½ teaspoon baking soda
½ teaspoon salt
¾ cup unsalted butter, melted
1 cup packed brown sugar
½ cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper.
  • Sift together the flour, baking soda and salt; set aside.
  • In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
  • Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Thick Chocolate Chip Walnut Cookies. A copycat version of the Levian Bakery cookies we all love! They are incredibly soft on the inside and firm around the edges. These chocolate chip cookies are super thick and fluffy and loaded with tons of chocolate chips and walnuts!

1 cup cold unsalted butter, cubed
3/4 cup light brown sugar
3/4 cup granulated sugar
2 large eggs
2 tsp vanilla
3 cups all purpose flour
2 tsp cornstarch
1 tsp salt
1 tsp baking soda
2 cups semi sweet chocolate chips
1 1/2 cups chopped walnuts

Steps:

  • Preheat oven to 400 degrees. Line baking sheets with parchment paper or a silicone baking mat and set aside.
  • In a stand mixer fitted with the paddle attachment cream butter, light brown sugar and granulated sugar until lighter in color and fluffy, 3-4 minutes.
  • Add in the eggs one at a time and vanilla.
  • In a medium bowl combine the flour, cornstarch, salt and baking soda. Add to the stand mixer and mix just until combined to avoid over mixing the dough.
  • Using a rubber spatula fold in the chocolate chips and walnuts.
  • Portion out cookie dough using a large cookie scoop (about 3 tablespoons each, these will be BIG cookies). Place them on the prepared baking sheets and bake for 8-10 minutes or until the cookies look set. I like to slightly under bake them, they will continue to cook when they are out of the oven.
  • Allow the cookies to continue cooking on the baking sheet for 5 minutes then transfer them to a cooling rack to cool completely.

1/2 cup rolled oats
1 cup white whole wheat flour
6 tablespoons unsalted butter (at room temperature)
1/2 cup dark brown sugar, (lightly packed)
1/3 cup granulated sugar
1 teaspoon pure vanilla extract
1/2 teaspoon espresso powder ((optional but delicious))
1/2 teaspoon cinnamon
1/2 teaspoon kosher salt
3/4 teaspoon baking soda
1/4 teaspoon cider vinegar
1 large egg
1 cup dark chocolate chips
1/2 cup finely chopped walnuts

Steps:

  • In a blender or food processor, grind oats until fine. Transfer to a small bowl, then stir together with the whole wheat flour. Set aside.
  • In a large bowl, beat together the butter, brown sugar, granulated sugar, vanilla, espresso powder, cinnamon, and salt until smooth.
  • Beat in the baking soda, vinegar, and egg.
  • By hand, stir in the flour mixture, then the chocolate chips and walnuts, just until combined. For the best results, cover and chill in the refrigerator overnight.
  • Place rack in the center of the oven and preheat oven to 350 degrees F. Line two baking sheets with parchment paper or a silpat mat. Drop the dough by tablespoonfuls onto the cookie sheets, then bake for 9 minutes, until the bottoms of the cookies are barely beginning to brown. The cookies may appear underdone.

  • Heat the oven to 350 degrees F. Line two baking sheets with parchment paper or use a silicon baking mat.

3/4 cup butter
3/4 cup brown sugar
1/4 cup granulated sugar
2 eggs (at room temperature)
1 tsp vanilla extract
2 1/2 cup flour
1 tbsp corn starch
3/4 tsp baking soda
1/2 tsp salt
1/2 cup mini semi sweet chocolate chips
1/2 cup regular semi sweet chocolate chips
1 cup lightly toasted walnuts

Steps:

  • First start by preheating your oven to 375F, then line your baking sheet with parchment paper or a silicone mat.
  • Cream the butter with the brown sugar and the granulated sugar with a paddle attachment or with a hand mixer until smooth. This will take 3-4 minutes. Scrape the bowl as needed.
  • Add in the room temperature eggs and vanilla, mixing on low speed until fully incorporated. Continue mixing for about 2-3 minutes until the batter is nice and smooth. Keep scraping the sides of the bowl as necessary.

  • Add in the cornstarch, baking soda, salt, cake flour and all-purpose flour and mix on low speed until just incorporated. Add in the chocolate chips and chopped walnuts and mix until just combined. Refrigerate the dough for 15 minutes.
  • Using a digital kitchen scale for accuracy, measure out a rough 6 ounce ball of dough, shaping it roughly and place on the baking sheet. You do not want the dough ball to be smooth and compacted, just barely formed into a rough ball shape. Stagger 3 more dough balls on one baking sheet, spacing about 3" apart. (There should be 4 dough balls on one baking sheet).
