2 teaspoons plus 1 cup butter, divided
2 cups sugar
1 cup light corn syrup
2 cups half-and-half cream, divided
1 teaspoon vanilla extract

Steps:

  • Line a 13x9-in. pan with foil; grease foil with 2 teaspoons butter. Cube remaining butter. In a Dutch oven, combine sugar, corn syrup and 1 cup cream. Bring to a boil over medium heat, stirring constantly. Slowly stir in remaining cream. Cook over medium heat until a candy thermometer reads 250° (hard-ball stage), stirring frequently. Remove from the heat; stir in cubed butter and vanilla until well mixed, about 5 minutes. , Pour into prepared pan. Cool. Remove foil from pan; cut candy into 1-in. squares. Wrap individually in waxed paper; twist ends.

These soft and chew caramels are an easy, homemade holiday gift for family, friends, neighbors, teachers, and most importantly, yourself. They're soft and chewy, creamy and sweet, with a healthy dusting of flaky sea salt for the perfect sweet-savory bite.

2 c white sugar
1 c packed light brown sugar
1 c light corn syrup
2 c heavy cream
1 c unsalted butter (cut into small cubes)
2 tsp vanilla extract
1/2 tsp fine sea salt
1.5 tbsp maldon sea salt

Steps:

  • Line the baking dish with parchment paper, leaving enough hanging over two opposite sides to easily lift the cooled caramels out of the pan. Liberally grease the parchment with butter or cooking spray.
  • Combine the white sugar, brown sugar, corn syrup, heavy cream and butter in a 6-quart dutch oven or other heavy bottomed pot. Heat over medium heat and stir constantly until all ingredients are melted and blended together.
  • Affix a candy thermometer to the side of the pot, roughly 1" above the bottom of the pot. Postion the thermometer so that it's submerged below the surface of the caramels throughout the cooking process. Increase the heat to high and bring the sugar mixture to a boil.
  • Once boiling, reduce the heat to medium low and let the sugar mixture simmer with slow, medium-sized bubbles until the candy thermometer reaches 245-250°F. Stir every 10 minutes. It will take 40-45 minutes to reach the correct temperature. NOTE: watch the thermometer carefully after it reaches 230°F, as the temperature increases pretty quickly after that point.
  • Once the mixture hits 245-250°F, immediately remove from heat and pour in 1/2 tsp fine sea salt and the vanilla. The mixture will vigorously bubble (this is the alcohol in the vanilla boiling off). Stir in the vanilla until evenly incorporated, then pour the caramel into the prepared baking dish. Use oven mitts to protect your hands and wrists from any splatter (it's extremely hot!). Allow the caramel to cool at room temperature for 15-20 minutes and then sprinkle half the maldon salt over the caramels.
  • Allow the caramels to cool at room temperature or in the fridge until set - at least 2 hours. Once cooled, sprinkle the remaining salt over the caramels. Lift up the caramels by the parchment paper flaps and transfer to a cutting board. Cut the caramels into 1" x 2/3" rectangles with a sharp, non-serrated blade or a bench scraper. Wrap the caramels in 4" x 5" squares of wax paper.
  • The caramels are good for 2-3 weeks if stored in an airtight container. I gift these in 1-lb gift boxes in 1.5 dozen increments.

1 tablespoon plus 1 cup butter, divided
2-1/4 cups packed brown sugar
1 can (14 ounces) sweetened condensed milk
1 cup dark corn syrup

Steps:

  • Line a 15x10x1-in. pan with foil; grease the foil with 1 tablespoon butter. In a heavy saucepan over medium heat, melt remaining butter. Add the brown sugar, milk and corn syrup. Cook and stir until candy thermometer reads 250° (hard-ball stage). , Pour into prepared pan (do not scrape saucepan). Cool completely before cutting.

1 cup butter (2 sticks)
2-1/4 cups brown sugar
14 ounce sweetened condensed milk
1 cup light corn syrup
1-1/2 tsp vanilla extract
pinch table salt
1 tsp sea salt

Steps:

  • Grease a 9 x 7 or similar size pan. Line with parchment, then grease again, to easily remove the cooled caramel. Leave an overhang of paper on the side to act as handles.
  • Add all of the ingredients except the vanilla and sea salt to a medium heavy saucepan.
  • Slowly bring to a boil over medium heat, stirring constantly until a candy thermometer reaches 234 -240°F. This will take about 10 - 15 minutes. Large bubbles will form at the edges of the pot. Cook, still stirring constantly for 2 minutes at 234 -240°F.
  • Remove from the heat and immediately stir in the vanilla.
  • Pour into the prepared pan and allow to cool and firm up. Sprinkle with sea salt. Cut into bite size pieces and wrap in wax paper.

1 teaspoon fine salt
1 1/4 teaspoons baking soda
1 cup (2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup caramels, such as Kraft (about 20), halved
1 cup roughly chopped assorted miniature chocolate candy bars, such as Mr. Goodbar (about 16)
3/4 cup small button-shaped chocolate candies, such as M&M's, for decorating

Steps:

  • Preheat oven to 350 degrees, with racks in upper and middle thirds. In a large bowl, whisk together flour, salt, and baking soda. In a large bowl, using an electric mixer, beat butter and sugars on high until pale and fluffy, about 3 minutes. Beat in eggs, scraping down bowl as needed. With mixer on low, beat in flour mixture in three additions until combined. Beat in vanilla. Fold in caramels and candy bars.
  • Using a 1/3-cup spring-loaded scoop, drop dough, 2 inches apart, on parchment-lined baking sheets. Bake 8 minutes. Remove from oven; immediately press candies onto cookies, then rotate sheets and bake until golden around edges and set in centers, about 8 minutes. Transfer cookies to wire racks to cool.

6 egg yolks
¾ cup brown sugar (or white granulated sugar)
1 cup vegetable oil (or softened butter unsalted or salted)
1 tsp vanilla extract
1 397 grams can condense milk
1 cup milk powder
2 cups all-purpose flour
½ tsp baking Powder
¼ tsp salt (remove if using salted butter )
Toppings
½ cup almond flakes - add more if needed (cashew nuts, ground peanuts, chopped walnuts)

Steps:

  • Pre heat oven at 180°C / 356° F. Line 14in. x 10in. baking pan with parchment paper and set aside.
  • In a mixing bowl beat the egg yolks using a hand mixer or wire whisk until light and pale in color. Then add sugar beat until well incorporated.
  • Add the vegetable oil and vanilla extract then mix again. Pour condense milk then give it a quick mix until all the ingredient are well combined. Tip in milk powder then mix until no traces of milk is left.
  • In a separate bowl sift the flour and baking powder using a strainer.
  • Fold-in the dry ingredient in 2 batches using a spatula until there is no trace of flour. Use a hand mixer then give it a quick beat until smooth. (NOTE: don't over beat or the caramel bars will be tough/hard)
  • Pour the caramel batter into prepared pan then top with almonds flakes. Bake for 40-45 mins or until inserted toothpick comes out clean. Bon appetit!

Steps:

  • Gather the ingredients.
  • Prepare a 9-by-9-inch pan by lining it with aluminum foil and spraying the foil with nonstick cooking spray.
  • Combine the corn syrup, cream, milk, sugar, and salt in a medium saucepan over medium heat. Stir continuously until the sugar is melted and the mixture is smooth. Wash down the sides of the pan with a wet pastry brush to prevent sugar crystals from forming.
  • Insert a candy thermometer and bring the candy to a boil. Stirring occasionally, cook the caramel to 240 F (soft-ball stage).
  • Once the candy has reached the proper temperature, remove it from the heat and immediately stir in the peanuts.
  • Pour the candy into the prepared pan and smooth it into an even layer.

1 1/4 cup heavy cream (room teperature)
4 tbsp butter (room temperature)
1/4 tsp salt
1 cup granulated sugar
1/4 cup corn syrup
1/4 cup water

Steps:

  • Line an 8X8 heat proof dish with parchment paper and coat it with non stick spray.
  • Place butter and heavy cream in a small sauce pan over medium heat. Heat until butter is melted. Don't bring the mixture to boil. Add Salt to butter heavy cream mixture. Turn the heat off.
  • In a big pot, mix sugar, corn syrup and water. Using a spoon stir it until forms a paste. Using a wet brush, wipe down the sides of the pot so there are no sugar crystals left on the sides.
  • Turn the heat on to medium high and clip an instant-read thermometer to the side of the pot. Don not stir the mixture. Bring the mixture to boil and let it boil until it reaches 285-290°F.
  • Turn the heat off.
  • Whisk in the cream and butter mixture slowly to the pot. It will boil rapidly and triple in size. Stop whisking once all the cream is all in.
  • Turn the heat on to medium high and clip the instant thermometer again. Bring the caramel to a boil and let it boil until it reaches 240°F.
  • Turn the heat off and take the thermometer out of the pot.
  • Pour the caramel into the lined dish and let it sit in the room temperature for at least 2 hours or until set completely.
  • Cut into rectangles or squares and wrap them in wax paper or candy wrappers. Keep the caramels in a container with a lid.

1 (14 ounce) can sweetened condensed milk
1 cup light corn syrup
1 pinch salt

Steps:

  • In a heavy bottomed saucepan over medium heat, combine the butter, brown sugar, sweetened condensed milk, corn syrup and salt. Bring to a boil, stirring constantly. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Cook for 2 minutes at that temperature. Remove from the heat and stir in vanilla.
  • Meanwhile, butter a 9x13 inch baking pan. When the caramel is ready, pour into the buttered pan. Allow to cool completely at room temperature. Remove from the pan and cut into squares using scissors. Wrap individual pieces in waxed paper or cellophane.

  • Add 2 sticks butter, sugar, and karo syrup to a large heavy-bottom saucepan over medium heat. Stir over medium heat until mixture begins to boil, about 5-10 minutes.
  • Gradually add the evaporated milk, one can at a time, taking about 12-15 minutes PER CAN to slowly add it, while stirring constantly. You want to make sure the mixture maintains a constant boil, otherwise your caramels can curdle.
  • Stir the mixture constantly, scraping the sides occasionally until it reaches a firm ball stage (about 240-245 degrees F on a candy thermometer). It takes patience and time, but it's sooo worth it! (Also, I don't really trust or rely on a candy thermometer--I like to test it the old fashioned way. Drop a spoonful of hot caramel sauce into a cup of ice water and mold it with your fingers into a ball. When ready it will feel pretty firm and pliable, but still slightly sticky.)
