BROWN BUTTER TOFFEE COOKIES

Brown Butter Toffee Cookies image

With crisp, caramelized edges and rich, chewy centers, these Toffee Cookies are irresistible! Made with nutty brown butter and filled with chocolate covered toffee bits.

Provided by Kelly

Categories     Dessert

Time 3h30m

Number Of Ingredients 10

1 cup (227g) unsalted butter
2 cups plus 2 tablespoons (287g) all-purpose flour ( (dip and sweep method))
2 tablespoons (14g) cornstarch
1 teaspoon baking soda
1 teaspoon salt
1/2 cup (99g) granulated sugar
1 cup (198g) packed brown sugar
2 large eggs (at room temperature)
2 teaspoons vanilla
8 oz (227g) chocolate covered toffee bits (I used Heath Milk Chocolate Toffee Bits)

Steps:

  • Brown the butter: Heat the butter in a light colored skillet over medium-high heat. It will come to a boil. Continue cooking, stirring occasionally, until the solid particles at the bottom turn golden brown. Keep an eye on it carefully towards the end, it can burn quickly. Immediately pour into a large mixing bowl to stop the browning. Let cool about 10 minutes so the sugars don't melt when mixed into it.
  • Whisk together the flour, cornstarch, baking soda, and salt in a bowl.
  • Whisk sugars into cooled browned butter. Whisk in vanilla and eggs until thoroughly combined.
  • Pour dry ingredients into bowl and stir until no streaks of flour remain.
  • Stir in toffee bits.
  • Cover with plastic wrap, pressing the plastic down on the surface of the dough. Chill for at least 3 hours and up to 3 days. If you chill longer than 3 hours, let dough sit at room temperature for about 30 minutes so the dough is easier to scoop.

RECIPE: HEATH TOFFEE COOKIES

Recipe: Heath Toffee Cookies image

These Heath Toffee Cookies are soft and chewy with a delicious buttery, burnt caramel flavor. They are an easy, must-try alternative to regular chocolate chip cookies.

Provided by The Carefree Kitchen

Categories     Dessert

Time 27m

Number Of Ingredients 10

3 cups All-Purpose Flour
1 tsp Baking Soda
1/2 tsp Salt
1 cup Butter (room temperature)
1 cup Sugar
1 cup Light Brown Sugar
2 tsp Vanilla Extract
2 large Eggs
2 cups Chocolate Chips (mini or chopped)
1 8-oz bag Heath Toffee Bits

Steps:

  • Preheat oven to 325 degrees.
  • In a medium bowl, combine the flour, baking soda and salt. Whisk until ingredients are well combined, then set aside.
  • In a large bowl with a spatula, or a stand mixer with the paddle attachment, add the butter, sugar, brown sugar, and vanilla and cream together until light and fluffy, about 3-4 minutes.
  • Add the eggs one at a time, mixing them in after each addition. You may need to stop and scrape the bottom and sides of the bowl to make sure you combine everything.
  • Add the flour mixture and mix on low until just combined, then add the chocolate chips and all but 1/2 cup of the toffee bits. Mix gently by hand using a rubber spatula, making sure to scrape the bottoms and sides of the bowl and combine all ingredients well.
  • Using a small ice cream scoop, or a spoon, scoop and roll dough into 1 1/4" balls. Line them up a couple inches apart on a baking sheet lined with parchment paper or a Silpat. Use the palm of your hand to press the balls down down so the dough ball is about 3/4" thick.
  • Bake for 10-12 minutes, or until the edges begin to turn lightly golden brown. Once baked, remove from the oven and sprinkle the reserved Toffee Bits on top of the cookies.
  • Let the cookies cool on the baking sheet for a couple minutes before moving them to a wire rack to cool completely. Enjoy!

THE BEST OATMEAL COOKIE BARS

The Best Oatmeal Cookie Bars image

These are the BEST Oatmeal Cookie Bars you'll ever bake! Soft, chewy, and loaded with rolled oats and chocolate, this is a great recipe the whole family will love! Super easy and no mixer required!

Provided by Ashley Manila

Categories     Dessert

Time 2h1m

Number Of Ingredients 13

2 sticks (8 ounces, 1 cup) unsalted butter, melted
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs plus 1 egg yolk, at room temperature
2 tablespoons milk
1 tablespoon vanilla extract
1 and 2/3 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups rolled oats
1 and 1/4 cups chopped dark chocolate OR your mix-in of choice (see post for ideas!)
1 teaspoon flaky sea salt, optional

Steps:

  • Preheat oven to 350 degrees (F). Line an 9x13-inch baking pan with parchment paper or aluminum foil. Spray lightly with non-stick spray and set aside.
  • In a saucepan over medium heat, melt the butter, then continue to cook it, stirring occasionally, until golden brown. Keep an eye here, you don't want burnt butter! Remove from heat and scrape the butter into a large heat proof mixing bowl.
  • Whisk in both sugars and mix until well combined. Stir in the vanilla. Then add in the eggs and egg yolk, beating until combined. Stir in the milk.
  • Using a rubber spatula, add in the flour, baking soda, salt, cinnamon, and rolled oats, mixing until just combined. Finally, fold in the chocolate chunks. Scrape the batter into the prepared pan.
  • Bake for 24 to 30 minutes, or until the edges are firm and golden. Press extra chocolate chunks on top of the warm bars, if desired.
  • Cool in pan for at least 1 hour before cutting. Sprinkle with flaky sea salt before serving, if desired.

  • Preheat the oven to 350°F (177°C). Line the bottom and sides of a 9-inch square baking pan with aluminum foil or parchment, leaving an overhang on all sides to easily lift the bars out of the pan when cool. Set aside.
  • In a medium bowl, whisk the melted butter, brown sugar, and granulated sugar together until no brown sugar lumps remain. Whisk in the egg, then the egg yolk. Finally, whisk in the vanilla extract. The mixture will be thick. Pour the wet ingredients into the dry ingredients and mix together until combined. The dough will be very soft, yet thick. Fold in the chocolate chips. The chips may not stick to the dough because of the melted butter, but do your best to combine them.
  • Transfer dough to the prepared baking pan and press/smooth into an even layer. Sprinkle the top with sea salt if desired. Also, I like to press a few more chocolate chips on top of the dough before baking (I do this just for looks!). Bake for 32-35 minutes or until lightly browned on the sides. Use a toothpick to test for doneness; if it comes out clean from the center of the pan, the bars are done.
