1 cup roasted and peeled chestnuts
1/4 cup coconut flour
6 tbsp coconut sugar
1/2 tsp baking soda
6 tbsp coconut oil, melted and cooled
1 large egg
1 tsp vanilla extract
3 oz 75% (or higher) dark chocolate bar, roughly chopped

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Place roasted chestnuts in a food processor, and grind until crumbly and fine.
  • In a large bowl, combine ground chestnuts, coconut flour, coconut sugar, and baking soda.
  • In a separate bowl, whisk together coconut oil, egg, and vanilla extract. Pour this mixture into the dry ingredients and mix well.
  • Fold in chopped chocolate.
  • Scoop with a large rounded tablespoon to drop dough onto the lined baking sheet. Flatten slightly.
  • Bake for 10-12 minutes, until slightly golden brown.
  • Cool completely before serving.

1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup firmly packed dark-brown sugar
1 large egg yolk
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 cup plus 2 tablespoons all-purpose flour
1/3 cup finely chopped bittersweet chocolate (about 2 ounces)
1/4 cup creme de marrons (sweetened chestnut spread), or Nutella

Steps:

  • Preheat oven to 350 degrees. In the bowl of an electric mixer fitted with paddle attachment, cream butter and sugar on medium until fluffy. Add egg yolk, vanilla, and salt; beat until combined, scraping down sides of bowl as needed. Add flour, and beat on low speed until just combined. Stir in chocolate. (Dough can be frozen, wrapped in plastic, up to 1 month; thaw before using.)
  • Form dough into 1-inch balls; place on parchment-lined baking sheets about 2 inches apart. Using thumb or rounded end of a wooden spoon or dowel, make a deep indentation in the center of each cookie. Fill each with about 1 teaspoon creme de marrons or Nutella. Place in freezer or refrigerator until firm, about 15 minutes.
  • Bake until edges are golden and cookies are firm, about 12 minutes. Transfer cookies to a wire rack to cool completely.

6 tablespoons unsalted butter, (softened)
¼ cup granulated sugar
½ cup golden brown sugar
1½ teaspoons vanilla extract
½ teaspoon salt
¾ teaspoon ground cinnamon
1 large egg
1 cup (5-ounces) chestnut flour
¾ teaspoon baking soda
1¼ cups semi-sweet chocolate chips

Steps:

  • Preheat the oven and prepare the baking sheets. Preheat the oven to 350°F and line a couple of baking sheets with parchment paper. Set aside.
  • Make the batter. In a medium-sized mixing bowl, use an electric mixer to blend the butter with the sugars, vanilla, salt and cinnamon. Add the egg and mix on a low speed for 1 minute. The batter should be smooth and light. Measure the chestnut flour and then sift it into the batter with the baking soda. Mix just until the flour is fully incorporated. Fold in the chocolate chips.
  • Shape the cookies. Use a 1¼-inch cookie scoop to shape your cookies, placing them on the parchment-lined baking sheets as you go. There should be at least 2-inches between them.
  • Bake. Bake the cookies in the preheated 350°F oven until they're golden along the edges, about 10 minutes.
  • Cool. Let them sit for about a minute on the baking sheet, and then carefully use a flat-bottomed, metal spatula to move them to a cooling rack. (They will look plump when you take them out of the oven, and then flatten out as they cool.) Serve at room temperature.

225 g Unsalted butter ( room temperature)
210 g Brown sugar (or raw cane sugar)
100 g Granulated Sugar
2 Eggs (room temperature)
1 tsp Vanilla extract (or 1 pack vanilla sugar)
140 g Chestnut flour
210 g Pastry flour
1/2 tsp Baking soda
1 tsp Kosher salt
340 g Dark and semi-sweet chocolate chips (fifty-fifty)

Steps:

  • Beat butter and both types of sugar with the kitchen machine until creamy.
  • Add eggs and vanilla sugar.
  • Add baking soda and salt
  • Add the flour mixture.
  • Add chocolate chips.
  • Pour the dough into a mixing bowl with the lid and chill in the fridge for at least three hours.
  • Let the bowl with the dough sit at room temperature for another hour
  • Prepare a baking tray, line it with baking paper, and preheat oven to 347 °F // 175 °C.
  • Take the cookie scoop and scoop out small balls of the batter.
  • Place the balls on the prepared baking sheet, ensuring there is enough space between the cookie balls
  • Bake the cookies for about 12 minutes.
  • After baking, leave the cookies on the tray for two to three minutes before transferring them to the rack to cool.
  • Store at room temperature in an airtight container.

1 cup steamed or roasted chestnuts from a jar (about 6 ounces; not water chestnuts)
1/3 cup sugar
Pinch kosher salt
2 tablespoons amber rum
2 teaspoons unsweetened cocoa powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/8 teaspoon ground ginger
1/4 cup (about 1 1/2 ounces) mini semisweet chocolate chips
3 to 4 purchased refrigerated pie crusts (from two 14.1-ounce packages), at room temperature
1 large egg, beaten to blend
Powdered sugar, for dusting

Steps:

  • Position a rack in the center of the oven and preheat to 425 degrees F. Line a large rimmed baking sheet with parchment paper.
  • Blend the chestnuts, sugar and salt in a food processor until the chestnuts are finely ground. Add the rum, cocoa, cinnamon, cloves and ginger. Blend until the filling is almost smooth, scraping down the work bowl as necessary. Add the chocolate chips and pulse until combined. (Can be made 2 days in advance).
  • Working with 1 pie crust at a time, unroll the pie crusts on a work surface and, using a 3-inch round cutter, cut out 10 rounds from each crust. Brush the pastry rounds with the beaten egg to cover. Drop 1 generous teaspoon of the filling into the center of each round. Fold half of the dough over the filling and seal to make a half-circle shape. Brush the top of the tortelli with the beaten egg. Place on the prepared baking sheet and bake until golden brown and crisp, 15 to 17 minutes.
  • Transfer to a rack and cool to room temperature. Dust with powdered sugar and serve.

Praline paste may be substituted for chestnut paste.

1 cup margarine, softened
1 cup white sugar
1 cup brown sugar (packed)
2 eggs
1 teaspoon vanilla extract
1 teaspoon French vanilla-flavored instant coffee granules
⅛ teaspoon water
1 teaspoon strawberry jam
1 teaspoon sweetened chestnut puree
1 tablespoon instant hot chocolate mix
1 teaspoon ground cinnamon
1 dash ground nutmeg
1 drop fresh lemon juice
¼ teaspoon orange liqueur
1 drop maple flavored extract
2 cups all-purpose flour
2 ½ cups granola with nuts and raisins
1 teaspoon baking powder
1 teaspoon baking soda
4 teaspoons salt
1 (16 ounce) package semisweet chocolate chips
½ cup chopped and toasted walnuts
1 ounce rosemary flavored chocolate, grated

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease 2 baking sheets.
  • Cream the margarine with the white and brown sugars in a mixing bowl until light and fluffy. Beat in the eggs and vanilla extract. Mix the instant coffee and water together in a small bowl; stir into the egg and sugar mixture. Stir in the strawberry jam. chestnut puree, hot chocolate mix, cinnamon, nutmeg, lemon juice, orange liqueur, and maple extract until evenly blended.   • Bake in preheated oven until tops are set when lightly touched, 10 to 12 minutes. Cool 10 minutes on baking sheets before moving to a rack to cool completely.
