CHEWY BLONDE BROWNIES
I looked high and low for the perfect blondies. I love them chewy not cake like and the walnuts are such a good accent to the brown sugar.

CHEWY GOOEY BLONDE BROWNIES
This has always been my favorite cookie. You can add in chocolate chips and/or nuts, but I love the plain, unadulterated maple-like flavor. To halve the recipe, use an 8x8" pan and check five minutes sooner.

GOOEY CHEWY BROWNIES
We're big fans of brownies, but let's face it. Nobody likes them dry, with that cake-like consistency. That is why we took things in the opposite direction for this, and we've made these gooey and chewy brownies. They're filled with a deliciously sticky toffee sauce which may make them seem like they're undercooked but have no worries. It's delicious!

- Stir flax grounds and 1/2 a cup of water to create an "eggy" mixture. Let stand for 10 minutes to thicken.
- Melt the margarine and measure 1/2 a cup [I use sticks of margarine and melt on low heat on the stove or in the microwave if you prefer]
- Mix margarine, brown and white sugar, flax mixture, and vanilla together. Combine with cocoa powder, flour, salt, and baking powder and stir until a thick dough is formed. Add chocolate chips or chunks (you can even add more if you prefer) and combine until chocolate chips are evenly distributed throughout
- Pour vegan brownie mixture into a greased or lined 9x13 pan. Add more chocolate chips on top to taste. (I like to add a lot!)

- Preheat oven to 350 degrees and line a 9x9 inch pan with nonstick foil or parchment paper. In a large microwave safe bowl, microwave semi-sweet chocolate chips for 1 1/2-2 minutes, allow to rest for a couple of minutes before stirring until smooth.
- Add butter, sugars, vanilla, and eggs and mix well. Whisk in flour, salt, and cocoa powder until incorporated. Stir in milk chocolate chips.
- Transfer batter to prepared pan and bake for 35-40 minutes. *For chewier brownies, cook a little longer, closer to 40-42 minutes. For fudgier, gooey brownies, a little less cooking time, closer to 35.
- Serve immediately with ice cream and hot fudge sauce, or allow to cool completely (best for ultra chewy brownies) before cutting into squares and serving. If you like the chewier texture but still want to serve them warm with ice cream, you can pop them in the microwave individually for about 20 seconds to heat them up.

- Preheat oven to 350-375° F (see high altitude instructions below) and line desired pan (see end of instructions) with parchment paper or foil for easier slicing.
- Start by melting butter (and browning if you choose to do brown butter blondies), in a large mixing bowl or the bowl of a stand mixer, add brown sugar and melted butter and stir until smooth. To brown butter, in small saucepan melt butter over low heat, you will hear it snap, pop, applaud for awhile. Swirl pan occasionally (but don't walk away), it will go silent and start foaming up, once it does, keep on low heat and swirl for a minute or so until brown starts to bubble up through the foam, when it smells nutty it's ready, remove from heat. Add to brown sugar and continue with recipe.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla. In a separate bowl, whisk together flour, baking powder and salt. Stir in flour mixture one cup at a time, mixing into the wet mixture a little at a time, until completely combined. Add desired mix-ins (chips, nuts, toffee, etc) stiring until mixed.
- Spread batter into parchment or foil lined pan (for easier slicing). To easily "spread" batter, scoop batter into prepared pan and using a piece of parchment, wax paper or plastic wrap, lay over top of batter and smooth to edges of pan until even, see video below for how I do it.

- Pre-heat your oven to 175°C and prepare an 8×8 inch baking pan, lining and greasing it with parchment paper. I like to place the parchment paper such that it is pressed against the sides of the pan, with some excess parchment hanging out over the edges. This ‘parchment sling’ makes it easier to remove the blondies later!
- Sift the flour into a bowl. Whisk in the baking powder, cornflour and sea salt and mix well. Set aside.
- Once the melted butter has cooled, beat the brown sugar and melted butter together until it is well mixed and fluffy.
