Steps:
- For the crust and filling: Preheat the oven to 350 degrees F. Place the miniature graham cracker pie crusts on a small baking sheet. Bake until light golden and toasted, about 8 minutes. Cool completely.
- Meanwhile, heat the sugar, cornstarch, lemon zest and 1/4 cup water in a small saucepan over medium heat. Cook, whisking continuously, until the sugar dissolves and the mixture thickens, about 2 minutes. Remove from the heat.
- Whisk together the egg yolks and lemon juice in a medium bowl until smooth. While continuously whisking, slowly add the sugar syrup to the egg mixture until completely incorporated. This will temper the eggs without overcooking or scrambling them. Transfer back to the same small saucepan and return to the stove over medium heat. Cook, whisking continuously, until the mixture thickens to a pudding-like consistency, 2 to 3 minutes. Remove from the heat, then whisk in the butter and vanilla until smooth.
- Spoon the filling into the pie crusts and smooth out the tops. Place a piece of plastic wrap directly on top of each pie, pressing onto the filling so it doesn't create a "skin." Refrigerate until chilled through and completely set, at least 4 hours and up to overnight.
- For the meringue topping: Add the sugar, cream of tartar and egg white to the bowl of a stand mixer fitted with the whisk attachment and whisk to combine. Place the bowl over a small saucepan of simmering water, making sure the bottom of the bowl is not touching the water. Cook, whisking constantly, until the sugar is dissolved and the mixture feels hot to the touch, 1 to 2 minutes. Transfer the bowl to the mixer and whisk on medium-high speed until stiff peaks form, 5 to 6 minutes. Whisk in the vanilla until combined. Transfer to a piping bag fitted with a medium star tip.
- Remove the plastic wrap from the pies. Pipe the meringue evenly on top of each pie in a circular motion to create a large rosette, making sure to cover the filling completely. Toast the meringue using a kitchen torch or broil in the oven until golden brown, keeping an eye on the meringue if broiling, 1 to 2 minutes.

Steps:
- Make the crust: Preheat the oven to 350 degrees F. Toast the fennel seeds in a small dry skillet over medium heat until fragrant, about 2 minutes. Pulse the cookies in a food processor until finely ground. Add the fennel seeds and melted butter; pulse until moistened. Press the mixture evenly into the bottom and up the side of a 9-inch pie plate. Bake until lightly browned and set, about 8 minutes; let cool completely.
- Make the filling: Combine the chestnuts, sugar, 1 cup heavy cream and the vanilla seeds and pod in a medium saucepan. Bring to a boil, then reduce the heat to low and simmer, stirring occasionally, until the cream is very thick and the chestnuts are softened, 25 to 30 minutes.
- Meanwhile, melt the butter in a small saucepan over medium heat; cook until it smells nutty and is golden brown, about 4 minutes. Discard the vanilla pod from the chestnut mixture; transfer the mixture to a food processor, add the browned butter and process until smooth. With the machine running, slowly add the remaining 1½ cups heavy cream and the eggs; process until combined. Let stand until thickened and cooled, about 1 hour.
- Carefully pour the filling into the crust (it will be full). Bake at 350 degrees F until the filling is set, about 45 minutes. Transfer to a rack and let cool completely.
- Make the meringue: Bring a few inches of water to a boil in a large saucepan. Whisk the sugar, cream of tartar, salt and egg whites in the bowl of a stand mixer. Set the bowl over the boiling water (don't let the bowl touch the water); continue whisking until the mixture is hot (135 degrees F) and the sugar dissolves, 2 to 3 minutes.
- Transfer the bowl to the stand mixer; beat with the whisk attachment on medium-high speed until soft peaks form, about 2 minutes. Increase the speed to high and beat until stiff, thick and glossy, 2 to 3 more minutes. Spread the meringue on top of the pie. Toast with a kitchen torch.

- For the pastry, sift the flour into a bowl and add the butter. Gently rub together with your fingers until it resembles crumbs. Stir in a pinch of salt and the icing sugar. Add the egg yolk and 1-2 tbsp ice-cold water, then mix quickly with a flat-bladed knife to bring together. Turn out of the bowl and lightly knead to a dough. Shape into a disc, wrap in cling film and chill for 30 minutes.
- Preheat the oven to 180°C/fan160°C/gas 4. On a lightly floured work surface, roll out the pastry to a 28cm circle. Use to line a 24cm pie dish. Prick the base all over with a fork and lay a sheet of baking paper over the top. Fill with baking beans or rice. Blind-bake for 10-12 minutes until golden, then remove the beans or rice and bake for 5-10 minutes until sandy to the touch.
- Put the pumpkin in a pan along with the chestnuts, 130ml of the cream, the muscovado sugar and enough hot water to cover. Bring to the boil, then cover and cook for 15-20 minutes until the pumpkin is soft enough to push a knife through.
- Remove the pumpkin and chestnuts with a slotted spoon, then turn up the heat and cook to evaporate most of the liquid. Return the pumpkin to the pan with the spices and syrup and mash as smooth as you can.

- 1. Make the pie crust. Combine the flour, salt, and sugar in a large mixing bowl. Add the cold butter to the flour mixture, and work it between your fingers until the dough resembles coarse crumbs and there are no large pieces left (the dough should just hold together when pressed in a handful).
- 2. Turn the dough out onto a clean work surface, and add the cold water and vinegar. Comb through the dough with your fingers until well-combined, then begin to [knead the dough](https://www.masterclass.com/articles/how-to-knead-dough) until it comes together, no more than a couple of minutes.
- 3. Divide and form into two shaggy discs, about 1-inch thick. Wrap in plastic wrap, and place one disc in the freezer for future use. Place the second disc in the refrigerator for at least two hours.
- 4. While the dough rests, make the chestnut purée. Preheat the oven to 400° Fahrenheit. Wash one pound of fresh chestnuts and pat dry. Using a sharp knife—a paring knife or a specially designed chestnut knife with a short, curved blade—carefully score the flat, broadside of each chestnut with an x.
