CHEWY MAPLE COOKIES

My husband, Bob, and I have a small sugaring operation with Bob's father. I love to put some of our syrup to use in these golden cookies. -Reba Legrand, Jericho, Vermont

Number Of Ingredients 9

1/2 cup shortening
1 cup packed brown sugar
1 large egg
1/2 cup maple syrup
1/2 teaspoon vanilla extract or maple flavoring
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup sweetened shredded coconut

Steps:

  • In a bowl, cream shortening and brown sugar until fluffy. Beat in the egg, syrup and vanilla until well mixed. Combine flour, baking powder and salt; add to the creamed mixture. Stir in coconut. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 12-15 minutes or until lightly browned.

Chewy Marbled Meringues image

Cut from an old magazine ages ago - the picture of them is very pretty and I thought they would be good for a childrens party.

Yield 20-25 meringues

Number Of Ingredients 4

2 egg whites
1 pinch salt
1/2 cup caster sugar
2 food coloring, of your choice

Steps:

  • Preheat oven to 120C.
  • Line 2 baking trays with baking paper.
  • Using electric beater whisk egg whites and salt till soft peaks form.
  • Gradually add sugar, a spoonful at a time.
  • Whisk between each addition until combined.
  • Continue to whisk for 2 minutes until thick and glossy and all sugar dissolved.
  • Divide mix i half.
  • Sprinkle 3 or 4 drops food colouring into one batch.
  • Fold through the mix with metal spoon until colouring is just streaked through mix.
  • Repeat with second batch and second colour.
  • Use 2 teaspoons to spoon mix onto tray to form meringues.
  • Place on oven, reduce temp to 90 C, bake for 1 hour.
  • Turn off oven and allow meringues to cool in oven.

Dough #1
1 1/2 cups flour
1/2 cup unsweetened cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or margarine, softened
1/2 cup each sugar and packed brown sugar
1 egg large
1 teaspoon vanilla extract
Dough #2
1 cup pecans or walnuts, coarsely chopped
2 tablespoons butter or margarine
3/4 cup oats old-fashioned or quick-cooking
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup each sugar and packed brown sugar
1 cup vegetable oil
2 eggs large
1 teaspoon vanilla extract
2 cups corn flakes crushed
6 ounces semi-sweet chocolate chips (1 cup)
1/2 cup coconut flaked

Steps:

  • 1. To make Dough #1, mix flour, cocoa, baking soda, and salt. Beat butter, sugar, and brown sugar in a medium bowl with electric mixer until fluffy. Beat in egg and vanilla. On low speed, gradually beat in flour mixture. Chill 1 hour.2. To toast nuts for Dough #2, heat oven to 400°. Place nuts and butter in a shallow baking pan or pie plate. Bake 7 to 10 minutes until lightly toasted, stirring frequently (watch carefully for even browning). Cool.3. To make Dough #2, place oats in a blender or food processor. Cover and blend or process until like coarse flour. Mix oats, flour, baking soda, and salt. Beat sugar, brown sugar, and oil in a large bowl with electric mixer until well blended. Beat in eggs and vanilla. On low speed, gradually beat in oat mixture. Stir in toasted nuts, cornflakes, chocolate chips, and coconut. Chill 1 hour.4. Heat oven to 350°. Grease baking sheets.5. To assemble cookies, flatten a heaping teaspoonful of Dough #2 with your hand and top with a teaspoonful of Dough #1. Bring the sides of Dough #2 over Dough #1 and form into a ball, pinching to seal and moistening fingers as needed to prevent sticking (each ball will look a little different). Place about 2 inches apart on prepared baking sheets. Bake 12 to 15 minutes until golden brown. Cool on wire racks.

Just simply delicious and very easy. You can substitute butterscotch chips or vanilla chips or white chocolate chips for the chocolate chips.

1 cup butter
1 cup white sugar
24 saltine crackers
3 cups semisweet chocolate chips
1 cup finely chopped walnuts

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a 9x13 inch pan with aluminum foil and grease the foil.
  • In a small saucepan, over medium heat, combine the butter and sugar. Simmer for 3 minutes, stirring occasionally, until sugar is dissolved. Line the prepared pan with the saltine crackers. Pour the hot sugar mixture evenly over the crackers.
  • Bake for 5 minutes in the preheated oven. Remove from the oven and quickly sprinkle the chocolate chips over the sugar layer. Return to the oven for just one minute. Then use a spatula to smooth out the melted chocolate chips. Sprinkle the nuts over the chocolate layer. Refrigerate overnight then remove from the foil and break into small pieces.
