Number Of Ingredients 10

2 ⅔ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup shortening
½ cup butter
1 ½ cups brown sugar
2 eggs
2 teaspoons vanilla extract
4 (1 ounce) squares unsweetened chocolate, chopped
1 cup sour milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Sift together the flour, baking soda and salt, set aside.
  • Sift together the flour, baking soda, and salt. Set aside. In the microwave or over a double boiler, melt chocolate stirring frequently until smooth. Remove from heat.
  • In a medium bowl, cream together the shortening, butter, and brown sugar. Beat in the eggs, one at a time, then stir in the vanilla and melted chocolate. Mix in the dry ingredients alternately with the sour milk. Drop dough by rounded teaspoonfuls onto the prepared cookie sheets about 2 inches apart.

FUDGE DROPS

Time 22m

Yield 2 dozen, 24 serving(s)

Number Of Ingredients 9

12 ounces semi-sweet chocolate chips or 12 ounces bittersweet chocolate chips
2 tablespoons butter
3/4 cup sugar
3 large eggs
2 teaspoons espresso powder (I didn't use) (optional)
1 teaspoon vanilla extract
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup all-purpose flour

Steps:

  • Preheat oven to 325 degrees F.
  • Melt the chocolate and butter together (double boiler or microwave). Stir until well melted.
  • In a separate bowl, beat together the sugar and eggs until thoroughly combined. Add the espresso powder (optional), vanilla, baking powder and salt, then stir into melted chocolate, mixing well.
  • Stir in the flour. Let the batter sit for at least 5 minutes to thicken; it should be the consistency of thick cake batter.
  • Drop the cookie dough in round blobs onto a parchment-lined or greased baking sheet. Leave about 2 inches in between dough balls (mine were never "balls" but more liquidy). You may place a nonpareil or kiss in the middle, if desired (I didn't).
  • Bake for 10 to 12 minutes, until the tops are shiny and cracked. You want them to bake all the way through but just barely; additional baking time will make them cakey and not fudgy.
  • Remove cookies from oven, wait 5 minutes and then transfer to wire rack to cool.

CHEWY CHOCOLATE CHIP COOKIES

Chewy chocolate chip cookies image

Enjoy these chewy chocolate chip cookies with a cup of tea. If you have time, leave the dough overnight for the best flavour and texture

Provided by Good Food team

Categories     Afternoon tea, Dessert, Treat

Yield Makes 12

Number Of Ingredients 7

150g butter , softened
150g soft brown sugar , golden caster sugar, or ideally half of each
1 egg
1 tsp vanilla extract
180-200g plain flour (see tip below)
½ tsp baking powder
200g chocolate chips or chopped chocolate

Steps:

  • Mix the butter and sugar together using an electric whisk or hand whisk until very light and fluffy, then beat in the egg and vanilla. Fold in the flour, baking powder, chocolate and ¼ tsp salt as quickly as you can. Don't overwork the dough as this will toughen the cookies.
  • For the best flavour, leave the mixture overnight: either cover the bowl and chill, or roll the mixture into balls and chill.
  • Heat the oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Divide the mixture into balls, the craggier the balls, the rougher the cookies will look. If you want to give the dough more texture, tear the balls in half and squidge them lightly back together. Space out evenly on the baking sheets, leaving enough space between each to allow for spreading.
  • Bake the fresh cookies for 8-10 mins and the chilled ones for 10-12 mins, or until browned and a little crisp at the edges but still very soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few minutes before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.

  • To avoid heating the chocolate too much and possibly burning it, the best method is to heat until the butter is melted and the chocolate has partially melted, then remove from the heat.
  • Stir until all the chocolate melts., In a separate bowl, beat together the sugar and eggs until they're thoroughly combined.
  • Add the hot melted chocolate, then stir in the remaining ingredients., Refrigerate the batter-like dough until it's thoroughly chilled, about 3 hours (or overnight).
