CHEWY APRICOT LOGS
This makes an easy, pretty, sweet light dessert or finger food. Kids will love it, plus it contains fruit! - Preparation time does not include freezing.

Steps:
- Mix all ingredients together.
- Add coconut last and adjust amount according to dryness of mixture (the mix should be moist and sticky to allow to roll).
- Roll handfulls of mixture into short, fat logs (they can be as thick or thin as you like).
- Roll in coconut.
- Place logs on to grease proof paper and start to roll into a better log type shape by pressing down hard and rolling at the same time.
- Twist the ends of the paper.
- Place in the freezer.
- Take out about an hour before you are ready to chop them up and eat them.

- In a large bowl, cream shortening, butter and sugars. Beat in the eggs and vanilla. Combine the oats, flour, apple pie spice, baking powder, baking soda and salt; gradually add to the creamed mixture. Stir in cherries and orange zest., Drop by 1/3 cupfuls onto an ungreased baking sheet. Press to form a 4-in. circle. Bake at 375° for 9-12 minutes or until golden brown. Let stand for 1 minute before removing to wire racks to cool.

APRICOT AMARETTO CHEWS
Chunky and chewy cookies...a delicious mouthful! Almond extract may be used in place of amaretto. In dough use 1/2 tsp almond extract and 2 tsp of water in place of the amaretto. In icing use 1/4 tsp almond extract and enough water to get the correct consistency in place of the amaretto.

Steps:
- Preheat oven to 375 degrees F.
- In a large bowl beat the butter or margarine until softened. Add the brown sugar and sugar and beat until fluffy. Add egg and 1 tablespoon of amaretto and mix well.
- Stir together flour and baking soda, and then add to the butter mixture and beat until well mixed. Stir in the oats, apricots, and almonds.
- Drop by rounded teaspoons onto an ungreased cookie sheet and bake for 8-10 minutes.
- Cool on cookie sheet for 1 minute, then remove and cool thoroughly on rack.
- Stir together powdered sugar and enough of the 2 to 3 tablespoons of amaretto to make an icing of drizzling consistency. Drizzle over the cookies.

- Combine the oats, rice krispies, chopped apricots and nuts (if using) in a mixing bowl.
- Put the butter and corn syrup in a small saucepan and heat gently. Add the chocolate and stir until melted. Stir the mixture into the dry ingredients until they are well coated.
- Press the mixture firmly into a shallow 11 x 7 lined pan. Place in refrigerator to cool. Cut into bars and keep refrigerated.

CHEWY DATE, PECAN & APRICOT SQUARES

- Preheat the oven to 350 F and butter a 10-inch by 10-inch pan. Toss the dates and apricots with 1 tablespoon of flour. Add the nuts and set aside. Place the eggs in a mixing bowl and whip them with an electric mixer until frothy. Gradually add the brown sugar and continue whipping until the mixture is thick, about 5 minutes. Combine the flour, baking soda, baking powder and salt in a separate bowl and fold it into the egg mixture. Fold in the fruit and nut mixture. Spread the batter into the prepared pan and bake until golden brown and springy to the touch, about 20 minutes. Cut into bars and store in an airtight container for up to 5 days.
