cream and remaining 1/2 tablespoon vanilla (mixture will bubble up and steam). Return pan to moderate heat and cook, stirring until smooth. Stir in pecans and immediately pour mixture over base, tilting baking pan and spreading evenly.
- Cool mixture completely in pan on rack and cut into bars.
AMY'S CHEWY COCONUT BARS (DIABETIC)
I was looking for a good bar cookie to add to my cookie tray that was suitable for Redneck Epicurean who was diabetic. We were partners in a holiday cookie swap and I was in awe of her cheerfulness even when she was in tremendous pain. She loved them and in her honor I am renaming this bar for her. Combining coconuts and walnuts with a faint hint of maple really appealed to me so I decided to give it a try as well as posting here for others as well as for future reference. According to the source this bar has 126 cal., 2 g pro., 10 g carbo., 9 g fat, 27 mg chol., 141 mg sodium.

- Preheat oven 350 degrees.
- Using a mixer, beat eggs, Splenda and maple flavoring in medium bowl. Blend in in margarine and vanilla.
- Combine flour, baking powder and salt in small bowl. Stir into egg mixture. Fold in coconut, walnuts, and raisins.
- Spread batter evenly in greased 8-inch square baking pan.
- Bake until browned and toothpick inserted in center comes out clean, about 20 minutes. Cool in pan on wire rack.
- Cut into squares.

But these pecan bars will tempt you and "hit the spot," in addition to making an incredible snack-pack treat when you're on the go. Scrumptious brown sugar and chocolate are ooey, gooey, and satisfying, and they're the perfect reward for a day of hard work.

- Preheat the oven to 350 degrees F.
- Line a 9-by-13-inch baking pan with foil, leaving 2 inches of overhang to use as handles to remove the bars at the end of baking.
- Whisk together the flour, salt, and baking powder in a small bowl. Cream together the butter and light-brown sugar, using a hand mixer, in a separate, large bowl, until light and fluffy. Beat in the vanilla. Gradually pour in the dry mixture, and beat until the dough looks like coarse, pea-sized lumps. Use your hands to form the dough into a ball, then transfer it to your prepared baking pan and press down evenly to fill the pan. Bake for 20 minutes, or until lightly golden.
- To make the filling: Combine the brown sugar, corn syrup, flour, bourbon, vanilla, salt, eggs, pecans, and chocolate chips in a large bowl. Remove the hot half-baked dough from the oven, and spread the filling over the crust. Return the pan to the oven, and bake for another 25 minutes, or until the top is puffed and brown and cracks begin to form (like a pecan-pie topping). Let cool for 45 minutes before slicing into squares.

- Note: Toasting the pecans, cooking the caramel and preparing the crust can all be done simultaneously. This dessert can be prepared in 30 minutes.
- Preheat oven to 350 and toast the pecans for 8-12 minutes until they are lightly browned. Let cool completely. Chop and place into a medium bowl.
- Spray a 9x9 inch square pan with baking spray and cut a piece of parchment long enough to fit the bottom exactly but hang over two opposite sides.
- Prepare the Caramel: Measure the first 4 ingredients together in a small pot or saucepan and whisk over medium heat until combined. Bring it to a boil. Watch the heat carefully and turn it down just as the caramel mixture begins to crawl up the sides of the pot. You want the mixture boiling enough that it will get thick, but not so much that it will boil over and make a mess of the stove. Just watch it for a minute and adjust the heat up and down until you find the sweet spot. Remember, it needs to be simmering pretty quickly, but not moving up the sides of the pot. Let the mixture cook for 20 minutes. Take the low carb caramel off of the heat and whisk in the 2 ounces of salted butter, sifted powdered sweetener, stevia glycerite, Brandy and vanilla until incorporated.
